Turn shop bought Ravioli into something AMAZING!
Upgrade that store-bought ravioli to something you'd get at a restaurant with this rich and creamy tomato ravioli sauce with spinach and parmesan. You can get it on the table in 15 minutes, and best of all, you can make it all in one pan.
This is perfect comfort food for busy weeknights!

Ingredients:
▢1 tbsp olive oil
▢1 onion - finely diced
▢2 cloves garlic - peeled and minced
▢500 g (1.1lb) fresh ravioli - (use your favourite flavour)
▢1 red bell pepper - sliced
▢½ tsp Italian herbs
▢½ tsp chilli flakes (red pepper flakes)
▢½ tsp black pepper
▢a pinch salt
▢1 tbsp tomato puree (paste if you're in the US)
▢90 ml (⅓ cup) white wine
▢100 g (3 ½ oz) roasted cherry tomato halves - (you can buy these from the deli counter)
▢120 ml (½ cup) chicken stock
▢90 ml (⅓ cup) double (heavy) cream
▢90 g (3 packed cups) baby spinach
▢50 g (½ cup) parmesan - grated
▢1 tbsp fresh parsley - finely chopped
Instructions:
1. Add the 1 tbsp of olive oil to a large frying pan (or skillet) and heat over a medium heat, then add in the finely diced onion and cook for 4-5 minutes until the onion starts to soften.
2. Add in the minced garlic and cook for another 30 seconds stirring continuously.
3. Now add in the ravioli and the sliced red bell pepper and cook for another minute, stirring a few times.
4. Add in the Italian herbs, chilli flakes, black pepper and a pinch of salt, give it a stir then add in the tomato puree and wine, stir again, and cook for another minute to reduce the wine down slightly.
5. Add in the roasted tomatoes, chicken stock and cream. Stir everything together and bring up to a simmer. Allow to simmer for 5-6 minutes, until the centre of the ravioli is piping hot (you can open one up to check this).
6. Add in the spinach and parmesan and cook for a minute to allow the cheese to melt and the spinach to wilt.
7. Sprinkle with fresh parsley and serve.

▶️ RECIPE INGREDIENTS: (3 servings approx.)
???? To Cook Pasta:
Penne Pasta or Spaghetti (or any pasta of your choice) - 200 to 250g / 2 to 2+1/2 cups approx.
✅(CHOOSE THE QUANTITY OF PASTA DEPENDING ON HOW SAUCY YOU WANT THE DISH TO BE)
8 Cups Water
2 Teaspoon Salt (I have added pink Himalayan salt)
???? Other Ingredients:
3 Tablespoon Olive Oil
130g / 1+1/4 cup approx. Onion - Thinly Sliced
3 to 4 garlic cloves / 1 Tablespoon approx. Garlic - finely chopped
1/4 to 1/2 Teaspoon Chili Flakes or to taste
2+1/2 Tablespoon Tomato Paste
(If you like your pasta more zesty, slightly increase the quantity of the tomato paste)
350g / 3 Cups approx. Zucchini - Cut in 1/2 inch semi circle pieces
3/4 Cup Pasta Cooking Water OR AS REQUIRED
200g / 1+1/4 Cup approx. Cherry or Grape Tomatoes
Salt to taste (I have added total 1/4 +1/2 Teaspoon of pink himalayan salt)
Drizzle of Olive Oil (I added 1 tablespoon of organic cold pressed Olive Oil)
1/2 Teaspoon Freshly Ground Black Pepper or to taste
12g / 1/2 Cup Fresh Basil or to taste
▶️ METHOD:
Start by chopping the vegetables and set aside. Generously salt a pot of boiling water and add the penne pasta. Cook the pasta until it's Al dente (as per the package instructions).
✅ ???? DO NOT OVER COOK THE PASTA, cook it al dente because we will be further cooking it in the tomato sauce later, so just cook it al dente.
To a heated pan, add olive oil, onion and 1/4 teaspoon salt. Cook the onion on medium to medium-high heat (depending on the heat of your stove) until it's soft and translucent. It will take about 2 to 3 minutes. Do not brown the onions.
Now reduce the heat to low and add garlic and chili flakes. Cook on low to medium-low heat for about 1 minute or until fragrant. Then add the tomato paste. Mix well. Now add the zucchini. Turn the heat to medium-high and fry the zucchini along with the tomato paste for about 2 minutes, to cook out the raw flavour of the tomato paste.
✅ ???? NOTE: If you like your pasta more zesty, you can slightly increase the quantity of tomato paste
Then add the pasta cooking water to the pan to make a sauce, mix well and bring to a boil. Once it comes to a boil, add the Cherry/grape tomatoes and cook on medium-high heat for about 2 minutes or until the tomatoes start to disintegrate. Now add the cooked pasta and mix well. Add salt to taste and mix again (I have added 1/2 teaspoon of pink Himalayan salt).
✅ ???? NOTE THAT THE PASTA COOKING WATER ALREADY HAS SALT IN IT, so add the salt accordingly.
Mix well and cook on medium heat for another 2 minutes or so. By now the tomatoes and the pasta water together would have created a nice silky sauce. If the pasta starts to get dry add some more cooking pasta water. Turn off the stove.
Garnish with freshly ground black pepper, drizzle of a good quality Extra virgin Olive Oil and fresh basil. Mix and serve hot.
▶️ IMPORTANT NOTES:
???? CHOOSE THE QUANTITY OF PASTA DEPENDING ON HOW SAUCY YOU WANT THE DISH TO BE. (Anywhere from 2 to 2+1/2 cups)
???? DO NOT over cook the pasta. Cook the pasta Al dente, as we will be further cooking it in the tomato sauce later
???? Reserve at least 1+1/2 cup of the pasta cooking water for the sauce before draining the pasta
???? Every stove is different so regulate the heat as required. If at any point you notice the pan is getting over heated, reduce the heat
???? Fry the onions until soft and translucent. Do not have to brown the onions
???? Sometimes a batch of cherry/grape tomatoes can be a bit sour, so in that case add 1/4 teaspoon of sugar to balance out the acidity/sourness
???? PLEASE NOTE THAT THE PASTA COOKING WATER ALREADY HAS SALT IN IT, so add the salt to the dish accordingly
???? If the pasta sauce starts to get dry, add some more of the reserved pasta cooking water, do not add cold water to it
???? If you like your pasta more zesty, you can slightly increase the quantity of the tomato paste

-Boneless chicken strips 400g
-Namak (Salt) 1 tsp or to taste
-Zeera powder (Cumin powder) 1 & ½ tsp
-Lehsan powder (Garlic powder) 1 tsp
-Dried oregano 1 tbs
-Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
-Soy sauce 1 tbs
-Anday (Eggs) whisked 2-3
-Breadcrumbs 1 Cup or as required
-Cooking oil for frying
Prepare Pasta:
-Cooking oil 2-3 tbs
-Lehsan (Garlic) chopped ½ tbs
-Tamatar (Tomatoes) pureed 3 medium
-Tomato ketchup 3 tbs
-Namak (Salt) ¼ tsp or to taste
-Lal mirch (Red chilli) crushed ½ tsp
-Penne pasta boiled 150g
-Hara dhania (Fresh coriander) chopped 2 tbs
Assembling:
-Tortilla as required
-Cheese slices
Directions:
Prepare Chicken:
-In a bowl add Chicken boneless, salt, cumin powder, garlic powder, dried oregano, red chilli powder, soy sauce & mix well.
-Dip seasoned chicken in whisked eggs & then coat well in breadcrumbs.
-Heat cooking oil in a frying pan & shallow fry chicken until golden brown & crispy then set aside.
Prepare Pasta:
-In a frying pan add cooking oil, garlic & sauté until light golden.
-Add pureed tomatoes, mix well & cook on medium flame for 2-3 minutes.
-Add tomato ketchup, salt, red chilli crushed & mix well, then cook for 1-2 minutes.
-Add boiled pasta (you can substitute it with leftover pasta) & mix well.
-Add fresh coriander & mix well then set aside.
Assembling:
-On a tortilla bread, place cheese slices, fried chicken, prepared pasta & roll out tortilla.
-Wrap rolled tortilla in butter paper & microwave for 30 seconds (makes 6-7). Cut & serve!

-Frying pan oil garam karen or coated chicken ko golden brown or crispy hunay tak fry karlen or alag rakhden.
Prepare Pasta:
-Frying pan may oil daal kar lehsan daal den or 30 seconds tak fry karen.
-Pureed tomatoes dal ker ache tarhan mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein.
-Tomato ketchup, namak, red chilli crushed daal kar mix karlen or 1-2 minutes tak pakayen.
-Boiled pasta (you can substitute it with leftover pasta) dal kar achi tarah mix karen.
-Hara dhania daal kar milayen or alag rakh den.
Assembling:
-Tortilla bread per cheese slice rakhen, fried chicken or tyara pasta rakh kar roll karden.
-Butter paper may roll kar k 30 seconds k liye microwave karlen (makes 6-7).
-Cut kar k serve karen!

Enjoy 91 year old Anna's fusilli with spicy tomato sauce | Pasta Grannies
91 year old Anna has been making fusilli by hand for over 80 years. She dresses them with a tomato sauce made entirely with ingredients from her farm. Anna was nominated by her chef grandson Michele who you meet at the end of the video. If you are London based, check out his cooking at Trivet Restaurant. Meanwhile here is Anna's recipe:
For the pasta use 300g semolina flour (semola rimacinata), 1 egg, and about 90ml of warm water to make a dough.
For the sauce, you will need
500g fresh tomatoes
400ml tomato passata
1 onion, 1 teaspoon black pepper, salt
four 20x 20 cm squares of pork skin. These add richness to the sauce and is a way of honouring the pig by using all of it. Each square is rolled with a teaspoon of dried mint, 2 tablespoons grated pecorino cheese, 2 slices of garlic, a pinch of black pepper and as much fresh red chilli as you feel like.
I think it's probably quite difficult for most of us to track down pork skin. I suggest you add the mint, garlic and chilli directly to the tomato sauce. Vegetarians can omit the meat altogether, omnivores can add 100g of diced pork belly along with the onion at the beginning of the process.
