How To make Portabello Mushrooms, Pasta and Fresh Tomato Sauce
2 c Fresh Tomato Sauce
1/2 lb angel hair pasta
1/2 c flour
1 tb Emeril=D5s Creole Seasoning
1/4 c olive oil
4 portabello mushrooms each about 4-5=D3 in -- rins
ed & stemmed diameter 1/2 c coarsely grated fresh Parmesan cheese
Prepare the Fresh Tomato Sauce, and keep warm
Meanwhile, combine the flour with the Creole Seasoning until thoroughly b lended. Dredge the mushrooms thoroughly in the seasoned flour, shaking o ff any excess.
Heat the remaining oil in a large skillet over high heat. When the oil i s hot and almost smoking, add the mushrooms, top side first, and saute th em until golden brown, for about 1 minutes on each side. Remove from ski llet.
Cook pasta and drain.
To serve, mound 1/2 cup of pasta in each pasta bowl. Place 1 mushroom, t op side up, on each pasta serving. Nap with 1/2 c of sauce, and sprinkle with 2 tbs of the Parmesan.

2 Tbs - Clarified Unsalted Butter
4 Cloves - Garlic, Thinly Sliced
1 - Shallot, Fine Diced
300g - Swiss Brown Mushrooms, Thinly Sliced
2 Tbs - White Wine (Use a cheap White Wine, I used Chardonnay) Can be substituted for Vegetable Stock or Chicken Stock.
2 Tbs - Curly Parsley, Chopped (Can be substituted for Flat Leaf Parsley)

400ml - Full Fat Cream (Thickened Cream)

10 MIN SPAGHETTI SAUCE in a Wok from Scratch with Zucchini and Portobello Mushrooms
RECIPE - SPAGHETTI SAUCE WITH ZUCCHINI AND PORTOBELLO MUSHROOMS
The wok is a perfect cooking utensil for making spaghetti sauce. The first step in cooking the spaghetti sauce is to stir-fry the ingredients to brown the ingredients and to achieve the desired texture. The wok is ideal for carrying out these cooking steps. The wok is perfect for boiling the pasta noodles and also great for baking bread. In this meal, all the food items are cooked with the wok! I used my 14 inch Cuisinart Stainless Steel wok to cook this meal.
INGREDIENTS
- Ground pork sausages - 8 oz
- Jalapeno pepper (finely chopped) - 1/8 cup
- Red onion (finely chopped) - 1/2 cup
- Zucchini (bite size) - 1.5 cup
- Diced tomatoes - 1 can (14.5 oz)
- Tomato sauces - 1 can (8 oz)
- Tomato paste - 1 can (6 oz)
- Portobello mushrooms (thinly sliced) - 1 cup
- Fresh tomatoes (diced) - 1 cup
STIR-FRYING
Spot Seasoning the Wok
- I heat up my Cuisinart stainless steel wok for 1 min under the highest heat setting.
- Add 1.5 tbsp of canola oil (or any oil with a high smoking point).
- Heat up the oil until it starts to gently smoke (usually about 1 to 2 min).
- Turn heat down to low to prevent the oil from smoking too much.
- This is the time when the wok is being seasoned.
- Let the oil smoke for another 15 seconds.
- The wok is seasoned and ready to be used.
Cooking Instructions
- Add ground pork sausage to wok.
- Stir-fry for 1 min till about 80% done.
- Add jalapeno pepper.
- Add red onion.
- Stir-fry for 1 min.
- Add Basic Seasoning Mix or any other seasoning mix as desired.
- Stir-fry for 1 min.
- Add zucchini.
- Stir-fry for 1 min.
- Add diced tomatoes, tomato sauce, and tomato paste.
- Stir and mix.
- Add water.
- Stir and mix.
- Add water.
- Stir and mix
- Add portobello mushrooms.
- Stir and mix.
- Add fresh tomatoes.
- Stir and mix.
- The dish is ready to serve.
- Cook time is 10 minutes.
