Brownie mix 1 1/4 c self rising flour 3 eggs 1/2 c vegetable oil 1 1/4 c espresso and cream coffee drink (Starbucks) 1/4 c cappuccino coffee drink mix
2 sticks butter 4 c powdered sugar 2-3 tbsp coffee drink (from above) 1 tsp vanilla Optional- 1-2 tbsp cappuccino mix if you want a stronger flavor
Preheat oven to 350 and fill a cupcake pan with liners
In a bowl combine the top set of ingredients. Fill cups with batter and bake for 14-18 minutes. Do not overbake. Cool completely.
In another bowl, beat the butter until smooth. Add in half of the powdered sugar, vanilla, and coffee drink. Mix, and then add in the rest. Top each cupcake with the coffee frosting.

Over the summer Oliver spent several weeks with his Grandparents in England. Each day they would take a trip to Costa to get a cappuccino for Grandad and a brownie for Oliver.
