How To make Mini Chocolate Cakes with White Chocolate Lava
1 c Unsalted butter; softened
1/2 c Sugar
3 Eggs
3 Egg yolks
1 lb Bittersweet chocolate;
-melted 1 c Flour
1 c Toasted ground pecans
1 ts Pure vanilla extract
6 oz White chocolate
= in 1-oz pieces 3/4 c Heavy cream; whipped
2 oz Bittersweet chocolate;
-grated Recipe by: Caprial's Cafe--on PBS TV These cakes are more like brownies, with a chunk of white chocolate in the middle of each. They are really at their best when served warm. Preheat oven to 350. Using an electric mixer with a whisk attachment, cream butter and sugar together on high speed until light and fluffy, about 5 minutes. Add eggs and egg yolks, one at a time, mixing well after each addition. Continue to mix until the egg mixture is lemon colored, about 3 minutes more. Lower the mixer speed and add the melted chocolate. Stop and scrape down the sides and then continue to mix. Add flour, nuts, and vanilla and mix just until the batter comes together. Distribute the batter among six 8-ounce well-greased ramekins. Place the ramekins on a baking sheet and bake for 15 minutes. Remove from oven. Place a 1-ounce piece of
white chocolate into the middle of each half-baked cake. Return cakes to oven and bake for another 10 to 15 minutes, or until a knife inserted in the side comes out clean. Do not insert the knife into the center or you will hit the white chocolate. Let cakes cool for about 10 minutes, then invert onto a plate and pipe whipped cream on the top of each cake. White Chocolate Raspberry Lava Cakes
Here is what you'll need!
WHITE CHOCOLATE RASPBERRY LAVA CAKE
Servings: 4
INGREDIENTS
Raspberry Filling
4 tablespoons raspberry jam
4 ounces white chocolate
Cake
5 ounces white chocolate
½ cup butter, melted (hot)
2 eggs
2 egg yolks
½ cup sugar
½ cup flour
Butter and flour for ramekins
Equipment needed: 4 oven safe ramekins
PREPARATION
Preheat your oven to 350ºF/180ºC.
In a microwave-safe bowl, microwave the raspberry jam for one minute.
Add the 4 ounces of white chocolate and stir until smooth. Freeze one hour.
In a mixing bowl, add the white chocolate and hot melted butter. Mix to combine.
Add the eggs, egg yolks, sugar, and flour, and whisk to combine thoroughly after each addition.
Coat the inside of the ramekins with butter and then add approximately one teaspoon of flour, moving it around so that it coats the inside completely. Discard excess flour.
Fill your ramekins about ¾ of the way with cake batter, then add a tablespoon of your raspberry mixture. Fill to the top with remaining batter.
Place the ramekins on a sheet pan and bake at 350ºF/180ºC for 15-18 minutes, until the lava cakes are no longer jiggly in the middle.
Run a knife along the edges of the ramekin to loosen and invert onto a plate.
Serve warm with ice cream.

Chocolate Lava Cake From Scratch
When I say from scratch, I mean it. I used fresh cacao pods!
Ingredients:
1 stick butter
6oz bittersweet chocolate
2 eggs + 2 yolks
1/4 cup sugar
pinch of salt
2 tbsp flour
1. Butter 2-3 ramekins depending on size and coat with sugar. This will ensure your lava cake doesn't stick.
2. Over a double boiler, melt your butter and chocolate. Set aside.
3. In a medium bowl, beat eggs, sugar, and salt.
4. Combine all ingredients with flour and add evenly to ramekins.
5. Bake at 425 Fahrenheit about 12 minutes. Enjoy!

Process

8. Dust with some icing sugar and serve warm!
