I almost always make sourdough bread, but, sometimes, I need a quick, yet healthy loaf of bread. This recipe comes from the Food Nanny cookbook, For the Love of Kamut. When you first embark on a whole food plant-based journey, it may seem like you have to give up a lot of the staple foods that you enjoy... like bread! Yes, indeed, most commercially made bread (even the whole-wheat kind) is far from healthy. In most cases, store-bought bread is nothing more than a chemical concoction of nutrient-depleted ingredients-starchy carbs mixed with quick rise yeast and preservatives. Luckily, you do not need to ban bread from your diet altogether. Especially if you are willing to make one at home from a recipe that focuses on clean, nutrient-dense ingredients.

No-Knead Cherry & Chocolate Brioche Recipe
Brioche is one of my favourite doughs to work with. It is extremely simple to make and it’s super versatile and that is why I keep coming back to it. The brioche playlist on my channel is full of different recipes savoury and sweet. Sweet ones are usually the more popular ones, so I decided to make this cherry and chocolate filled loaf.
I saw a similar recipe on the King Arthur Baking website and thought I could adapt it to my style and turn it into a nice sliceable loaf. Once again, my USA Pan Pullman tin came in handy. It’s been used quite a lot in the last few months and for good reason. It is one of my favourite pieces of baking equipment. You can use a regular 2lb (900g) tin for this recipe.

Easy Sourdough Starter Recipe | Make a Wild Yeast Starter at Home
Looking for an easy sourdough starter recipe? I'm showing you how to make a wile yeast starter at home that you can use in bread, pastries, buns, focaccia, donuts and more. If you can't find yeast or are looking for a more natural, easy to digest alternative the natural yeast in sourdough starter can be used in place of instant yeast in most yeast leavened baked goods. The best part is, it's easy to make at home. It only takes 5 days and about 2 minutes a day of work plus, all you need is regular all purpose flour and water.

Sourdough Starter Recipe/ Guide/ Schedule
Day 1
In a glass jar with loose fitting lid stir together 50 g water and 50 g flour until smooth. Cover loosely and set aside at room temperature for 24 hours.
Day 2
Stir in an additional 50 g water and 50 g flour to the starter. Cover loosely and set aside again for another 24 hours.
Day 3
Stir in an additional 50 g water and 50 g flour to the starter. Cover loosely and set aside again for another 24 hours.
Day 4
Stir in an additional 50 g water and 50 g flour to the starter. Cover loosely and set aside for 24 hours.
Day 5
Your starter should be ready to bake with. It should have doubled in size, smell sour and be filled with lots of bubbles. If it hasn’t, continue with the feedings for another day or two.
Maintain
To keep and maintain your starter all you have to do to maintain it is to mix the same amount in weight of starter, water and flour. So, for example I used 50 grams of starter (you can use or discard the remaining starter), 50 water and 50 flour but you can do 100 g of each or 75 grams or 382 grams of each, you get the point. Feed it every 24 hours if you’re keeping it at room temperature and every 4/5 days if you keep it in the fridge.

Instant Yeast vs Active Dry Yeast | How to Activate Yeast

⏺ When you add instant yeast (quick rise yeast) directly into the flour , also add sugar and salt and mix it with lukewarm water or milk.( Always use lukewarm water/milk with yeast and let it rise in a warm place for better results for about 1 and 1/2 hours or until it’s double in size.)
⏺ 1 teaspoon yeast is good for 2 cups (250g) of flour .
⏺ Always knead the dough very lightly and keep the dough very soft .
⏺ Dough should be super soft (not hard) it’s very important.
⏺ I apologize that at the end I didn’t show you how to mix the dough with instant yeast , the reason behind it was i only wanted to show you that you can simply add instant yeast in the flour and continue mixing dough with water or milk.
