How To make Hot Yeast Rolls
2 pk Active dry yeast
1 tb Granulated sugar
1/4 c Water,very warm
1/4 c Butter,cut into small pieces
2 c Milk,warm
6 c Flour,all-purpose
1 ts Salt
1/4 c Butter,melted
1. In a large bowl sprinkle yeast and sugar over warm water (should
feel comfortably warm when dropped on wrist) and allow to stand until bubbly, about 10 minutes. 2. Combine butter and milk in top of double boiler over simmering
water until butter has melted and milk is warm. Add to yeast mixture and stir until blended. Mix in 2 cups of the flour, 1 cup at a time, and beat well to form a spongy dough. Cover and let rise in a warm place until double in bulk, about 1-1/2 to 2 hours. Stir down with wooden spoon, then add about 3 more cups of flour to form a moist dough that is firm enough to turn out onto a well-floured board. 3. Dip hands in flour and knead dough until smooth and nonsticky,
adding additional flour as needed. The dough should be velvety-smooth. 4. Form into a ball and place in a well-buttered, warm mixing bowl.
Turn ball of dough so that entire surface of dough is coated with softened butter. Cover and again place in a warm place until double in bulk, about 1 hour. 5. Punch dough down, turn out onto a lightly floured board, and let
rest for about 5 minutes. 6. Roll out to a thickness of about 1/2 inch cut with a floured knife
first into approximate 2-inch squares, then into triangles. Roll up from wide side to point and place on baking sheet about 1/4 inch apart. When all are prepared, brush with melted butter and again let rise until about double in bulk, about 30 minutes. 7. Bake in a preheated 350'F. oven until lightly browned, 25 to 30
minutes, depending on size. To test for doneness gently tap top of roll for a hollow sound or break open one roll to see if it is sufficiently baked in the center.

Role of egg in bread making:
Eggs added to dough help with rising. A bread dough rich with egg will rise very high, because eggs are a leavening agent (think genoise or angel food cake). As well, the fats from the yolk help to tenderize the crumb and lighten the texture a bit. Eggs also contain the emulsifier lecithin. Lecithin can add to the overall consistency of the loaf.
So it is difficult to substitute something else for egg to get the same result.
At the same time, i can say that ,as we have used only one egg in this quick dinner roll recipe,we can easily replace the egg to make dinner rolls without much difference in texture and taste of the rolls.
As one egg is approximately 45 ml,just replace the same volume with milk or water.So you can add 3 tablespoon of water or milk in place of one egg.
Remember, this will not be equivalent to adding an egg,but i can promise you that it will be difficult to find any difference between the one made with and without egg in this particular quick dinner roll recipe.

These easy dinner rolls are soft, fluffy, buttery and totally irresistible! Is there anything better than the smell of freshly baked dinner rolls straight from the oven? It’s pretty hard to beat. This is my absolute favorite recipe for making the most delicious sweet, soft and buttery rolls ever and it’s so easy! The hardest part is waiting for the dough to rise. Whether you serve these rolls alongside your Thanksgiving dinner, dunk them into soups, or use them for sandwiches they’re guaranteed to be a family favorite!

Easy Yeast Dinner Rolls ( No Kneading )

Ingredients
2 [1/4 oz] packets rapid rise yeast [such as Fleischmann's]
¼ cup granulated sugar, plus 1 tsp
1⅓ cup of lukewarm water or milk
4 cups all purpose flour
1 tsp salt
1 large egg
8 Tbsp butter, divided
Instructions
In a measuring cup, dissolve both packets of yeast and 1 teaspoon of sugar in 1⅓ cup of lukewarm water. If you use hot water or milk, it will kill the yeast and the bread won't rise. So, make sure the water is lukewarm not boiling.
Let the yeast mixture sit on the counter for 5-7 minutes to allow the yeast to bloom. You'll see bubbles and froth begin to gather on the top.
In a medium size mixing bowl, sift together the flour, salt and sugar. Add the egg.
After the yeast has developed, gradually add it to the dry ingredients in the bowl, along with 5 tablespoons of melted butter.
Begin to blend the ingredients together, using a large spoon incorporating more liquid as you go. I used a silicone spatula, and the dough didn't stick to it, making this task a lot easier.
After incorporating all of the flour place into a buttered bowl, and cover it with a damp cloth.
Allow the dough to sit in a warm, draft free place, covered for 1 hour to double.
Use a 2 ounce ice cream scoop, lightly sprayed with cooking spray, to separate the dough into even portions after punching it down to release the air bubbles.
Roll into a ball in your hands then arrange side by side, in a buttered non-stick metal baking pan. I used a 10-inch spring form pan.
Melt the remaining 3 tablespoons of butter and using a pastry brush, lightly brush the tops. Reserve some of the melted butter to brush on the tops after the rolls come out of the oven, too.
Cover with a damp cloth and allow the rolls to rise again until doubled. [about an hour] OR
Bake them immediately
To bake: Bake in a preheated 400°F oven for 20-22 minutes.
Serve hot.
