Zucchini Bread
Easy to make, delicious in taste and with all the goodness of zucchini, this bread machine zucchini bread is a must try. Making it in bread machine makes this recipe a child's play and almost handsfree. This recipe is made with no eggs and no yeast, making it suitable for vegans as well.
Zucchini bread can be served as breakfast or a quick snack and is perfect for kids' after-school snacks.
Zucchini bread can be stored at room temperature for 3-4 days. You can also store it for up to a week in the refrigerator.

WET INGREDIENTS
1 cup + 1 tbsp Water (microwave 30 seconds)
4 tablespoon Oil
DRY INGREDIENTS
3 ½ cups Whole wheat flour (396 grams)
2 tablespoon Agave nectar (or maple syrup)
1 ½ teaspoon Salt
2 ¼ teaspoon Instant Yeast or Bread Machine yeast (7 gram)
INSTRUCTIONS
BAKE IN BREAD MACHINE
Place the wet and dry ingredients (water, oil, agave nectar, salt, whole wheat flour, yeast) in the order as required by your bread machine.
1 cup + 1 tbsp Water,4 tablespoon Oil,3 ½ cups Whole wheat flour,2 tablespoon Agave nectar,1 ½ teaspoon Salt,2 ¼ teaspoon Instant Yeast or Bread Machine yeast
Close the lid and select the Whole wheat cycle, 1.5 lb size, and the crust setting, preferably to medium.
The bread will be ready once the cycle completes.
Remove the loaf by inverting the pan and shaking it.
Place the bread on a cooling rack and allow it to cool down.
Once the bread is cooled down completely, slice it with a serrated bread knife or an electric knife.

1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp coarse salt (1/2 tsp if using fine salt)
1 1/3 cup light brown sugar
1 tsp ground cinnamon
2 cups zucchini (grated)
1/2 cup chocolate chips or nut of choice
2 large eggs
1 stick melted butter
1/2 cup milk
1 1/2 tsp vanilla extract

Este pan es super sencillo de preparar y una forma de incorporar vegetales para sus niños. Es vegano (sin lácteos, sin huevos) sin aceite, sin gluten y sin levadura. Puede ser nut free si omiten las nueces. Es libre de azúcar refinada también. La mayoría de las versiones de pan de zucchini o calabacín son llenas de azúcar y de harina y con muy poco zucchini. Al contrario este pan no es tan calórico y esta cargado de calabacín o calabacita que lo hace aun mas saludable. Lo pueden acompañar con una mermelada o con una mantequilla almendras o cualquier nuez o semilla.
