How To make Beef with Broccoli
1 c Beef, sliced thin
Salt 2 tb Soya sauce
1 tb Wine
1/2 bn Broccoli, shredded in 3"
-lengths -OR 1/2 lb Broccoli, shredded in 3"
-lengths 2 tb Sugar
3 tb Oil
1/2 c Water
1. Carefully slice beef into thin bite size pieces, across the grain
of beef. Marinate beef in soya sauce, wine and salt. Shred broccoli. 2. Place oil in wok and heat to smoking point. Quickly stir-fry beef
in it, no more than 3 minutes. Remove beef to a platter and reserve. 3. Add broccoli to wok, 1/2 cup water, sugar. Turn burner to medium
high heat, cover broccoli, cook 6 minutes. Lift the cover of the wok and stir the broccoli every so often so that it will cook on both sides. At the end of 6 minutes, the broccoli should just be cooked through, if it isn't, cook a minute or two more. 4. Add beef back to broccoli, stir everything together. Place in
platter. NOTE: Pork, or chicken may be substituted, only do not remove pork or chicken to a platter after initial stir-frying but continue to cook it with broccoli. Beef is removed for reserve because it toughens with prolonged cooking.

Beef
1/2 lb flank steak, sliced 1/4-inch thick
1/4 tsp baking soda
1 tbsp water
1 tsp cornstarch
1 tsp vegetable oil
1 tsp oyster sauce
Sauce
1/3 cup chicken stock
1 tbsp dark soy sauce (sub regular soy sauce)
1/2 tbsp oyster sauce
1 tsp sugar (I use Monkfruit Sweetener)
1/4 tsp sesame oil
Dash of white pepper
And the rest!
2 cups broccoli florets
2 tbsp vegetable oil
1 tsp minced garlic (or 1-2 garlic cloves)
1/4 tsp ground ginger
1/2 tbsp Shaoxing wine
1 heaping tablespoon of cornstarch + 3 tbsp water
Directions:
1. In a medium sized bowl, add the sliced flank steak, baking soda, and water.
2. Mix the beef and massage until all the liquid is absorbed. The baking soda helps to tenderize the meat. You can omit the baking soda if you don’t have it available.
3. Add cornstarch, oil, oyster sauce and mix well. Cover and marinate in the fridge for 30 minutes.
4. Blanch the broccoli. Add your broccoli florets into a pot of boiling water and cook for 20 seconds. If you like your broccoli softer, blanch for 30-60 seconds.
5. Remove the broccoli, dip in an ice bath, and set aside.
6. Make the sauce. Combine all the ingredients for the sauce and set aside.
7. Add oil to your pot over medium high heat. Once hot, cook your sliced beef on both sides until browned. Transfer the beef into another bowl and set aside.
8. Bring your pan back over medium heat and add oil.
9. Add garlic and ground ginger and toss until fragrant.
10. Add Shaoxing wine and the sauce mixture. Stir to incorporate all the browned beef bits around the pan and bring to a simmer.
11. Add the cornstarch slurry and stir constantly until well combined and slightly thickened, about 30 seconds.
12. Add the blanched broccoli and seared beef and mix until evenly coated.
13. Raise the heat and continue to cook for another 30 seconds. Remove from heat once the sauce is at your desired thickness.
14. Enjoy with steamed rice.

Beef Broccoli
Beef Broccoli is a sweet and savoury dish made by cooking sliced beef pieces and broccoli in a sauce made with soy sauce, oyster sauce, sugar, ginger, garlic, seseme seeds. pepper and salt. Craving for some beefy goodness? Or just had an additional budget for dinner? Try this beef recipe that will make your dinner plate go extra!

INGREDIENTS
700 grams beef slices (tenderloin/sirloin)
½ teaspoon salt
1 teaspoon ground black pepper
4 tablespoons oil
1/3 cup soy sauce
¼ cup oyster sauce
1 tablespoon sesame oil
2 tablespoons brown sugar
1 tablespoon cornstarch
½ cup water
2 cups broccoli florets
½ tablespoons ginger, minced
2 cloves of garlic, chopped
sesame seeds for toppings
DIRECTIONS
Prepare the beef strips and place in a large bowl. Season with salt and pepper. Add the oil, soy sauce, oyster sauce, brown sugar and sesame oil. Mix well and set aside. Marinate for 15-30 minutes.
In a large pan, heat some oil. Sauté the ginger and garlic until fragrant. Add the broccoli and stir-fry for 3 to 5 minutes. Set aside.
In the same pan, add the marinated beef. Cook until most of the beef had browned.
Add some water and simmer for 20 to 25 minutes while mixing once in a while. Continue cooking until the liquid is reduced.
Add the stir-fried broccoli and mix well with the beef and sauce.
Top with sesame seeds.

PRO TIP!!!!
Have everything chopped and ready! Also make sure your meat is pat dried and at room temperature, this helps the meat get cooked even and create a nice crust on the outside, NO CHEWY MEAT!
You can use a skillet or cast iron but believe me using a skillet makes it so much faster and easier! The difference is that a wok gets hot hot! And it helps everything cook evenly

For the sauce
1/2 cup beef broth
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp sesame seed oil
4 1/2 tsp brown sugar
1/2-1 tsp crush pepper flakes
1 lb broccoli
1 onion
1 tbsp fresh ginger
1 tbsp fresh garlic
