How To make Baked Macaroni and Cheese with Ham Cubes
2 1/2 cups white sauce
prepared as directed
1/2 teaspoon dry mustard
6 ounces cheddar cheese :
shredded
8 ounces macaroni elbow
1 1/2 cups ham cubes
1 freezer bag :
jumbo
Stir dry mustard into white sauce; add 1 3/4 cup grated cheese and stir until m elted (reserve 1/4 cup cheese for topping). Cook elbow macaroni for six minutes ; drain. Add cheese sauce to macaroni; stir. Turn into a greased, 2-quart casse role dish; stir in ham cubes. Top with reserved grated cheese. To freeze: cover casserole with aluminum foil; seal dish in jumbo freezer bag. Freeze. To prepa re: place frozen casserole (covered with aluminum foil) in preheated 375-degree oven. Bake for 25 minutes; remove al uminum foil. Bake 25 minutes more, or until hot and bubbly.

How To Make Ham Mock Mac and Cheese Casserole (Low Carb)
This low-carb Ham Mock Mac and Cheese Casserole is from George Stella’s Good Carb Family Cookbook, but he's kindly shared it online and even on Facebook. It is amazing!! Seriously, whenever I need a cheese sauce for anything this will be my go to choice.
Cauliflower chunks take the place of macaroni, and thick chunks of diced ham make it a meaty meal. His recipe suggests the 8x8 inch pan makes 8 serves, which must be just using it as a side dish. With the ham in it, we treat it as a main meal, so we doubled it to get 4-6 serves. I'll give the original recipe below, but we doubled everything.
INGREDIENTS:
1 large head cauliflower, cut into small florets and pieces (about 675g or 23 oz)
3⁄4 cup heavy cream
4 oz / 113g cream cheese, cut into small pieces
1 1⁄2 teaspoons Dijon mustard
1⁄2 teaspoon kosher salt
1⁄4 teaspoon ground black pepper
1⁄8 teaspoon garlic powder
1-1⁄2 cups shredded cheddar cheese, plus 1⁄2 cup more for topping the casserole
6 oz / 170g baked ham, cubed
METHOD:
1. Preheat the oven to 375 degrees.
2. Cook the cauliflower in boiling, salted water for about 5 minutes until crisp-tender. Drain well, pat between layers of paper towels to dry and transfer to a greased baking dish.
3. Bring the cream to a simmer in a small saucepan and whisk in the cream cheese, mustard, salt, pepper and garlic powder until smooth.
4. Stir in 1 1⁄2 cups of the cheese and whisk for just a minute until the cheese melts. Remove from the heat and pour into the casserole dish, covering the cauliflower.
5. Sprinkle the cubed ham over all, top with the remaining 1⁄2 cup cheese and bake for about 15 minutes until browned and bubbly hot. Let cool for about 5 minutes before serving. Visit and Like us on Facebook: .

Cook 1# of mac pasta in salted water
FOR CHEESE SAUCE:
Add 1 quart of milk to pot and bring to a boil
Season with salt and white pepper
add 1 cup of roux(flour and melted butter) and add to hot milk mixture and cook until thickened
Add
8oz cup cream cheese
8oz cup Velveeta cheese
8oz cup jack cheese
12 oz mild cheddar cheese
Add to thickened milk mixture and incorporate completely
Add cheese sauce to cooked mac pasta and pour in baking dish
Top with sharp cheddar cheese and melt in oven for 20-30 minutes until golden brown
CHEESY AU GRATIN POTATOES
RECIPE
3 lbs large diced cooked Yukon gold potatoes
FOR CHEESE SAUCE:
Add 1 quart of milk to pot and bring to a boil
Season with salt and white pepper
add 1 cup roux9flour and melted butter) add to hot milk mixture and cook until thickened
Add 4 oz cream cheese
4 oz pepper jack cheese
4 oz velvetta cheese
4 oz jack cheese
1 cup mild cheddar cheese
Add to thickened milk mixture and incorporate completely
Add cheese sauce to cooked potatoes and pour in baking dish
Top with sharp cheddar cheese and melt in oven for 20-30minutes until golden brown

Got a lot of left over ham from the holidays? This is an easy and tasty way to use that up!
Ham Casserole
2 cups pasta
1/2 cup milk
1 can condensed mushroom soup
2 tbs butter melted
2 tbs minced onion
1/12 cup cubed ham
2 cups cheddar cheese
1 teaspoon garlic minced
Prepare pasta as indicated on the box. Mix pasta, milk, soup, butter, ham onions, garlic and 1 cup cheese together. Pour into a greased pan.
Sprinkle remaining cheese on top and cook in a preheated 350 degree oven for 30-35 mins.
