Fried Beef And Bean Burritos With Guacamole From Little Lamb
Here's the recipe and comment from Little Lamb for the guacamole, I forgot to add the green onions:
Little Lamb 3 days ago (edited)
Hi Phyllis! Here's my recipe for guacamole. I hope you find time to try it. It's quick and easy.
2 avocados
lime or lemon juice
chopped green onion (2 heaping tablespoons)
cilantro (optional)
sour cream (1/4 cup)
1/4 cup chopped tomato (seeds removed)
fresh chopped garlic (or garlic powder)
salt to taste
Roughly mash up avocados, add citrus juice and sour cream, add chopped tomatoes, onion, garlic and salt. Mix with a fork just until blended. Garnish with cilantro. This is a chunky dip rather than a smooth guacamole. I like to add some hot sauce but that is optional.
Here's the recipe for the Fried Beef and Bean Burrito:
1 lb. lean hamburger, browned
2 -15 ounce cans of pinto beans, drained (reserve some liquid)
1/2 teaspoon oregano
1/2 teaspoon cumin
1 tablespoon garlic powder
1 tablespoon chili powder
Salt to taste
1 cup grated cheddar cheese
1/2 cup salsa
1/2 cup liquid from beans
8 Flour tortilla (Tortilla Land Tortillas from Walmart)
1/2 of oil in pan for frying

Beefy Bean Burritos
2 lb ground beef browned
3 cans of red enchilada sauce
1 onion
1 packet of taco or fajita seasonings
Tortillas
1 can refried beans
Cheese (cheddar or fiesta blend)
In a small sauce pan heat up beans with a little bit of cheese.
I'm a separate pan brown hamburger and add seasonings. Once Brown's put in 2 cans on enchilada sauce and simmer.
On tortillas place small amount of beans then the meat. Roll up and place in pan. Continue until pan is full. Pour on remaining can of enchilada sauce then top with cheese. Bake just until cheese is melted. This can be fixed in the microwave if you only need 1 or 2 burritos.
Thank you so much for watching! Please share my videos with all your family and friends. Thank you so much for all your support and for taking time to visit with me down on the farm! May God bless you all!
