How To make APRICOT JALAPENO JELLY
Ingredients
1/2
cup
jalapeno peppers, stems/seeds removed
1
lg
red bell pepper, stem/seeds removed
2
cup
cider vinegar
1/2
cup
apricots, dried and chopped
6
cup
sugar 3 oz liquid pectin
4
each
drops red food color
Directions:
Put jalapenos, bell pepper, and vinegar in blender. Puree 'til coarsely
ground and small chunks remain.
Combine apricots, sugar, and jalapeno/pepper/vinegar mixture in large
saucepan. Bring to a boil. Boil rapidly, 5 minutes. Remove from heat; skim
off any foam that forms.
Allow mixture to cool for 2 minutes. Then mix in pectin (and food coloring
if you're going to use it).
Pour into sterilized jars, seal, and cool. (I processed in a boiling water
bath for 10 minutes.)
Yield: 3 pints (I got 7 half pint containers.)
This recipe calls for apricots but peaches, nectarines, and pears work equally well. Any fresh green chile can also be substituted, depending on your heat preference. Serranos will make it hotter; roasted, peeled New Mexican chiles will tame it down.

In this video, Nicole shows you how to make homemade pepper jelly. This southern staple recipe uses diced bell peppers and jalapeños to make a sweet and tangy jelly spread. After stirring and boiling the peppers in a sauce pan with apple cider vinegar, fruit pectin, and sugar, add the mixture to sterilized glass containers. Once the jars have been sealed, let them sit in the simmering water to finish the process. Whether it’s spread on a cracker or a burger, this multi-purpose jelly should be in every kitchen.

Peach Jalapeno Jam ~ Canning Jam

Sweet and spicy collide in this beautiful and tasty jam. Use it to glaze meat, add to salad dressing or BBQ sauce, or pour over a brick of cream cheese and serve with crackers for a yummy appetizer.
3 cups crushed peaches (pitted and peeled)
(about 2 lbs, or 4 large peaches)
1/2 cup jalapeno peppers (or other hot pepper), finely chopped (about 1/4 pound, or 4-5 peppers)
1 cup water
3/4 cup cider vinegar
3/4 cup lemon juice
1 – 1 3/4 oz. package powdered pectin
4 cups sugar
Ladle hot jam into a half pint jar leaving 1/4” headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
Process for 10 minutes in boiling water or steam canner, adjusting for altitude as follows:
Over 6,000ft process for 15 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.
