Chicken Cacciatore | My Twist on an Italian Dish
Chicken Cacciatore is a flavorful, rustic Italian dish made with seasoned chicken that is submerged in a mouthwatering tomato sauce with peppers, onions, garlic, and fresh herbs.
This was one of my favorite recipes growing up. I decided to make my own version but with a twist, adding eggplant, peppers, and more! This a simple one-pot dish that is easy to make. Served over pasta, rice, or quinoa, this is a filling dish that can feed the entire family.

Quickly make this chicken cacciatore from Emeril's Pasta and Beyond pasta recipes. Everyone loves good chicken pasta, and this one is no different. A flavorful dish that will warm you right up. Mixed with chicken and vegetables in one large pan. Served on a bed of fresh spaghetti pasta.

Quick Chicken Cacciatore Recipe
Serves 4
Ingredients:
1 medium green pepper, cut into strips
1 medium onion, sliced into rings
8 oz. fresh mushrooms, sliced
1 Tbsp. olive oil
4 boneless skinless chicken breast halves (4 oz. each)
1 can (15 oz.) tomato sauce
1 can (4 oz.) chopped green chiles
¼ to ½ tsp. dried basil
¼ to ½ tsp. dried oregano
⅛ to ¼ tsp. garlic powder
Dash cayenne pepper
¾ lb. Homemade Pasta Dough made with the Spaghetti Disc
Directions:
1. In a large skillet, sauté green pepper, onion and mushrooms in olive oil
for 4-5 minutes or until crisp-tender. Place the chicken breasts over
the vegetables.
2. In a small bowl, combine tomato sauce, chiles and seasonings. Pour over
the chicken; cover and simmer for 20 minutes or until a thermometer
reads 170° F.
3. Meanwhile, in a large saucepan, cook the pasta in boiling salted water
until it floats, about 3 minutes; drain. Serve with the chicken.

Chicken Cacciatore with Angel Hair Pasta
Comfort food at its finest! This classic Italian dish is the perfect dinner for cool fall nights.
INGREDIENTS
Sliced Baby Bella Mushrooms
Heinen’s Recipe Ready Julienne Fajita Mix
Heinen’s Organic Marinara
Quartered Rotisserie Chicken (cold)
BelGioioso Asiago Cheese
Cheesy Polenta
PREPARATION
1. Sauté the baby bellas, peppers and onions in a splash of olive oil.
2. When tender, add the marinara and quartered chicken pieces and bring to a simmer. Meanwhile, microwave the polenta until hot.
3. Serve the chicken and sauce over the polenta and garnish with asiago cheese.
