How To make Blueberry Batter Cake
2 c Blueberries
Juice of 1/2 lemon 1/2 c Sugar
3 tb Butter
1/2 c Milk
1 c Flour
1 ts Baking powder,double-acting
1/4 ts Salt
2/3 c Sugar
1 tb Cornstarch
1/4 ts Salt
1 c Boiling water
8 inch baking pan; put cleaned berries into pan and sprinkle with lemon
juice. In a mixing bowl, cream 1/2 c. sugar and butter; add milk alternately with flour, baking powder and salt which have been mixed together. Pour batter over berries. Combine 2/3 c. sugar, cornstarch and salt; sprinkle over top of cake. Pour boiling water over all. Bake at 350 degrees, 45 minutes to 1 hour. -----

Cake flour 240g
Baking powder 12g

Plain madeleine mixture 200g
Cocoa powder 5g
Tempered 55% dark chocolate (Or you can also use coating chocolate which doesn’t need tempering. I used around 7g of chocolate for covering. The amount will be different depends on your mold size)
Green tea madeleine
Plain madeleine mixture 200g
Matcha powder 3g
Raspberry madeleine
Plain madeleine mixture 250g
Frozen raspberry (or fresh ones are okay too)
Valrhona Inspiration Raspberry chocolate (I used around 7g for each madeleine but the amount will be different depends on your mold size)

Blueberry Muffins
Makes 12 Muffins
Ingredients:
butter or oil, for greasing the muffin pan
2 cups cake flour
½ cup sugar
2½ teaspoons baking powder
½ teaspoon salt
1½ cups blueberries
1 egg
¾ cup milk
¼ cup unsalted butter, melted
1 teaspoon vanilla extract
Turbinado sugar (optional)
Directions:
1. Pre-heat the oven to 425°F.
2. Line the inside of a muffin pan with muffin liners or grease well with butter or oil.
3. Combine the flour, sugar, baking powder and salt in a medium bowl and whisk together to break up any lumps. Place the blueberries in a small bowl and toss with 2 tablespoons of the dry ingredients.
4. In a separate large bowl, combine the egg, milk, butter and vanilla extract. Add the dry ingredients to the wet ingredients all at once. Mix by hand just until dry ingredients are incorporated into the wet. Do not overmix the batter. Gently fold in the blueberries. Cover and let the batter rest for 30 to 60 minutes in the refrigerator.
5. Fill the muffin cups ¾ of the way to the rim. Sprinkle the turbinado sugar over batter and transfer the pan to the middle rack in the oven.
6. Bake at 425°F for 8 minutes. Then turn the oven temperature down (do not open oven door at this point) to 350°F and bake for 12 to 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
7. Transfer the muffin pan to a cooling rack and let it cool for 3 minutes. Then, remove the muffins from the muffin pan and place muffins directly on the cooling rack to cool completely.

INGREDIENTS
1/2 cups white cake mix
1 can sweetened condensed milk
2 tbsp butter
2 cup white chocolate chips
1 1/2 tsp vanilla extract
sprinkles
INSTRUCTIONS
Spray an 8 by 8 inch square baking dish with cooking spray and set side.
Set a medium saucepan over medium heat. Add sweetened condensed milk, butter, white chocolate chips. Stir until smooth.
Add white cake mix and vanilla extract. Stir until smooth, and remove from heat.
Add colorful sprinkles and mix until evenly distributed.
Spread the warm mixture evenly into the prepared baking dish. While the mixture is still warm, add more sprinkles to the top and press them lightly into the surface of the fudge.
Refrigerate for at least 2 hours.
Serve and enjoy!

Lemon cake on its own is a flavorful cake and adding blue berry pie filling to this cake escalated the taste to level 10!
