Betty's Leapin' Lima Bean Casserole
Betty demonstrates how to make her luscious Leapin' Lima Bean Casserole. This is a great-tasting casserole, and will perhaps get some of your non-vegetable-eating kids (even big kids) to try some healthy Lima beans!
Leapin' Lima Bean Casserole
(2) 10 to 12 oz. packages frozen Lima beans (I used baby Limas, which are more tender and take less cooking time than other types of green Limas.)
1 stick butter or margarine, melted
1 medium onion, chopped
10.75 oz. can condensed cream of mushroom soup
½ green bell pepper, chopped
1 cup shredded sharp cheddar cheese
Ritz cracker crumbs (approximately 1 inner pack from a box of Ritz crackers, crushed into crumbs)
cooking oil spray
Cook the 2 packages of Lima beans according to package directions, but do not overcook. (Fordhook Lima beans will take longer than baby Lima beans.) Drain Lima beans. In a large mixing bowl, combine the 2 packages of cooked Lima beans with 1 stick melted butter, 1 medium chopped onion, 1 cup shredded cheese, ½ chopped green pepper, and 1 can of cream of mushroom soup. Stir to mix well. Pour mixture into a 13-inch by 9-inch by 2-inch baking dish that has been sprayed with cooking oil spray. Sprinkle Ritz cracker crumbs evenly over the top. Bake at 350 degrees about 20 minutes, or until bubbly and browned on top. Do not overcook. This is a great accompaniment to almost any entrée; also, it's a great potluck dish!

Oven Roasted Lima Beans
Lima beans are a legume just like chickpeas and kidney beans. Similarly, they are packed with fiber and protein. Lima beans are special because they are an excellent source of potassium, iron, magnesium, and vitamin B-6. It is difficult to receive the recommended daily amount of magnesium through diet alone. Magnesium has been found to benefit muscle and nerve function; therefore, it is important to consume foods high in magnesium daily. This crispy lima bean recipe is a great source of magnesium.
Serves 2
Ingredients:
1 cup of dry lima beans
2 cups of water
1 Tbsp. of oil
2 tsp. of Italian seasoning
¼ tsp. of salt
1 lemon, zested and juiced
¼ cup parmesan cheese, grated (optional)
1 tsp. of red pepper flakes (optional)
Directions:
Place dry Lima beans in a container and cover with water. Soak overnight.
Drain and add to a pot with fresh water to cover.
Bring water to a boil, reduce to low, and cook until lima beans are tender for about 10 minutes.
Drain. Place beans on a clean towel and pat dry.
Preheat oven to 400F. Grease a sheet tray or line with parchment paper.
Place beans into a medium sized bowl and toss with 2 tsp. Italian seasoning, and ¼ tsp. of salt.
Spread beans out evenly onto the prepared baking tray.
Bake for 10-12 minutes until lima beans are crispy.
Once crispy, remove from the oven and allow them to cool. Pour beans into a bowl, top with lemon juice, zest, parmesan (optional) and red pepper flakes (optional).
Store in an airtight container and enjoy as a quick and easy snack.
Tips/Substitutions:
Fun fact: If you over cook the lima beans during the boiling process, don’t worry! You can turn them into a lima bean side dish. Season the same as the recipe states above and skip the oven roasting step.
To freeze: divide in portions, place in zip top bags, label with name of dish and date, place in freezer for up to 9 months.

How to Hot Flash Beans
Clean and sort your beans.
Rinse in a colander with cold water. Add the beans to a large pot and cover them with about 2 inches of water. Bring the water to a boil over high heat, leave the pot uncovered and cook the beans for about 5 minutes. Remove pot from the heat and soak the beans. Let the beans soak in the hot water for 1 hour. Drain the beans into a colander, rinse and then cook according to your this recipe. Enjoy!
