Golden Yellow Tomato Sauce! Simple, easy, tastes great and looks fantastic!
I have several Golden Jubilee Heirloom Tomatoes that need to be processed this weekend. In this video, I am going to share with you my recipe for making a Golden Tomato Sauce - and it's a really simple, easy to use and great tasting sauce.
First off, it looks fantastic - it's got a great Golden Color to it! Secondly, it's very versatile - it can be used for enchiladas, over noodles, in lasagna and also as a curry dish or as a bisque!
It takes about 10 minutes of prep work and about 45 minutes of cooking (at the most), so it can be ready in less than an hour.
I love this recipe because it also calls for ZERO butter! Instead, I use Extra Virgin Olive Oil - it takes about 6-8 Tbsp.

Ingredients:
8 oz of golden tomatoes (you can use golden pear or Jubilee, or any sweet golden variety)
4 medium sized orange or yellow sweet peppers
6 medium garlic cloves (I used 2 Large Elephant Garlic cloves)
1 medium hot pepper (you can use any variety you like, or substitute with a little crushed red peppers)
1 tsp of sea salt (to taste)
1 tsp of pepper (to taste)
6-8 Tbsp of Extra Virgin Olive Oil
Optional: Add a Tbsp of brown sugar or raw honey to really give it a nice sweet finish
Cooking instructions:
Dice up the garlic and both the sweet and hot peppers
In a Large saucepan heat up 5 Tbsp of the olive oil and add in the garlic and peppers. Heat until they become incorporated, but not brown or burnt.
Add in the diced tomatoes (I leave the skins on and the seeds in). I do remove any imperfections and take out the top stem attachments.
Simmer on medium heat (covered) for about 15 minutes.
Uncover and use a potato masher to smash the ingredients together. Add in the salt and pepper.
Simmer uncovered on medium heat for another 10-15 minutes. The goal is to reduce the tomato sauce by 30-50% here, depending upon your preference and how you plan to use the sauce in other dishes.
Once reduced, lower heat and mash one more time.
If desired, you can now hand mix the ingredients. Pour the sauce into a proper pot or bowl and hand mix on low just enough to break up any skin pieces (about 15 seconds).
Optional - add a Tbsp of either honey or brown sugar to give it an even sweeter kick. You can also add any additional salt and/or pepper at this point.
Your ready to enjoy! This recipe should yield about 2 quarts!

Homemade Tomato Sauce from Home Grown Tomatoes
Greetings! I know this one is a bit long, but goodness takes time. This sauce is made from my home grown Lemon Boy tomatoes. I did not know how prolific this strain was and I am glad I only bought 4 plants! If I had bought more I would certainly be over run!
This is a basic way to make a seasoned sauce with garlic, onion, basil, oregano and parmesan cheese. It took all day, but was very much worth the effort!
We will be jarring this up and using it within the next couple weeks. If I were to can this sauce I would choose to pressure can it because I have added so many other ingredients including the cheese and olive oil.
I hope this inspires you to try to make sauce for yourself, hopefully from tomatoes you have grown yourself!

15 Minute Garlic Cherry Tomato Pasta
Sauteeing garlic in olive oil until lightly golden and cooking tomatoes in that oil, until they burst, creates a flavorful and super simple sauce. The burst cherry tomato sauce goes perfectly with linguine or spaghetti. Top it with a handful of fresh basil leaves and good quality extra virgin olive oil and in about 15-20 minutes you'll have an awesome easy pasta recipe!
