Tomato basil pasta sauce is what we are famous for, and in this recipe, I’m going to share all the secrets to this simple, thick, luscious recipe, that will take you right to my Nonna’s house for Sunday lunch. Get your kitchens ready to be infused with the aromas of fresh tomato and basil and plan a special meal to hero this finger-licking sauce, because one you try it, I can bet you will never spend money on artificial store-bought sauce, ever again. This tomato basil pasta sauce is completely homemade, preservative free and I think it’s so good, you could even be tempted to drink it!

Best Italian Tomato PASTA SAUCE RECIPE - Sugo al Basilico
INGREDIENTS:
Extra virgin olive oil
Onion
Celery
Carrot
75-100g/2.6 – 3.5oz fresh basil leaves
2.5kg/10.42 cups Homemade passata/Store bought OR Peeled/chopped Italian tomatoes
UTENSILS:
Sharp knife
Chopping board
Hand blender
Medium – large size pot
Wooden spoon
METHOD:
1. Tomato basil pasta sauce is made with a “Soffrito” which is a blend of fresh ingredients used at the very beginning of the recipe.
2. To make the soffrito, chop up 1 carrot, 100g onion and 1 celery stalk (including the leaves!).
3. Add all of these ingredients into the base of a hand blender with 100ml of extra virgin olive oil, until it becomes beautiful and creamy, like a puree. This will form a flavoursome base for your tomato basil pasta sauce.
4. Next, turn the stove on to a very gentle heat and place the pot on top. Add 3-4 tablespoons of EVOO and pour in the soffrito mix.
5. Gently stir the soffrito so it covers the base of the pot, cover it with a lid and leave it to simmer for 15-20 minutes.
6. If you are using chopped or peeled tomatoes, blend them up so they become a beautiful thick passata. If you are using homemade or store bought passata to make your tomato basil pasta sauce, then you can skip this step!
7. After ten minutes, the soffrito will start to darken in colour. Stir it using a wooden spoon (making sure it is not burning) and then leave it to simmer for at least another 5 minutes.
8. When the soffrito is ready, mix through the tomato passata and stir very well using a wooden spoon.
9. Sprinkle 10g/2.2 teaspoons of rock salt and some black pepper and mix through.
10. Now, just cover the tomato basil pasta sauce with a lid and leave it to simmer slowly for 1-1.5hr, remembering to stir it every now and then.
11. After 1hr, remove the lid and leave it for another 30-45min, simmering it without the lid.
VINCENZO’S PLATE: It is important to let the sauce simmer without the lid so that the sauce does not become watery and by uncovering it, the steam will leave the pot and allow the sauce to thicken even more.
12. The finishing touch for this perfect homemade tomato and basil sauce is adding fresh basil at the very end. You can cut this up small or large depending on your preference – just make sure you don’t cut it with a knife! Add it with your hands before mixing through and leave this to infuse while the sauce is still hot – but the stove is now off.
HOW TO SERVE:
Enjoy this tomato basil pasta sauce however you like it! Use it with your favourite pasta, enjoy it on a pizza base, smother it over your chicken cacciatore, no matter how you use your sauce, it will add another whole level of flavour to your next meal.

???? Ingredients:
- 15 Large Tomatoes, 135mg of Sodium
- 1/2 Large Green Bell Pepper, 2.5mg of Sodium
- 1 Medium Sweet Onion, 2mg of Sodium
- 4 Small to Medium Carrots, 136mg of Sodium
- 2 Large TBSPS of Minced Garlic, 0mg of Sodium
- 4-5 Packets of Pure Sugar or Sweet-N-Low, 0mg of Sodium
- 2 TSPS Ground Black Pepper, 0mg of Sodium
- 3 TBSPS Dried Sweet Basil, 0mg of Sodium
- 1 TSP Ground Cinnamon, 0mg of Sodium
- 1 TSP Ground Cloves, 0mg of Sodium
- 3 TBSPS Ground Garlic Powder
- 2 TBSPS Mrs. Dash Tomato Basil No Sodium Seasoning Mix Spice, 0mg of Sodium
- 3 TBSPS Olive Oil, 0mg of Sodium
- 4 CUPS Unsalted Chicken or Vegetable Broth, 140mg of Sodium
???? Instructions:
Dice, wash and peel everything that is needed to be diced, washed or peeled. Put in stock pot with all spices. Add in chicken broth or vegetable broth. Cook on HIGH Heat on the stove until everything is falling apart and reduced. Add in your sugar or sweet-n-low until the last thirty minutes to taste test your sauce. Set aside for about 30-40 minutes to thicken and cool. Then blend in two batches. Put in freezer safe air tight containers. ENJOY!

Rustic Tomato Sauce for Ravioli
This easy tomato sauce is perfect to pair with store bought ravioli. Better still, it only has 4 ingredients! Chris x

Rustic Tomato Sauce for Ravioli | Serves 4
????INGREDIENTS????
1lb / 500g Fresh Ravioli (see notes)
2x 14oz/400g cans of good quality Peeled Plum Tomatoes (see notes)
4 fat cloves of Garlic, peeled & very finely sliced
1 small bunch of Fresh Basil, finely diced (typically sold in 1oz/30g packs)
2 tbsp good quality Extra Virgin Olive Oil
Salt & Black Pepper, to taste
Optional
1/4-1/2 tsp Chilli Flakes, start off conservatively then adjust at the end (add at the same time as garlic)
pinch of Sugar, if the tomatoes are still a touch sour after simmering
Parmesan, to serve
????METHOD????
To a large pan add 2 tbsp extra virgin olive oil with the heat OFF. Add in finely sliced garlic and bring to a low-medium heat. Gently fry until the garlic softens and just about starts to tinge a very light golden.
Add in plum tomatoes and swill out the cans with a splash of water. Sprinkle in basil then add a good pinch of salt and pepper (can adjust this later). Bring to a very gentle simmer and cook for around 30-35mins, stirring occasionally and breaking up the tomatoes as you go. You want the sauce to be nice and thick with no visible signs of it being watery.
A couple of mins just before the sauce is done, pop your ravioli in salted boiling water and cook to packet instruction (usually just needs a few mins).
Test the sauce for seasoning and adjust accordingly. Now is when you can add a pinch of sugar if the tomatoes are still a touch sour. Use a ladle to transfer the ravioli from the water into the sauce. Toss to combine.
Serve individual portions with any extra basil you have and parmesan if you fancy it. Enjoy!

Spaghetti With Tomato & Basil Sauce - Hearty Dinner Recipes - Italian Recipes
A healthy tasty quick snack for children's tiffin.
Ingredients
• 1 tbsp olive oil
• 1 garlic clove, crushed
• 400g can chopped tomatoes
• 1 tsp vegetable stock powder or ½ crumbled stock cube
• 1 tbsp tomato purée
• 1 tsp sugar
• few basil leaves
Method
1. Heat the oil in a pan, add the garlic, then gently fry for 1 min.
2. Tip in all the other ingredients, except the basil, then bring to the boil.
3. Reduce the heat, then simmer uncovered for 5 mins, stirring occasionally.
4. To finish, tear the basil leaves, then stir into the sauce.

Ingredients (serves 4)

• 2 onions, diced
