Cooking Game: Wild Turkey Apple Sausage
Wild Turkey Apple Sausage
2 pounds skinless, boneless turkey legs (or a mix of legs and breast), cut into 1½-inch cubes
14 ounces thick-sliced bacon, cut into large pieces
2 tablespoons olive oil, plus more as needed
1 large onion, diced
2 medium sweet and tart apples, such as Honeycrisp, peeled, cut into 1/4-inch cubes
2 to 2½ tablespoons packed brown sugar, or to taste
2 tablespoons fresh thyme leaves
2 tablespoons kosher salt
1 1/2 tablespoons freshly ground black pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Zest of 1 lemon
Freeze the turkey meat and bacon on a baking sheet for 30 to 45 minutes.
Meanwhile, heat the oil in a large nonstick skillet over medium heat. Add the onions and cook, stirring, until soft, about 8 minutes. Stir in the apples and continue to cook until soft, 6 to 8 minutes. Transfer to a large plate, spread in a thin layer, and let cool in the refrigerator.
Grind the turkey and bacon into a large bowl set over a large bowl of ice. Add the cooled onions and apples, the sugar, thyme, salt, pepper, cinnamon, nutmeg, and lemon zest. Mix well with your hands. Pinch off a small bit of the sausage mixture and cook in a little oil in a skillet to test for seasoning. Adjust seasonings as necessary. Cover and refrigerate until ready to use.
Form patties with a slightly wet hand. I like to make them 3 inches in diameter because they’re easy to throw on the grill or in a pan, but you can make them any size you want. Preheat a cast-iron pan over medium heat and put a little oil in the pan. Working in batches, sear the sausage patties until browned on both sides and cooked throughout, 4 to 5 minutes per side.
Note: To freeze, stuff sausage into poly meat bags in ½-pound or 1-pound quantities, depending on how many people you typically serve.

Ingredients:
Fine chopped onion - 1/4 cup
Cranberries - 1 1/2 cup
Horseradish - 2 tablespoons
Sugar - 4 tablespoons
Creme fraise - 3 tablespoons
Wild boar or pork - pork neck - 1,5 kg
Sausage - 0,5 kg
Sage, rosemary, thyme fine chopped - 3 tablespoons
Salt - 1 teaspoon
Serve with mixed slaw and a vinaigrette
How To:
02h30m - Set up your barbecue for direct grilling at 425F and 225 C
02h15m - Blend the ingredients for the sauce
02h10m - Butterfly the pork neck
02h00m - Chop the fresh herbs and sprinkle them over the pork neck. Do the same for the salt and the stuffing from the pork sausage.
01h50m - Roll and tie up the pork neck
01h45m - Sear the pork roast over direct heat
01h40m - Let the pork roast come up to a core temperature over indirect heat. Until it reaches a core temperature of 145F 63C
00h20m - Let it rest for about 10 - 20 minutes

Ingredients:
• 2 Flour Tortillas (10 inch)
• 3/4 cup Cooked Chicken (pulled, shredded, or cut into bite-size pieces)
• 1 1/2 cup shredded Cheese (go with Mexican Blend or Monterey Jack + Cheddar)
• 1 tbsp. chopped Green Chiles
• 1 tbsp. fresh chopped Cilantro
• Serve with Guacamole, Salsa and/or Sour Cream

I thought making it onto a cooking reality show would be my ticket to culinary fame, but the whole experience was a disappointment. Since then I have quit my job in a commercial kitchen and decided to start making my own cooking show, QUICK MEALS. This is episode 10.

Recipe:
You ask any American and they'll tell you the are loco for Mexican cuisine. That's usually just code for I only like nachos and queso. But don't worry, I love traditional Mexican cuisine. This recipe is one that will appeal to both traditionalists and melted-cheese-loving donkeys. That's right, we're making Quesadillas.
Heat a frying pan (non-stick works great) that is large enough to accommodate your tortillas over medium heat. Then place one of your tortillas in the heated pan.
Sprinkle in your cheese, chicken, green chiles, and fresh cilantro. Spread those fixings out real nice and even. Then add another tortilla on top of all that good stuff.
Cook until the bottom is golden brown (about 3 minutes) and then flip and repeat.
Congratulations, you have yourself another quick and easy meal guaranteed to make your taste buds PAP!

I love Mexican food and of course I LOVE Italian food and a really fun way to be creative in the kitchen is to find new and interesting ways to combine the 2!
So with this I decided to make it a little different using mozzarella cheese with spicy Italian sausage and porcini mushrooms and scallions. The flavors were
incredible!
I used 1/2 scallion diced
1/2 cup of reconstituted porcini mushrooms
1/4 cup of sliced fresh mozzarella
1 spicy Italian sausage
2 fat free low carb tortillas
2 cups of beef broth to reconstitute the mushrooms
This is a great way to have some fun with adding new twists to traditional foods. You can really create something amazing if you play around with some of these
ideas! This was one of my all-time favorites and I'm really glad I decided to make this one.
