Perfect meal for the kids right after school or dinner time easy and delicious. You can marinade the chicken the night before it will save you time and the longer it’s marinated the better the chicken tastes. Serve it with some guacamole I have a recipe on my page, your favorite salsa, sour cream and enjoy.
——Ingredients——
-2 large chicken breasts (diced small)
-1 large bell pepper or a bunch of small ones
-1 large onion
-2 cloves of garlic
-1/2 tablespoon paprika
-1 teaspoon cumin
-1 teaspoon black pepper
-1 teaspoon chili powder
-1 teaspoon garlic powder
-1 teaspoon onion powder
-1 teaspoon chili flakes
-1/2 tablespoon salt
-1 packet of Sazón
-Juice of half a lemon
-1 tablespoon of oil
-7 tortillas
-cheese (I used mozzarella and Mexican blend)

These amazing CHIPOTLE CHICKEN QUESADILLAS will get you hooked! Super easy and they are a whole meal in one, you can ADD any filling you like, the tender juicy chicken and the smokiness of the chipotle peppers in adobo rock this recipe, the peppers add a delicious kick without being too spicy, and the taste of the beans with the cheesy Monterey jack will have you begging for more.
INGREDIENTS
4 chipotle peppers (I used La Costeña brand)
4 & 1/2 Tbsp adobo sauce
cilantro (small bunch)
1/2 tsp ground cumin
3/4 tsp onion powder
1 tsp oregano
1 large garlic clove
1/4 red onion (diced)
3 Tbsp olive oil
4 boneless chicken thighs
zest of 1 lime
juice of 1 lime
1/2 to 3/4 tsp salt (to your liking)
pepper (to your liking)
3 Tbsp olive oil
(you can add a little chicken broth or water to blend if you need to)
QUESADILLAS
3 flour tortillas (about 8 & 1/2 inches in diameter)
vegetable oil (to rub on 1 side of tortillas)
refried beans (enough to spread)
freshly grated Monterey Jack cheese
sour cream
pico de gallo
PICO DE GALLO (NO PEPPERS)
1/3 C. diced red onion
1/3 C.diced Roma tomatoes
1/3 C. chopped cilantro
lime juice
salt (to your liking)
pepper (to your liking)

Recipe:
Ingredients & Shopping List
+ For the chicken quesadillas:
Sharp cheddar cheese, grated
Monterey jack cheese, grated
3 chicken breasts, butterflied and pounded thin
Flour tortillas
Sauteed peppers and onions (optional)
2-3 Tbsp oil per quesadilla
Guac, salsa, and sour cream for serving
+ For the chicken marinade:
2 Tbsp vegetable oil
2 garlic cloves, crushed
1 tsp oregano
1 Tbsp cumin
1 tsp cayenne
1 tsp paprika
1 tsp white sugar
1 lime, juiced
1 Tbsp olive oil
1 tsp kosher salt
1 tsp freshly ground pepper
+ For the steak quesadillas:
1 skirt or hangar steak
Salt and pepper
Vegetable oil
Diced onion and pepper (to cook after the steak)
Monterey jack cheese, grated
Sharp cheddar cheese, grated
Flour tortillas
+ For the vegetarian quesadillas
1 zucchini, finely chopped
1 can corn, drained and rinsed
Vegetable oil
Monterey jack cheese, grated
Sharp cheddar cheese, grated
Flour tortillas
+ Fo the guac:
2 avocados
1/2 small red onion, finely chopped
1 large jalapeno, seeded and diced
2 cloves garlic, grated
1 lime, juiced

✅Ingredients
Chicken Marinade:
4 boneless skinless chicken breasts
1 teaspoon garlic powder
3/4 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon dried parsley
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
3 tablespoons lime juice
3 tablespoons olive oil
Quesadilla:
4 10- inch flour tortillas
2 cups cooked and shredded chicken
2 cups shredded cheddar cheese
4 tablespoons butter
4 tablespoons salsa
Guacamole for serving
Sour cream for serving
Additional salsa for serving
✅Instructions
Chicken Marinade:
1️⃣ In a small bowl, combine garlic powder, salt, paprika, pepper, cayenne pepper, parsley, lime juice, and olive oil.
2️⃣ Pour the marinade over chicken breasts in a shallow dish or resealable plastic bag.
3️⃣ Marinate in the refrigerator for 1 hour.
4️⃣ Heat a large heavy skillet over medium-high heat. Cook chicken for 5-7 minutes per side, or until the internal temperature reaches 165 degrees Fahrenheit.
5️⃣ Remove chicken from the pan and chop into small pieces.
Quesadilla:
1️⃣ In a large skillet over medium heat, melt 1 tablespoon of butter.
2️⃣ Place a tortilla in the pan on top of the melted butter and sprinkle 1/2 cup of cheese evenly over the entire tortilla.
3️⃣ Add 1/2 cup of cooked and shredded chicken on top of one half of the cheese and spread 1 tablespoon of salsa on the other half.
4️⃣ Allow the cheese to melt for about 3-4 minutes, then fold the tortilla in half.
5️⃣ Cook for another minute, then flip the quesadilla to ensure the other side browns to your liking and the cheese melts thoroughly.
6️⃣ Repeat steps 2-5 with the remaining tortillas and ingredients, adding more butter as needed.
7️⃣ Remove the quesadilla from the skillet and cut into wedges.
8️⃣ Serve with guacamole, sour cream, and additional salsa on the side.
