How To make White Russian Truffles
1 3/4 lb Milk chocolate, divided
1 c Whipping cream
1/4 c Kahlua
1. Chop finely 1 lb of the chocolate. Melt in a double boiler to 120
degrees. Measure the cream into a 3-quart saucepan and bring just to the boil. Remove from the heat and cool to 120 degrees. Add the chocolate to the cooled cream and stir until the mixture is smooth. 2. Stir the Kahlua into the chocolate, mixing well. scrape onto a baking
sheet and refrigerate until firm. 3. Finely grate the remaining 3/4 lb of the chocolate. (This is easiest
to do using the grater blade of a food processor.) Remove the filling from refrigeration and form into small rough balls. Place on a baking sheet lined with wax paper. 4. Roll the truffles in the grated chocolate, pressing gently to adhere.
5. Refrigerate overnight. Remove from refrigeration 15 minutes before
serving. Note: these truffles do not hold well at room temperature.

How to Make Chocolate Truffles - Food Wishes
We’ve done chocolate truffle-like confections before, but I’ve always taken the coward’s way out, and just finished them by dusting in cocoa, which, while technically acceptable, isn’t even close to what we’ve finally done here. A proper truffle needs to combine the contrasting textures of a soft ganache center, coved in a crispy, pure chocolate shell. Don’t worry, it’s easier than it sounds.

Cooking with Val - Chocolate Truffles (Russian)
Шоколадный трюфель
--------------------------------------------------------------------------
1 cт. сливок
2ст.шоколада
1 ст.ложка апельсинового ликёра
2 ст. ложки ванильного экстракта
1/4 чайной ложки соли
1 ст.какао
Подогреть сливки, добавить шоколад и все хорошо размешать , чтобы шоколад растворился.
Добавить ликёр,ванильный экстракт ,соль.
Всё перелить в миску,накрыть плёнкой и убрать а холодильник ~ на 2 часа.
С формировать шарики и обвалять в какао.
Хранить в холодильнике 3-4 дня

1 cup heavy cream
1 1/2 cup chocolate
1 tbsp.orange liqueur
2 tbsp.vanilla extract
1/4 tsp. salt
1 cup cocoa powder
Bring cream to a simmer and add chocolate.
Stir until it's melted.
Add liqueur, vanilla and salt.
Pour mixture into a bowl and cover with plastic wrap.
Refrigerate about 2 hours.
Using a spoon to make a 1 inch ball.
Roll the ball in cacao.
Place in a airtight container and refrigerate up to 3-4 days
