CROCKPOT: *If using a crockpot, add all of the ingredients into a slow cooker, and cook on low for 4 hours, or on high for 6 hours.
INSTAPOT: If using an Instapot, saute veggies the same in the bottom of your pot. Then, add all of the ingredients into the pot and cover. Cook on high pressure for 20 minutes. Vent, stir, and enjoy!

- 1 Rotisserie Chicken ( I only used half of a large one.)
- 32oz Chicken Broth
- 3 to 4 Tbsp Mexican Crema (OR PREFERABLY 1/4 Cup Heavy Cream or 4oz Cream Cheese)
- 1 15oz Can White Kidney Beans
- 1 15oz Can of Northern Beans
- 4oz Can Diced Green Chiles
- 1 Yellow Bell Pepper, Diced
- 1/2 White Onion, Diced
- 1.5 Cups Frozen Fire Roasted Corn (Equivalent to 1 Can)
- 1 Jalapeno Pepper, Diced
- 1 Tsp Minced Garlic
- 1 Tsp Seasoned Salt
-1 Tsp Onion Powder
- 1 Tsp Garlic Powder
- 1 Tsp Ground Cumin
- 1 to 2 Tsp Chili Powder
- Salt and Black Pepper to Taste
- Cilantro, Lime, Cheese, Tajin for Garnish

This creamy white chicken chili recipe is slow-cooked with chiles, caramelized onions, beans, spices, and shredded chicken for a delicious, comforting soup. You may never eat regular beef chili again after trying this. It's that good.
White chicken chili, also known as white chili or chicken chili, is a hearty soup consisting of white beans, chiles, spices, and chicken. While there is no concrete history of the creation of this soup, many believe it to have originated in the Southwest region of the United States during the 1970s to 1980s. The flavors of chicken chili don't mimic that of a classical chili recipe due to the different ingredients used.
A traditional white chicken chili is thick using beans from the soup that are pureed and added back to it to give it thickness. It can also be thickened with a slurry or roux if need be. It is also commonly garnished with quite a bit of shredded cheese before serving. As with any soup recipe, more flavors will begin to marry and present themselves the next day after making it.

• 1-pound dry navy, cannellini, or great northern beans
• 3 tablespoons olive oil
• 3 peeled and medium diced yellow onions
• 1 whole roasting chicken
• 2 seeded and medium diced yellow onions
• 2 seeded and medium diced poblano peppers
• 2 seeded and medium diced jalapeños
• 2 medium diced ribs of celery
• 10 finely minced cloves of garlic
• 3 tablespoons ground cumin
• 1 tablespoon ground coriander
• 2 tablespoons dry oregano
• 1 cup heavy whipping cream
• sea salt and pepper to taste
• Shredded Monterey jack or pepper jack cheese for garnish
• Sliced green onions for garnish

THINGS YOU’LL NEED:
1.5 pounds chicken (I use a combination of chicken breast and thighs)
2 jalapeno peppers diced
1 small onion diced
2 tablespoons minced garlic
2 poblano peppers (roasted, or fresh)
2 cans white beans (drained - 16 ounce cans)
2 cups chicken stock
1 tablespoon olive oil
1 tablespoon ground cumin
1 tablespoon chili powder
1 tablespoon ancho powder
1 teaspoon cayenne
1 teaspoon oregano
salt and pepper to taste
2 tablespoons cornmeal
Hot Sauce to taste
FOR SERVING: Crumbly white cheese, spicy chili flakes, fresh chopped parsley

Slow Cooker White Chicken Chili
This easy and flavorful Slow Cooker White Chicken Chili is an autumn favorite. High protein, high fiber, and high in flavor. FULL RECIPE BELOW.

INGREDIENTS
1 yellow onion
2 cloves garlic
1 jalapeño (optional)
1 boneless skinless chicken breast (about 3/4 lb.)
16 oz jar salsa verde
2 15 oz. cans Essential Everyday™ cannellini beans
1 15 oz. can Essential Everyday™ pinto beans
1 Tbsp ground cumin
1 tsp dried oregano
¼ tsp cayenne pepper
¼ tsp freshly ground black pepper
2 cups Essential Everyday™ chicken broth
4 oz Essential Everyday™ Monterrey Jack cheese shredded
INSTRUCTIONS
1. Dice the onion and mince the garlic. Slice the jalapeńo lengthwise, scrape out the seeds with a spoon, then dice. Place the onion, garlic, jalapeño, and chicken breast in the bottom of a slow cooker.
2. Drain and rinse the cannellini beans and pinto beans, then add them to the slow cooker, along with the salsa, cumin, oregano, cayenne, and freshly ground black pepper.
3. Pour two cups of chicken broth over the contents in the cooker and then give everything a brief stir. 4. Place the lid on the slow cooker and cook on high for four hours.
5. After four hours, the chicken should be tender and easily shreddable (if not, replace the lid and cook for one more hour). Carefully remove the chicken breast from the slow cooker and use two forks to shred the meat. Return the meat to the slow cooker. Stir the chili, slightly mashing the beans with the back of the spoon as you stir.
6. Serve the chili hot topped with shredded Monterrey Jack cheese. Other optional toppings include fresh cilantro, diced avocado, freshly squeeze lime, or tortilla chips.
