Watergate Pistachio Cake with Dream Whip Icing 1970's. Best Cake in the World, truly.
FOR THE CAKE:
1 (15.25 ounce) box white cake mix
¾ cup vegetable oil
1 small box instant pistachio pudding mix (either the 1-ounce box of sugar-free instant pudding or the 3.4-ounce box of regular instant pudding will work)
3 eggs
1 cup club soda, 7UP, or ginger ale
½ cup finely chopped pecans
½ cup sweetened coconut flakes
FOR THE FROSTING:
2 envelopes (2.6 oz total) Dream Whip
1 ¼ cups cold milk
1 small box instant pistachio pudding mix (either the 1-ounce box of sugar-free instant pudding or the 3.4-ounce box of regular instant pudding will work)
½ cup sweetened coconut flakes
½ cup finely chopped pecans
Instructions
Preheat oven to 350°F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
In a large bowl, combine cake mix, oil, pudding mix, eggs and soda. Using an electric mixer, beat on low speed for about 30 seconds, and then on medium speed for about 3-4 minutes (scraping the sides of the bowl regularly). Fold in the pecans and coconut. Transfer batter to prepared baking dish.
Bake the cake at 350°F for about 40-45 minutes, or until a toothpick inserted in the center comes out clean. Place on a wire rack to cool completely for 15 minutes.
Once the cake is cool, prepare the frosting.
In a large bowl, combine Dream Whip and cold milk. Beat on high speed until soft peaks form (about 4-5 minutes). Add pudding mix and beat until fluffy. Spread on cake and sprinkle coconut and pecans over top.

Watergate Cake is a vintage cake recipe. It comes from my grandmother’s recipe box and I’m pretty sure she made it in the 1970s when the famous Watergate scandal was happening. This is a cake we eat every St. Patrick's Day, it's a family tradition.

Watergate Cake Recipe:
1 package white cake mix
1 package pistachio pudding
1 cup vegetable/canola oil
3 eggs
1 cup 7Up or Sprite
Icing Recipe:
2 envelopes of Dream whip
1¼ cup cold milk
1 package of pistachio pudding
Preheat oven to 350ºF. Mix the 5 ingredients till blended, beat 4 minutes at medium speed. Grease and flour pan and bake for 40 minutes. Cool for 20 minutes in pan and then ice.
Icing: Beat dream whip and milk till it starts to peak, then slowly add pistachio pudding, continue to light and fluffy. Frost cake, keep cake in fridge.
Watergate Cake Video 2
CAKE:
1 box white cake mix
20 oz. can crushed pineapples (drained the juices and save, then divide the crushed pineapple in half too, some goes in the cake )(using half of crushed pineapple in cake)
1/2 cup pecans, finely chopped
1/2 cup shredded coconut
1 (3.4 oz) box pistachio pudding
3 eggs
the reserved pineapple juice
1/3 cup vegetable oil
Preheat your oven to 350°F.
Grease a 13×9-inch baking pan with either butter or non-stick cooking spray.
In a large mixing bowl combine half of crushed pineapples, all the pineapple juice, vegetable oil, eggs, cake mix, pistachio pudding, and mix well.
Now add shredded coconut, pecans, and mix well.
Pour batter into baking pan and spread of evenly, and pop into the oven to bake.
Bake for 35-40 minutes until a toothpick inserted into the center of the cake comes out with just a few clinging crumbs.
Cool cake completely (about 2 hours) or cool for an hour then stick in the refrigerator to cool faster.
ICING:
8 oz tub of Cool Whip
1 (3.4 oz.) box pistachio pudding
the rest of the half of can crushed pineapple
1/4 cup pecans, finely chopped, for garnishing
1/4 cup shredded coconut, for garnishing
1 heaping cup of mini marshmallows, for garnishing
In a medium mixing bowl combine, cool whip, pistachio pudding, crushed pineapple and mix well.
Frost now cooled cake with icing, and spread of evenly, sprinkle the top of the cake with the garnishes which are the pecans, marshmallows, coconut.
Always keep this cake refrigerated because there is cool whip in the icing.
I leave my cake in the baking pan and cover with plastic wrap or press n' seal wrap to keep in fresh in the fridge.

How to make Watergate Cake and Orange Julius (flashback foods)
We're fixing some foods from our childhood to see if they still bring us joy. Dishes include: Watergate Cake, Orange Julius, SPAM sandwich, baloney & cheese sandwich. Come hang out and learn something new!
Watergate Cake
1 pkg white cake mix
3 eggs
3/4 cup oil
2 pkgs instant pistachio pudding mix
1 cup 7-Up
2 packets Dream Whip
1 1/2 cups milk
Preheat oven to 350. Combine cake mix, eggs, and oil. Beat well. Gradually add 7-Up and one package pudding mix. Blend well. Pour in greased and floured 9x13 pan. Bake at 350 for 25-30 minutes. Let cool completely.
For topping, whip 2 packages Dream Whip, one package pudding mix and 1 1/2 cups milk until stiff. Spread on cake and store in refrigerator. Sprinkle chopped nuts on top, if desired.
Orange Julius
1 12oz. can frozen OJ, thawed
1 cup milk
1 cup water
1/3 cup sugar
1 tsp. vanilla
3 cups ice
In blender, add all ingredients...putting liquids in first. Blend well until frothy. Enjoy!
