2 lb Very Fresh Mushrooms 8 oz Softened Cream Cheese 4 1/2 oz Can Deviled Ham 2 tb Chopped Stuffed Olives Onion Salt Garlic Salt Dry Mustard Pepper Pimento Rinse mushrooms well. Remove the stems. Mix the cream cheese, deviled ham, chopped olives and the seasonings. Spoon or pipe the cheese mixture into the mushroom caps. Garnish with pimento. Place on platter, wrap and refrigerate until serving time. These may be made a day in advance. From: Syd's Cookbook.

1. Take unsalted butter in a pan. Let it melt fully. 2. Add chopped onions to the pan and saute for 2 mins. 3. After 2 mins, add the cleaned mushrooms and saute for a minute or two. 4. Add in the chopped garlic and mix everything well. 5. Cook the mushrooms for 5 mins. 6. After 5 mins, add salt, crushed pepper and mix it all again. 7. Once mushrooms are cooked well, add in the chopped coriander leaves. 8. Saute everything for a few seconds and then turn off the stove. 9. Serve the Butter Garlic Mushrooms hot with some bread/focaccia by the side.

Mushrooms are very easy to deal with and they can be cooked really quick. So in this video, I have shown a very simple appetizer with mushroom. It's called butter garlic mushroom. The rich flavour of garlic sauteed in butter adds a fantastic taste to the mushrooms and each bite of it is heaven. You can have this as is or you can also enjoy this with some fried rice or you can also serve this as a side to Noodles/ Pasta recipes with some bread by the side. Do try this special dish and enjoy!

YAY!!! Marinated mushrooms are becoming my new fave thing :)
Marinating mushrooms: Slice a bunch of mushrooms and add to a bowl Use lemon juice (and coconut aminos is optional) as the marinade (OR LIME!! You could add Mexican spices too for a fiesta flavour!) Add chopped green onions, leeks, garlic or anything you want to marinate with the mushrooms! For spices you can use red pepper flakes, black pepper, dill, smoked paprika, really anything you feel like! :) Switch it up and try different combos!
MARINATE mushrooms in a SUNNY SPOT on the counter for a few hours. The longer you marinate the better they get! You can also put them in the dehydrator, but the sun marinated ones are epic!!! I marinate for roughly 2, sometimes 3 hours - just depends on my day.
Dressing: Twist on my classic french. This one is spicy so you might need to use less spice! About 5-6 dates and about 3/4 cup water - depending on how thick or thin you like your dressing. Adjust as you blend Garlic, cumin, mustard powder, red pepper flakes and smoked paprika for spices - adjust to taste! Sprig of green onion and a few cherry tomatoes! Blend and again - adjust spice and water to your own desire.
Salad: Anything you want! I start with half a head of red leaf lettuce chopped followed by 3 mini cucumbers, celery and cherry tomatoes! Add anything else you want!
Add the mushrooms and dressing. Mix and enjoy!! xox

The above recipe is a first in the appetizer series . It's a simple modern thai one bite dish made using easily available ingredients and is plated in soup spoons adding an elegant and refined touch .
The recipe has 3 components : 1. The caramelized mushroom 2. The chilli peanut crumble 3. The curried aioli
The mushrooms need to be marinated in a refrigerator for the flavour to set in .
The chilli peanut crumb can be made ahead and cling wrapped.
An aioli is basically fragrant mayonnaise . Here we flavour it with thai red curry paste and kaffir lime leaves to give it flavour depth and kick. This too can be made ahead and cling wrapped and refrigerated for later use.
When cooking the mushrooms in quantity cook in batches as crowded mushrooms release water and they lose their flavour.
Finally we use kaffir lime leaf slivers to garnish , giving it a strong contrasting character.
