How To make Vegetable Latkes
2 lg Idaho potatoes
2 md Carrots
2 md Zucchini
1 lg Yellow onion, finely chopped
2 Eggs
2 Egg whites
1/4 ts Pepper
1 1/2 ts Salt
1/4 c Flour
Oil for frying 1>. Pare and coarsley shred potatoes and carrots. Shred zucchini. Place in
a bowl with onion. 2>. Combine eggs, egg whites, salt and pepper; stir into vegetable mixture. Sprinkle flour over top; stir to mix. 3>. Heat non-stick griddle, or heavy skillet to medium-high. Brush with oil. Drop batter by heaping tablespoonfuls onto griddle. Flatten slightly. Cook until browned. Turn, brown other side, adding a little oil as necessary. 4>. Drain on paper towels and keep warm until ready to serve. Serve with applesauce or cranberry sauce or combination for dipping.

Makes about 18 latkes
Ingredients:
1 kg (2.2lbs) potatoes (4-5 medium potatoes)
2 eggs
1 onion
2 tablespoons flour or breadcrumbs
1-2 teaspoons salt to taste
1/2 teaspoon black pepper
Directions:
1. prepare a large bowl with cold water.
2. Peel the potatoes and onion. Grate the potatoes and onion and transfer to the cold water.
3. Drain the liquids and then wrap grated potatoes and onion with cheesecloth or kitchen towel, twist cheesecloth into a pouch and squeeze out excess liquids.
4. Transfer to a large bowl, add salt, pepper, flour and beaten eggs. Mix well.
5. In a large skillet heat oil over medium-high heat. spoon 2-3 tablespoons of potato mixture the hot oil, flatten slightly.
6. Fry 3-4 minutes on each side or until golden brown. Transfer to paper towels to drain and season with salt.
7. Serve with sour cream.

Happy Hanukkah, pals! ???? In our house, we get to do both Hanukkah and Christmas (and, as a Canadian and an American, both Thanksgivings, if we play our cards right). Dan and I thought we invented this unique take on a latke recipe a few years back, but it turns out a lot of people have thought of mixing up their latkes this way. Nonetheless, this is how we do it, and they come out tasting great! (Want the classic latke? Just skip the cilantro and jalapeño and serve with apple sauce and sour cream – the rest is the same!)
