How To make Lacy Potato Pancakes (Latkes)
4 Potatoes - peeled
1 sm Onion
2 Eggs
1/3 c Flour
1 ts Baking powder
1 ts Salt
1 pn Lemon pepper
or pepper oil - for frying Grate potatoes either using the largest holes on a four-sided hand grater, or the grater attachment on a food processor. Place potatoes in a colander and rinse under cold water to remove the starch. Be sure to allow potatoes to drain well. Grate onion, removing any excess moisture by placing in colander and pressing with the back of a wooden spoon. Combine potato and onion. Beat eggs into mixture; stir in flour, baking powder, salt and pepper. If using a food processor, combine ingredients using plastic knife attachment so potatoes remain in grated pieces. Heat 1/8" of oil in a large skillet. For each pancake, drop about 2 tablespoons of batter into the oil and flatten with the back of a wooden spoon; the flatter the pancake, the crisper it will be. Brown well on both sides. Drain well on paper towels. Keep the cooked pancakes warm in a 100 F oven. Serve with Pink Cinnamon Applesauce (see recipe) and/or sour cream. Makes about 2 dozen regular size or 5 dozen miniatures. Pancakes may be made ahead of time and refrigerated between layers of waxed paper when cooled. To reheat, place in a single layer on an ungreased cookie sheet. Bake uncovered at 450 F for 5 minutes, or until crisp and hot.

Czech Potato Pancakes - Cooking with Rich
Although you’ll find plenty of recipes for these delicious Potato Pancakes (Czech or otherwise), I know them better as Bramboráčky. They are the simplest to make with only a few ingredients, almost certainly in most pantries or kitchens. This is the basic version.

Ingredients
800g potatoes (6-7 medium sized potatoes)
5 garlic cloves (grated)
2 eggs
½ cup of plain flour
¼ cup of milk
1tsp marjoram
1tsp oregano
Salt & pepper
Vegetable oil for cooking
Instructions
1. Peel and grate potatoes, once grated squeeze as much of the juice out as possible. If potatoes look a little brown you can quickly rinse and squeeze dry again through a strainer.
2. To the potato add the garlic and herbs and
3. Mix eggs, milk and salt & pepper and pour into bowl.
4. While combining slowly add in sifted flour
5. Mixture should be firm but not dry (not too runny). If too dry you can add another egg (or a little more milk) if to runny simply add a little more flour.
6. You should be able to roll a portion of the mixture into a gooey ball a little smaller than a tennis ball.
7. Add oil to a heavy base frying pan heating to a medium heat. Drop a little of the potato mixture in to test. Once oil is heated add a quality to the pan and flatten out to roughly 1-1.5 cm.
8. Fry on each side between 3 and 4 minutes, until golden brown. Then place on paper towel to remove any excess oil.
9. Serve warm with favourite topping – or no topping at all.
Czech Potato Pancake Tips.
• Russet potatoes work well for this dish.
• I don’t use a lot of salt in the initial mixture preferring to add salt to taste after serving. But that’s a personal preference. My memory as a kid was a strong garlic and salt taste.
• Make sure oil is medium, too high and the pancakes will burn on the outside and not cook through, too low and the pancakes will take longer to cook and soak up too much of the oil.
• The perfect pancake is golden brown on both sides with a the edges quite crispy.
