Veg Jalfrezi
Prep Time - 15 minutes
Cooking Time - 30 minutes
(Serves - 2)
INGREDIENTS:
Ghee (घी) - 2 tbsp
Cumin (जीरा) - 2 tsp
Onion, Chopped (प्याज़) - ½ Cup
Ginger, Chopped (अदरक) - 1 tbsp
Garlic, Chopped (लहसुन) - 1 tbsp
Green Chillies, Slit and Deseeded (हरी मिर्च) - 3 no
Tomatoes, Chopped (कटा हुआ टमाटर) - 1 cup
Tomatoes, Fresh Puree (टमाटर प्यूरी) - ½ Cup
Salt (नमक) - To Taste
Turmeric Powder (हल्दी पाउडर) - ½ tsp
Kashmiri Chilli Powder (कश्मीरी मिर्च पाउडर) - ½ tbsp
Coriander Powder (धनिया पाउडर) - ½ tbsp
Cumin Powder (जीरा पाउडर) - 1 tsp
Garam Masala Powder, (गरम मसाला) - 1 tsp
Gobi, Florets (फूलगोभी) - ½ cup
Green Beans, Sliced (फ्रेंच बीन्स) - ½ cup
Carrots, Julienne (गाजर) - ½ cup
Cabbage, Sliced (पत्ता गोभी) - 1 cup
Green Capsicum, Julienne (हरी शिमला मिर्च) - ¼ cup
Yellow Capsicum, Julienne (पीली शिमला मिर्च) - ¼ cup
Red Capsicum, Julienne (लाल शिमला मिर्च) - ¼ cup
Coriander, Chopped (धनिया) - A Handful
Paneer, Fingers (पनीर) - 100 gm
Green Chillies, Slit (हरी मिर्च) - 2 no
Onion, Sliced (प्याज) - ¼ cup
Lemon Juice (नींबू का रस) - ½ tbsp
Salt (नमक) - To Taste
Method:
- To make Jhaal (spicy) frezi (stir-fry), we start with heating our kadhai and melting ghee. Add in cumin and roast it then adds in chopped onions and stirs fry over high heat till for a few seconds.
- Now we add finely chopped ginger and garlic and stir fry on high heat for a few more seconds. Now, we add slit and deseeded green chillies along with chopped and pureed tomatoes to give them a tangy taste.
- For dry spices, we add turmeric, chilly red powder, coriander powder, cumin powder and garam masala which are optional and give a nice stir. Now we cook it on a medium-high flame to eliminate the rawness of tomatoes and mellow it down.
- For veggies, we start with cauliflower as it takes a longer time to cook. After cooking it for around one to one and a half minutes we add our other veggies - beans, carrots, and cabbage with a sprinkle of water to prevent our veggies from sticking or burning on the high heat.
- We collect our veggies in the centre of our utensils and cover it with a lid and let it cook on low heat to tenderise vegetables and cook them to semi-dry.
- On high heat, we add all 3 types of capsicums, paneer fingers, coriander, slit chillies, sliced onions, lemon for sharpness, and salt to taste and gently toss it by lifting and dropping it with a spatula.
Once done, transfer to a platter and garnish it with fresh coriander leaves and preferably serve it with paratha/phulka/Roti.

Ingredients:
Masala
• OIL | तेल 2-3 TBSP
• RED CHILLI | लाल मिर्च 2 NOS.
• CUMIN SEEDS | जीरा 1/2 TSP
• ONIONS | प्याज़ 2 MEDIUM SIZED. (CHOPPED)
• GREEN CHILLI | हरी मिर्च 1 NO. (CHOPPED)
• GINGER GARLIC PASTE | अदरक लेहसुन की पेस्ट 1 TBSP
• POWDERED SPICES
1. TURMERIC POWDER | हल्दी पाउडर 1/4 TSP
2. KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 2 TSP
3. CORIANDER POWDER | धनिया पाउडर 1 TBSP
4. SPICY RED CHILLI POWDER | तीखी लाल मिर्च पाउडर 1 TSP
• TOMATO PUREE | टमाटर की प्यूरी OF 3 TOMATOES
• SALT | नमक TO TASTE
• HOT WATER | गरम पानी AS REQUIRED
• KETCHUP | कैचअप 2 TBSP
Tossing Veggies & Final Cooking
• OIL | तेल 1 TBSP
• CUMIN SEEDS | जीरा 1/2 TSP
• CAULIFLOWER | फूलगोभी 1/3 CUP (BLANCHED)
• HOT WATER | गरम पानी AS REQUIRED
• CARROT | गाजर 1/3 CUP (JULIENNE)
• FRENCH BEANS | फ्रेंच बीन्स 1/3 CUP
• CAPSICUM | शिमला मिर्च 1/3 CUP (JULIENNE)
• YELLOW BELL PEPPER | पीली शिमला मिर्च 1/3 CUP (JULIENNE)
• RED BELL PEPPER | लाल शिमला मिर्च 1/3 CUP (JULIENNE)
• GREEN PEAS | हरा मटर 1/3 CUP

• POWDERED SPICES

4. CHAAT MASALA | चाट मसाला A PINCH
• KASURI METHI | कसूरी मेथी 1 TSP
• BUTTER | मक्खन 1 TBSP
• OIL | तेल 1-2 TSP
• ONION | प्याज़ 1 SMALL SIZED. (SLICED)
• TOMATO | टमाटर 1 SMALL SIZED. (SLICED)
• ROASTED KASURI METHI POWDER | भुनी हुई कसूरी मेथी का पाउडर A PINCH
• GARAM MASALA | गरम मसाला A PINCH
• FRESH CORIANDER हरा धनिया A HANDFUL (CHOPPED)
Method:
• To make the base masala set a wok over high heat, add oil once the wok gets hot & then let the oil heat up as well.
• Further add red chilli, cumin seeds, onions & green chillies, stir well & cook over medium flame until the onions turn golden brown.
• Add ginger garlic paste once the onions turn golden brown & cook for 1-2 minutes.
• Lower the flame & add all the powdered spices along with a splash of hot water, stir well & cook for 2-3 minutes over medium high flame.
• Further add tomato puree & salt, stir well & continue to cook until the masala thickens up & the oil separates, if the masala gets too dry then add a splash of hot water & continue to cook it, this process will take upto 10-12 minutes.
• Once the tomato puree has cooked add ketchup & stir well, switch off the flame at this stage & your base masala for jalfrezi is ready.
• Set a wok over high heat, add oil once the wok gets hot & then let the oil heat up as well.
• Further the add cumin seeds & cauliflower along with a splash of hot water, cover & cook over low flame for 2-3 minutes until the cauliflower is soft.
• Once the cauliflower is cooked, remove the lid, increase the flame to high & add carrot, french beans & all the remaining veggies except for sliced onions & tomatoes, stir the veggies well & toss over high flame briefly.
• Then lower the flame again & add all the powdered spices, kasuri methi & butter, stir well & toss for 2 minutes & transfer the tossed veggies into the masala.
• In the same wok add more oil & heat it up, then add the sliced onion & tomato, toss them over high flame for a minute then add them into the masala as well.
• Now switch on the flame, stir everything well & cook for 2-3 minutes then taste & adjust the seasoning as per your preference & add roasted kasuri methi powder, garam masala & fresh coriander, stir well.
• Your veg jalfrezi is ready, serve hot along with fresh tandoori roti / rumali roti / chapati.

Veg Jalfrezi Recipe - Restaurant Style Vegetable Jalfrezi - Mix Vegetable Sabzi - Varun
Learn how to make Veg Jalfrezi at home with Chef Varun Inamdar on Rajshri Food.
Veg Jalfrezi is a restaurant-style sabzi recipe made using mix vegetables and Indian spices. This sabzi recipe goes well with soft rotis, do try it at home and share your feedback in the comments below.
Ingredients:-
Gravy
200 gms tomatoes chopped
1 Onion (roughly chopped)
5-6 Garlic Cloves
50 grams Cashew Nuts
1/2 tsp Kasoori Methi
1/4 tsp Garam masala
1 tsp Sugar
1 tbsp Kashmiri Chilli powder
2 tbsp Butter
1 tbsp Fresh Cream
1 tsp White Vinegar
Salt to taste
Vegetables:-
2 cups assorted vegetable (cut into batons)
(tri-colored capsicum, carrot, beans, baby corn, mushroom)
Method:-
To make Veg. Jalfrezi let's first start by making makhani gravy.
For makhani gravy:-
Take 200grams of chopped Tomatoes in a wok/pan. Add 1 Onion roughly cut,5-6 Garlic cloves. Follow it up with 50 grams of cashew nuts and 1 tbsp of Fresh cream. Saute them together. Follow it up with 1 tbsp of Butter. To spice it up add 1 tbsp of Red Chilli powder, 1/2 tsp of Garam Masala powder and top it off with 1/2 tsp of Fenugreek leaves. Add 2 cups of water to cook the gravy. Let the gravy boil for around 15 - 20 minutes or till the tomatoes turn soft and mushy. Once tomatoes turn soft, add 1 tsp of White Vinegar, a pinch of Sugar and finally some Salt. Stir it well and turn off the flame. Let the gravy come down to room temperature and ground it into a fine paste. Strain the paste to avoid grits and lumps.
For Jalfrezi:-
Use the same pan that you used to make gravy. Add in 1 tbsp of Butter in the pan. Wait for butter to melt and add in assorted vegetables. Saute the vegetables for around 8 -10 mins or till they're 3/4th cooked. Add some salt, give it a mix and add two ladles of the makhani gravy. Cook vegetables along with gravy for around 2 mins and you'll have your Veg. Jalfrezi ready.
Serve it hot with Kulcha or Naan.

Vegetable Jalfrezi Recipe in English:
Ingredients for paste:
2-3 tbsp Oil
1 tsp Cumin seeds
1 tbsp Ginger (sliced)
1 tbsp Garlic (chopped)
1 cup Onion

6-7 Cashew nuts
Ingredients for jalfrezi:
1/2 cup Oil
2 cup Tomato puree
1 cup Prepared paste
1/2 tsp Turmeric
Salt to taste
2 tsp Red chili powder
1 tsp Coriander powder
1 tsp Cumin powder
1 tsp Garam masala
1 ½ tsp Black pepper
2 tbsp Soya sauce
1 tbsp Hot sauce
2 tbsp Vinegar
Ketchup as required
2-3 tbsp Cream
Carrots as required (thin sliced)
Capsicum as required (thin sliced)
Baby corn as required
Fresh beans as required
Cauliflower as required
Green chilies as required
Coriander for garnish
Ingredients for rice:
1 tbsp Butter
1 tsp Garlic (minced)
1 cup Rice (boiled)
1 tsp Black pepper
Salt to taste
Directions for paste:
In a pan heat oil, sauté cumin seeds, ginger, garlic, onion, green chilies and cashew nuts.
Cook for 2 to 3 minutes until onion are translucent and cashew nut changes color.
In a chopper blend all these ingredients well, make a fine paste and set aside.
Directions for jalfrezi:
Heat oil in another pan, add prepared paste and cook for 1 to 2 minutes.
Add turmeric, salt, red chili powder, coriander powder, cumin powder, black pepper, garam masala and mix well.
Then add tomato puree and cook for 2 to 3 minutes.
Now add all the veggies and mix it well.
Then add soya sauce, vinegar, ketchup, cream, hot sauce and cook a bit.
Then sprinkle coriander on top and it’s ready to serve.
Directions for rice:
In a pan melt butter, add garlic and sauté until golden brown.
Now add boiled rice and mix it well.
Add black pepper, salt, cover the lid and let it simmer for 5 to 6 minutes.
Serve with vegetable jalfrezi.
Preparation time: 10 minutes
Cooking time: 20 minutes
Serving: 4-5

دھنیا گارنش کے لئے
چاول بنانے کے اجزاء:
مکھن 1کھانے کا چمچ
لہسن 1چائے کا چمچ
چاول 1کپ
کالی مرچ 1چائے کا چمچ
نمک حسبِ ذائقہ
پیسٹ ترکیب:
ایک پین میں کھانے کا تیل گرم کر کے اس میں ذیرہ، ادرک،لہسن، پیاز، سبز مرچیں اور کاجو ڈال کر دو سے تین منٹ پکا لیں۔
اب ایک چوپر میں ان تمام اجزا کو بلینڈ کر لیں اور پیسٹ بنا کر سائیڈ پر رکھ دیں۔
جلفریزی ترکیب:
ایک پین میں کھانے کا تیل گرم کر کے اس میں تیار کی ہوئی پیسٹ ڈالیں اور ایک سے دو منٹ پکائیں۔
اب اس میں ہلدی، نمک، لال مرچ پاؤڈر، دھنیا پاؤڈر، ذیرہ پاؤڈر، کالی مرچ اور گرم مصالحہ ڈال کر اچھی طرح مکس کریں۔
پھر اس میں پسے ہوئے ٹماٹر ڈال کر دو سے تین منٹ تک پکائیں۔
اب اس میں تمام سبزیاں ڈال کر اچھی طرح مکس کریں۔
پھر اس میں سویا ساس، سرکہ، کیچپ، کریم اور ہاٹ ساس ڈال کر تھوڑا سا پکائیں۔
اب اس پر دھنیا چھڑک کر سرو کریں۔
چاول بنانے کی ترکیب:
ایک پین میں مکھن پگھلا کر اس میں لہسن ڈالیں اور گولڈن براؤن ہونے تک پکائیں۔
اب اس میں ابلے ہوئے چاول ڈال کر اچھی طرح مکس کریں۔
پھر اس میں کالی مرچ اور نمک ڈال کر ڈھکن سے ڈھانپ کر پانچ سے چھ منٹ کے لئے دم پر رکھ دیں۔
تیار کی ہوئی جلفریزی کے ساتھ سرو کریں۔
تیاری کا وقت: 10منٹ
پکانے کا وقت: 20منٹ
