How To make Vanilla Pecan
1 qt Brandy
2 Vanilla beans (2 inches)
6 oz Pecans, chopped
2 c Sugar syrup (see recipe)
1 pn Cinnamon
Pour brandy, pecans, cinnamon, and vanilla beans (extract may be alternated) in jar and cover. Let stand for 2-3 weeks. Add sugar syrup to taste. Let stand 1 week. Strain and steep 2 more weeks. Ready to serve. Excellent for baking. Yield: 1 1/2 quarts Container: 1/2 gallon jar

These butter pecan cookies are to die for! To bring out the nutty flavor of the pecans I toasted them lightly in a brown butter I made myself, and they turned out amazing. That brown butter really adds a depth of flavor to the cookies.
This recipe makes 12 cookies. The dough can be made in advance and stored in the refrigerator. The dough can be frozen but I highly suggest letting the dough thaw some before putting it in the oven. 4 cups pecan halves
1/2 cup granulated sugar
1/2 cup brown sugar
2 egg whites
1 tsp. salt
1 tbs. cinnamon
1/2 tsp. vanilla extract
6 tbs. butter (melted)
Bake at 325° for 15 minutes per side. Be sure to flip the pecans after 15 minutes. Allow the cinnamon candied pecans to rest for 45-60 minutes once done. This will allow the candy to harden.

Ingredients:
1 large egg
¾ cup firmly packed dark brown sugar
1 tablespoon melted butter
1 teaspoon vanilla
⅔ chopped pecans
Pecan halves for topping (optional)
One 15 ounce package ready to bake pie crust sheet
Directions:
In a medium bowl, beat the egg. Mix in sugar, butter and vanilla. Stir in chopped pecans.
Roll out pie crust sheet. Cut with 2 ¼ inch rounds. Lightly press rounds into mini tart tins
Place a scant teaspoon of nut mixture into each tart. Top with a pecan half.
Bake at 325 F for 25-30 minutes. Yield 32-36 tarts

Butter Pecan Cake
2-2/3 cups chopped pecans
1-1/4 cups butter, softened, divided
2 cups sugar
4 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
FROSTING:
1 cup butter, softened
8 to 8-1/2 cups confectioners' sugar
1 can (5 ounces) evaporated milk
2 teaspoons vanilla extract
Directions
1. Place pecans and 1/4 cup butter in a baking pan. Bake at 350° for 20-25 minutes or until toasted, stirring frequently; set aside.
2.In a large bowl, cream sugar and remaining butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking powder and salt; add to the creamed mixture alternately with milk, beating well after each addition. Stir in 1-1/3 cups of toasted pecans.
3-Pour into three greased and floured -in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
4 For frosting, cream butter and confectioners' sugar in a large bowl. Add milk and vanilla; beat until smooth. Stir in remaining toasted pecans. Spread frosting between layers and over top and sides of cake. Yield: 12-16 servings.
