Balsamic-Marinated Tuscan Bean Salad || Healthy Vegan Recipes
Since I was in Tuscany, I wanted to make a dish centered on the cannellini bean, which is the typical bean of this region of Italy.

DRESSING INGREDIENTS
2 Tbsp balsamic vinegar
1 Tbsp olive oil
1 Tbsp green onion, chopped (or 1 tsp onion powder)
1 clove fresh garlic (or 1/2 tsp garlic powder)
pinch salt
SALAD INGREDIENTS
1 14oz can cannellini, or other white, beans
6 mushrooms, sliced
1/2 cucumber, chopped
2 carrots, scrubbed or peeled and chopped
2 Tbsp fresh basil, chopped
1 cup spinach, chopped

TUSCAN WHITE BEAN SOUP RECIPE | healthy winter dinner recipe

INGREDIENTS
1 tbsp extra virgin olive oil
2 celery stalks, diced
2 sliced leeks and/or 1 large onion diced
1-2 tsp fresh minced or roasted garlic
½ tsp oregano, ½ tsp rosemary, ½ tsp rosemary
1 can (15oz) cooked cannellini beans, drained not rinsed
1 small roasted butternut squash (4 cups cooked)
1 Tbsp extra virgin olive oil
1 small lemon juiced
4 cups vegetable stock
sea salt and pepper to taste
½ cup cashew cream
4 cups baby spinach

By the age of 6, there was early evidence that food would play an important role in my life. Practicing penmanship and kitchen creativity, I co-authored my first recipe, “Ham Slam”, with one of my older siblings. It had all the makings of a classic 1960’s American kitchen treasure, featuring gourmet ingredients like Campbell’s cream of celery soup and Durkee’s canned French Fried onion rings. It’s no wonder my culinary career promptly took a diversion until around the age of 40.
But spending years as an executive in the business of marketing brands such as Apple, Microsoft, and Sony Pictures didn’t snuff out my lifelong passion for travel, food, and wine. I eventually found my way back to my culinary roots when I turned my attention to studying technique at Cordon Bleu Paris, exploring new foodie concepts around Europe and documenting them in words and pictures.
I’ve been privileged to pen articles and columns in many publications, including the Food52, Huffington Post, msn.com, Zester Daily, Santa Ynez Valley Journal, Michigan BLUE Lakestyle Magazine, Olive Oil Times and Olive Oil Source, the world’s top-ranked olive oil-related websites.
In the process, there was one more thing I learned. Despite the explosion of global cuisines in restaurants all across the U.S., you can’t fully experience the wide world of flavor all from your own backyard, Toto.
Following that thought put me and my partner, George on a plane to Alicante Spain in 2014 where we have lived ever since. Our mission is to explore the aromas, ingredients and collective imaginations that are all part of Spain’s vast culinary heritage.

Tuscan Tuna and White Bean Salad - Fast and Easy No Cook Lunch Recipe
A simple, fast, healthy meal full of protein and flavor--perfect for a quick lunch and works great as leftovers! Whip up this tuna and white bean salad, then spread it on a wrap, enjoy on toast, or eat right out of the bowl!

Recipe Info
• 1 can tuna, drained
• 1 (14.5 oz) can white beans, drained
• 2-4 cups mixed greens (spinach, romaine, etc.)
• ¼ cup chopped black olives
• ¼ cup extra virgin olive oil
• 2 Tablespoons lemon juice
• Salt and pepper to taste
• Optional: ¼ red onion, sliced or chopped small
In a small bowl, whisk together olive oil and lemon juice. In a larger bowl, mix together tuna, beans, and black olives. Pour lemon olive oil dressing over tuna mixture. Stir to combine well. Serve over mixed greens, or chop greens and stir into tuna and bean mixture.

???? 2 cans white beans (cannellini), drained and rinsed well
???? 1 English cucumber, diced
???? 10 oz grape or cherry tomatoes, halved
???? 4 green onions, chopped
???? 1 cup chopped fresh parsley
???? 15 to 20 mint leaves, chopped
???? 1 lemon, zested and juiced
???? Salt and pepper
???? 1 tsp za’atar, more if you like
???? ½ tsp each sumac and Aleppo pepper
???? Extra virgin olive oil (Early Harvest)
