Breakfast casseroles are so hearty and comforting...the perfect way to start the day! And we don't know about you, but we can't wait to try this one out. It's a super savory ham and cheese strata with fresh veggies, courtesy of Louise Leonard from the lusherie.com. Thanks Louise!

Breakfast Strata with Ham, Spinach and Gruyere
Serves 4
5-6 cups crusty bread, cubed
1 cup Gruyere, shredded
1 cup ham, chopped
1 cup cooked or frozen spinach
10 eggs
1 quart whole milk
2 tbsp Dijon mustard
4 cloves garlic, minced
2 sprigs fresh thyme, leaves chopped
½ tsp cayenne pepper
1 tsp sea salt
½ stick butter
Butter a 9 x 13 baking dish and fill with the bread cubes. Top with the grated cheese, ham and spinach. In a bowl, whisk together the eggs, milk, mustard, garlic, thyme, cayenne and salt. Pour this mixture into the dish, making sure to cover all the ingredients. Cover and refrigerate for 4 hours and up to 1 day.
Preheat the oven to 350 degrees.
Take the baking dish out of the refrigerator and uncover. Dot the top of the strata with butter, cover with foil and bake for 45 minutes. Uncover and bake 15 minutes more to brown the top of the strata. Remove from the oven and let stand for 10 minutes to set. This dish is great served hot or at room temperature.

INGREDIENTS
290g (2.5 cups) cooked ham, bacon, sausage, turkey - or no meat!
115g spinach
230g mushrooms
20g (1 1/2 tbsp.) butter
1 clove of garlic, grated
1/4 tsp. nutmeg
2 tsp. salt
1 tsp. black pepper
8g (1 tsp.) English mustard (or Dijon)
470ml (2 cups) whole milk
6 eggs
one loaf of stale bread (or fresh!)
400g cheese (any cheese, but I used gruyere)
chives, for garnish
**This breakfast strata recipe serves 8 people!**

Here’s your recipe!
8 Slices Day Old White Bread
1 -2 TSP Butter, Softened
2 Cups Cooked and Diced Turkey or Chicken
1/2 Cup Onion, Chopped
1/2 Cup Green Pepper, Chopped
1/2 Cup Celery, Chopped
1/2 Cup Mayonnaise
1 TSp Salt
1/2 TSP Pepper
2 Eggs, Slightly Beaten
1 1/2 Cups Milk
1 Can Cream of Mushroom Soup
1/2 Cup Cheddar Cheese, Shredded
Set oven to 325. Butter 2 slices of bread and cut in 1/2 cubes, set aside. Cut remaining bread into 1 cubes. Place half of unbuttered bread cubes in a greased 8x8 or 1 1/2 Quart casserole dish. Combine turkey or chicken, onion, green pepper, celery, mayonnaise, salt and pepper. Spoon over bread cubes. Sprinkle with remaining unbuttered bread cubes. Cover and chill 1 hour to overnight. Spoon soup over top and sprinkle with buttered bread cubes. Bake for 50 minutes. Sprinkle cheese over top and bake just until melted.
