A whole new way to cook your Thanksgiving or Christmas turkey. This Mexican Turkey Recipe is poached in a lime broth and then roasted to ensure a juicy and incredibly flavorful bird!
INGREDIENTS
3 white onions, sliced
3 jalapeños or serrano chiles, stemmed and cut in half
2 heads garlic, cut in half
8 ounces tomatoes, cut in half
1 bunch cilantro
tap here
Juice of 4 limes
10 fresh sprigs oregano (preferably Mexican oregano)
4 bay leaves
2 tablespoons black peppercorns
1/4 cup kosher salt
1 (10-12 pound) whole fresh or defrosted turkey, neck and giblets removed
INSTRUCTIONS
Prepare poaching liquid. Combine all ingredients except the turkey in a pot large enough to hold the turkey (mine is 20 quarts). Fill a third of the way with water and bring to a boil over medium-high heat, stirring to dissolve salt. Don't fill it more than this or the pot will overflow when you add the turkey. You can always add more water later if you need to.
Poach turkey. Remove plastic piece that holds the legs of the turkey together. Remove the neck and giblets and set aside to make gravy. Add the turkey, legs up, to the poaching liquid pressing down so as much of it is covered by the liquid as possible and immediatley reduce heat to low, you don't need to wait for it to come back to a boil. It's okay if it is not completely submerged, you can turn it later. If you added too much water in the beginning ladle extra water out so it doesn't overflow. Cover and simmer 20 minutes, then remove pot from heat and turn turkey to submerge the part that might have been exposed at the beginning. Let turkey cool to room temperature (about 4 hours). Refrigerate turkey in broth overnight.
Roast turkey. Remove turkey from the refrigerator. Heat oven to 400°F. Carefully remove bird from the pot by lifting the body with your hands. Don't lift by the legs, they will come off. Place turkey on a rack in a roasting pan. Roast for 45 minutes- 1 hour 15 minutes (depending on the size of the turkey) or until the skin is golden and a thermometer reaches 150°F. then turn oven off and leave turkey inside the oven for 1 hour. The turkey is fully cooked at 165°F, it will continue cooking while resting in the oven with the oven off. If the skin is getting too dark, cover with turkey with foil and continue roasting until it has reached the proper temperature.
Carve. Remove turkey, let rest for about 15-20 minutes, covered with foil. Carve and serve.
What to do with the broth. Strain the leftover poaching liquid and save for another use.
NOTES
This recipe works best, logistically, for smaller birds. Anything bigger than 14 pounds becomes a bit cumbersome unless you are blessed with an enormous fridge. If you'd like to make the roasted butternut squash and charred scallions as seen in the pictures, lay thick slices of squash on a baking sheet, toss with oil and salt and roast at 425°F for 20 minutes then place under the broiler for a minute or two to brown. For the scallions, toss with oil, salt, and pepper and lay in a single layer on a baking sheet. Broil for 3-4 minutes or until lightly charred.

Mexican Cola Turkey Carnitas - Easy Recipe for Tacos & Burritos
I use cheap turkey legs instead of pork for Carnitas. A bottle of Mexican cola adds a sweet flavor. And visit my cooking blog for recipes done artfully & with humor:
Ingredients
2 turkey legs - Okay to use thighs or wings. Use a turkey breast too, although it is a bit drier.
1/2 cup of orange juice - optional. Fresh squeezed or frozen.
1 bottle of Mexican coke - 12 ounces. Okay to use a regular cola.
1 Lemon - juice. About 2 tablespoons.
1 bay leaf
1 teaspoon oregano - fresh or dried
1 tablespoon dried onion - okay to use a chopped onion.
1 tablespoon dried garlic - okay to use 2 chopped cloves garlic.
Salt and pepper to taste
Directions
Add turkey legs to a pot or large pan. Sprinkle on all spices, dried herbs, dried garlic and onion.
Pour in orange juice, lemon juice, and Mexican cola.
On your stovetop, bring the cooking pot to a boil. Once it's boiling, reduce heat to a low simmer (medium heat) and cook uncovered for 2 1/2 - 3 hours until meat separates easily with a fork.
You are cooking the Carnitas uncovered so the broth reduces and intensifies and the meat becomes more flavorful. The meat will contract and shrink as the broth cooks away, so you shouldn't have to add more liquid. Just make sure to rotate the meat and bone a few times during simmering so all sides evenly cook through.
After 2 1/2 hours take out a large-sized piece of boiled turkey, let it cool for a couple of minutes, then see if it shreds apart easily with a fork and knife. If not then keep cooking in half-hour increments until fall-apart tender.
When Cola Turkey Carnitas are tender, turn off the heat and allow the meat to just sit in the broth for 10 minutes, so the meat softens even more while soaking up all the delicious pot-liquor deliciousness.
Traditionally Carnitas are fine chopped and piled into flour or corn tortillas. Just take the turkey pieces and chop them into small 1/4-inch pieces. You could also do the pulled pork method of using 2 forks to pull the tender chunks apart into strands.
You can drizzle on some of the orange/cola pot liquor or broth if you are storing the Carnitas to serve later. Or if you are keeping it warm in the oven, make sure to drizzle on plenty and cover, so Carnitas don't dry out.
You can top Cola Turkey Carnitas Tacos with salsa, or simply with chopped onion and cilantro. For a Cola Turkey Carnitas Burrito, try Mexican rice with heated pinto beans, along with the above-mentioned chopped veggies. If you have a favorite salsa then use that...and don't forget the hot sauce!

Roasting for Crispy Bits
This is a lean way. Just add the larger chunks of tender braised turkey to a roasting pan and bake for about 10-15 minutes at 350 degrees.
To keep the Cola Turkey Carnitas extra moist add some of the broth to the roasting pan, just enough to barely cover the bottom.
You just want to lightly brown some of the turkey pieces for crunch. Don't worry about all the small boiled bits, just add them to the larger roasted pieces and chop them up all together.
