How To make Turkey Enchiladas with Sour Cream
8 oz Whole green chiles
1 lg Clove garlic, minced
2 T Oil
1 1/2 lb Fresh tomatoes, peeled,
Seeded, and chopped 2 c Coarsely chopped onions
2 t Salt
1/2 t Dried oregano
1/2 c Water
3 c Shredded cooked turkey
Or chicken 2 c Sour cream
1 c Grated Cheddar cheese
1/3 c Oil
12 ea Corn tortillas
Remove and discard the seeds from the chiles and chop the chiles finely. In a 10-12-inch skillet saute' the chiles with the garlic in 2 tablespoons oil over medium-high heat, stirring often. Add the tomatoes, onions, 1 teaspoon salt, oregano and water. Simmer uncovered until thick, stirring often, for about 30 minutes. Remove from heat and set aside. In a large mixing bowl combine the turkey, sour cream, grated cheese, and remaining 1 teaspoon salt, mixing well. Heat the 1/3 cup oil in a heavy 8-10-inch skillet. Cook each tortilla briefly in oil, turning once.
Place each tortilla between paper towels in a stack to remove excess oil. Fill each tortilla with 4 tablespoons of the turkey filling, roll up, and place side by side, seam side down, in a shallow 8 x 12-inch baking dish. This may require 2 baking dishes. Pour the sauce over the top of the enchiladas and bake in a preheated 350 degree oven until heated through, about 20 minutes. If the dish is prepared ahead and held in the refrigerator, the baking time will be 25-30 minutes. Reserve the sauce in a separate container and do not pour over the enchiladas until they are to be baked. Serve with refried beans and beer. Ingredients for green chile enchiladas
Chicken (I used 2 Chicken Breast)
Corn Tortillas
6-8 Poblano Chiles
7-9 Tomatillos
1 Bunch Cilantro (Optional- blend it with the chile and tomatillos )
2 1/2 Cups of Cheese ( I used Oaxaca)
*Mozzarella, Munster, or queso fresco
2 cups Chicken broth ( keep extra if the sauce is too thick)
2 Tablespoons Knorr Chicken Bouillon
1 Cup Heavy Cream (you can use: Milk or Half and Half)
1 Teaspoon butter
1/2 a medium onion (Optional for the filling)
Nutmeg (Optional)
Salt to taste
Garlic (Optional- blend it with the chile and tomatillos)

SIMPLE ENCHILADAS Recipe | MOST DELICIOUS Turkey Dinners
SIMPLE and Delicious Turkey enchiladas!
You’ll need:
2 cans Favorite Verde sauce!
8oz sour cream (we use Daisy brand)
Corn salsa (pick your preferred brand)
Family size ground turkey
Shredded Mexican cheese blend (that’s what is says on the bag) we use @tillamook
Mozzarella Cheese
Favorite tortillas (I prefer corn but my family like flour)
Cook ground turkey, season with cumin and salt to taste.
While this is cooking and you are stirring often, you can mix the filling: 2 cans of verde sauce, 8oz sour cream, (you can also add half a can of cream of chicken) 4oz shredded cheese and then mix!
Continue stirring till turkey meat is brown. When turkey is cooked Add 4-6 Oz of salsa then add about 3/4 of your filling sauce. This is going to be added to the middle of tortillas, rolled up and placed in the pan. Fill the pan with your rolled up enchiladas. You’ll use the remaining sauce to pour over the top of your enchiladas. I like to get it spread between them as well as on top. Really smother them. Then add cheese amounts of your choice along the top of that. Put in the over at 375 for about 15 minutes but depends on your elevation so watch for the cheese to be melted and bubble around the edges!

Healthy Turkey Enchiladas, Easy Weeknight Dinner
These are the best ground turkey enchiladas filled with black beans, red enchilada sauce and southwest spices. ????????CLICK FOR THE RECIPE????????

INGREDIENTS
2 tablespoons avocado oil or olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon kosher salt
1/4 teaspoon pepper
1 (15 ounce) can black beans, drained and rinsed
1 (14.5 ounce) can fire roasted tomatoes
1 1/2 cups can red enchilada sauce (we like Siete) or you can make your own
8-10 corn, grain free or flour tortillas
2 cups shredded Mexican cheese, or try my vegan cashew queso
INSTRUCTIONS
1️⃣ Preheat the oven to 350°F and spray a 9x13 inch casserole dish with cooking spray and set aside.
2️⃣ Heat the oil in a deep saute pan over medium heat. Once it’s hot add the onion and cook, stirring frequently, until softened. Add the garlic and cook for another minute, until fragrant.
3️⃣ Add the ground turkey, chili powder, cumin, paprika, oregano, salt and pepper and cook to break up the turkey until no pink remains, about 5 minutes. Add the fire roasted tomatoes and black beans and stir to combine then remove the mixture from the heat.
4️⃣ Place the tortillas on a microwave safe plate and cover them with a damp paper towel. Microwave them on high for 30 minutes then flip the stack over and microwave for another 30 seconds to make them softer and more pliable to work with.
5️⃣ Spread 1/4 cup of the enchilada sauce in the bottom of the prepared baking dish. Fill each tortilla evenly with the ground turkey mixture and 1 cup of the shredded cheese then roll them up tightly and arrange them in a line on top of the enchilada sauce in the baking dish.
6️⃣ Pour the remaining 1 1/4 cups of enchilada sauce evenly over the enchiladas and top with the remaining cup of shredded cheese. Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly. If you're using vegan queso. Omit it before baking and pour it over enchiladas before serving.

▪️ 3/4 cup room temperature sour cream (or plain non-fat Greek yogurt)
