Spaghetti with Tuna, Lemon, and Breadcrumbs | Everyday Food with Sarah Carey
Don't you just love it when you can pull together a great meal out of seemingly nothing? Sometimes I find that on those days when my refrigerator is empty and all I have is what's in my pantry, that's when I'm most creative in the kitchen. Take today's recipe, for example, which is made up entirely of kitchen staples: spaghetti, canned tuna, Kalamata olives, lemon, and breadcrumbs. The only thing you might need to buy is fresh parsley.

Recipe Ingredients:
Coarse salt and ground pepper
2 slices whole-wheat sandwich bread
1 tablespoon plus 1 teaspoon olive oil
3/4 pound spaghetti
1 teaspoon finely grated lemon zest, plus 3 tablespoons fresh lemon juice
1/2 cup chopped fresh parsley
3 tablespoons slivered Kalamata olives
2 cans (6 ounces each) chunk light tuna in water, drained

225 grams pasta of choice, uncooked
2 Tablespoons olive oil
2 large cloves garlic, minced
1 (185-gram) can San Miguel Del Mar Tuna Chunks in oil
Zest from 1 whole lemon
2 Tablespoons fresh lemon juice, or more to taste
Salt and pepper, to taste
1/4 cup fresh basil, plus more to top if desired
Grated parmesan and/or chili flakes, to top

1/4 cup mayonnaise
1 teaspoon fresh lemon juice
1/4 cup chopped green onions or scallions, plus more to top

8 small slices of baguette (or other bread of choice in the same size)
Butter or oil, if desired
Whole basil leaves, or other green of choice, portioned into the same size as your bread
Freshly ground black pepper
