This simple and healthy tuna salad recipe is easy to cook. Crispy and fresh vegetables, roasted peppers, tuna, and a lemon dressing make this salad a tasty alternative to the classic tuna salad. Mayonnaise is not used, making it a lighter version of tuna salad. It's full of healthy protein and vitamins, making it a great choice for lunch or a light summer dinner. The ingredients are very simple, and you can easily make the salad with whatever you have on hand.

✅ Ingredients:
• Lettuce - 4 oz | 110 g
• Tuna in oil - 1 can or 4 oz | 110 g
• Fresh cucumber - 5 oz | 140 g
• Tomato - 4 oz | 110 g
• Bell pepper - 4 oz | 110 g
• Canned corn - 2 oz | 60 g
• Red onion - ½ oz | 15 g
• Fresh parsley - 2 tbsp | 5 g
Dressing
• Lemon juice - 2 tbsp
• Olive oil - 1,5 tbsp
• Salt - ½ tsp
• Ground black pepper - to taste
✅ You will need:

???? Preparation:
1. Preheat oven to 370 F | 190 C. Add chopped bell pepper on a baking sheet lined with parchment paper, drizzle with ½ tablespoon of olive oil, season with salt and pepper to taste and bake for 20 minutes.
2. Add the chicken eggs in a saucepan, pour in cold water, and bring to a boil. When the water is almost boiling, flip the eggs to ensure even cooking of the yolk. As soon as the water boils, switch the heat off, cover with a lid and leave for 10 minutes. Then cool the eggs in ice water and peel.
3. Prepare the salad dressing in a small jar: mix 2 tablespoons of lemon juice, 1.5 tablespoons of olive oil, ½ teaspoon of salt, and black ground pepper to taste.
4. Add canned tuna to a bowl, drain the oil, add finely chopped red onion and parsley, season with pepper to taste, and mix well.
5. Tear the lettuce with hands or cut, cut tomatoes, cucumbers. Add veggies in a salad bowl, add canned corn and roasted bell pepper, pour the dressing over it, and mix well.
6. When serving, form small tuna patties using spoons and place them on top of the salad, garnishing with halved or quartered eggs. Enjoy your meal!
❗️Advices:
1. Use your preferred choice of lettuce: romaine, iceberg, spinach or mixed lettuce.
2. Red onion can be substituted with yellow, white, or green onion.
3. Olive oil can be replaced with any vegetable oil suitable for salads.
4. Lemon juice can be substituted with wine, apple, or balsamic vinegar.
5. Use salt and spices according to your taste.

Ingredients
1/2 cup softened unsalted butter
2 tablespoons lemon zest
1 tablespoon fresh lemon juice
1/2 teaspoon freshly ground black pepper
1/4 teaspoon garlic powder
8 slices your favorite bread
4 tablespoons divided olive oil
8 6 to oz 1-inch thick tuna steaks

Directions
For the lemon pepper butter: In a small bowl, combine the butter, lemon zest, lemon juice, pepper, and garlic powder, stirring until smooth. Cover and chill.
For the tuna: Preheat the grill to medium-high heat, about 350 degrees F. Spray the grill rack with nonstick, nonflammable cooking spray.
Brush the bread slices evenly with 2 tablespoons olive oil. Grill the bread until toasted, 2 to 3 minutes per side. Remove from the grill and set aside.
Brush the tuna evenly with the remaining 2 tablespoons olive oil. Sprinkle each steak evenly with salt and pepper. Grill the tuna for 3 to 4 minutes per side, or until desired degree of doneness. Place each tuna steak over 1 slice grilled bread. Top each tuna steak with desired amount of lemon pepper butter. Garnish with Caramelized Lemon Slices, if desired. Serve immediately.
Caramelized Lemons:
Preheat a grill to medium-high heat.
Slice the lemons. Dip the cut side down into a bowl of sugar. Place on the grill, cut-side down, and grill until caramelized, 2 to 3 minutes.
