Seasoned with our beloved cilantro lime dressing, this Mexican-inspired salad is the perfect companion for barbecues, cookouts, and meal-prepping.
⭐️ Ingredients
½ cup (100 grams) quinoa
1 cup (240 grams) water + ½ teaspoon salt, or vegetable broth
2 ripe mangos diced
1 cup (150 grams) cucumber diced
1 can (240 grams) black beans or 1½ cups cooked black beans
1 red onion thinly sliced
1 red bell pepper diced
1 ripe avocado
FOR THE CILANTRO LIME DRESSING
1 cup (25 grams) fresh cilantro use parsley if you don't like cilantro
¼ cup (55 grams) extra virgin olive oil
¼ cup (60 grams) lime juice use lemon juice if you use parsley
2 tablespoons (30 grams) maple syrup
1 clove garlic
1 teaspoon ginger grated
1 teaspoon salt

1 cup chopped seeded cucumber
1/2 cup chopped mango
1/2 cup canned black beans, rinsed and drained
2 tbsp minced seeded jalapeño pepper
1 tbsp chopped fresh cilantro
2 tbsp fresh lime juice
1 tbsp fresh orange juice
1/2 tsp salt
Mango and Black Bean Salsa - Lakeland Cooks!
Ingredients:
1 can of black beans
Chopped tomatoes
Chopped red onion
Chopped mango
Chopped fresh cilantro
Chopped jalapeno pepper
Chopped fresh avocado
Freshly squeezed lime juice
Directions:
Drain the can of black beans and add all of the other ingredients.
Refrigerate for several hours before serving.
Sue's Tips:
Add chopped avocado last and mix gently so the avocado doesn't disintegrate.
Any sweet onion can be used in place of red onion. Add all ingredients to suit your own taste. This is great served with chips. It's also good with grilled salmon.

MGH Revere Food Pantry dietetic intern Sidney shares the recipe for a Tropical Mango Pineapple Salsa. The recipe uses items from the pantry's March 4 offerings.
Tropical Mango Pineapple Salsa
Prep Time: 10 min
Yield: 4 Servings
Ingredients:
1 cup mango, chopped and peeled
1 cup pineapple chopped
1/2 cup diced bell pepper (any color)
1 small tomato, seeded and chopped
3 tablespoons fresh cilantro, chopped (Can substitute fresh parsley)
2 green onions, sliced
2 tablespoons lime juice
1 tablespoon lemon juice
1 jalapeno pepper, finely chopped and seeds removed (optional)
Instructions:
1. Prep all ingredients and combine together in a large bowl
2. Cover for 1 hour and refrigerate before serving
Suggestions for Use:
● Serve with whole grain tortilla chips
● Add black beans and corn to make a complete meal
● Use as a topping for baked fish, shrimp, or chicken
● Substitute condiments on a turkey burger
● Mix into plain greek yogurt for an easy snack
