This tortilla stack sandwich is very delicious & so easy to make. It's arranged & folded in a unique way. There are three layers to this stuffed sandwich with yummy chutneys, cheese, colorful veggies & seasoned chat masala. It's a crispy & delicious tortilla sandwich ????.

mini tortillas 8 to 9 or home made chapati
butter
Salt
chat masala
black pepper powder
Green coriander chutney
red garlic chutney

How To Make A Mexican Tortilla Stack
1 brown onion, finely diced
1 red capsicum, finely sliced
2 tbsp olive oil
500g beef mince
1 tsp salt
1/2 tsp black pepper
1/2 tsp ground coriander
1/2 tsp paprika
1/2 tsp ground cumin
1/2 tsp ground chilli
2 crushed garlic cloves
2 heaped tbsp tomato paste
1/3 cup water
1 can black beans (400g)
2 tbsp olive oil
8 tortilla wraps
1 bag cheddar cheese
Garnish with fresh parsley or coriander. Serve with guacamole and sour cream if desired

In this video we'll make a delicious Mexican tortilla stack. It's such a fun way to enjoy tortillas, and a relatively quick meal to put together.
First we'll make a yummy Mexican inspired vegetable and meat filling, then layer it up with the tortillas and cheese, and then grill it in the oven. We'll also make a delicious guacamole to enjoy on the side.
As always we'll plate it up and garnish it ready to enjoy.

= Mexican Tortilla Stack =
- 500g (1 lb) beef, ground
- Oil for frying
- Qty vegetables finely died. (onion, carrot, celery, capsicum, spinach, silverbeet, broccoli etc)
- 1 tin chopped tomatoes, or use fresh
- 1 tin kidney beans or similar
- 4 tortillas per stack, approximately
- Qty cheese, grated
- Salt and Pepper
- Chopped herbs for garnishing, coriander or parsley go well
= Guacamole =
- 1 Avocado, mashed
- 1/4 red capsicum, finely diced
- 1/4 red onion, finely diced
- fresh coriander, finely chopped
- 1/2 chilli diced, if you like it spicy
- 1 lemon, juice
- Salt and pepper
