Tortilla Lasagna Ep. 149
Tortilla Lasagna Recipe
Prep: 3/4 cup of chopped green or black olives, 3/4 cup of
diced white onions, 2 cloves of garlic finely diced, 3 - 4 cups of grated medium cheddar cheese, have two 8 aluminum cake pans ready to use and three soft tortillas (9 -10 in diameter) trimmed to fit inside the pan, a pizza cutter works well to do this.
- in a large skillet on medium - high heat
- 1 tsp. olive oil
- 3/4 cup diced onions, stir 3 - 4 minutes
- push onions away from the centre of the pan
- add 2 cloves of finely diced garlic to the centre of the pan, stir in a drizzle of olive oil on top of the garlic, cook 1 minute then mix with the onions
- mix in 1 Lb. lean ground beef, cook until brown, drain excess fat with a spoon
- stir in 1 pouch of Old El Paso Tacos Seasoning
- stir in 2/3 cup on water and bring to a boil
- lower heat to low - medium, stir for 3 minutes
- pour beef mixture into a mixing bowl
- stir in 2 cups of medium chunky salsa or your favourite salsa
- stir in the 3/4 cup of chopped olives
- lightly coat one of the 8 aluminum pan with cooking spray or olive oil
- begin layering as follows
1. 1 tortilla
2. half of the meat mixture
3. dollops of sour cream every inch or two
4. 1-1/2 cups of grated cheddar cheese
5. tortilla then pat down with a spatula
- repeat steps 2 to 5
- on top of the last tortilla spoon on a generous amount of Taco Sauce, can be purchased at any grocery store, can be substituted with a simple tomato sauce
- spread 1 cup of grated cheddar cheese on top
Cooking:
- cover with the second aluminum pan
- bake at 375 F for 25 minutes
- remove cover
- continue to bake for 20 minutes until the edges of cheese begin to brown
- let rest at least 10 minutes
- serve with fresh, cold and crisp lettuce and a dollop of sour cream on the side

CHICKEN TACO SOUP
How to make Chicken Taco Soup
Makes 8 servings, 1½ cups per serving
INGREDIENTS
1 15 ounce can black beans
1 15 ounce can pinto beans
1 15 ounce can sweet corn
1 14.5 ounce can petite diced tomatoes
1 12.5 ounce can chicken breast in water
1 10 ounce can green enchilada sauce
1 14 ounce can low-sodium chicken broth
1 packet taco seasoning
1 teaspoon black pepper, or to taste
4 corn tortillas (optional)
Oil
DIRECTIONS
1. Wash your hands well with soap and hot water.
2. Drain and rinse black beans, pinto beans, and sweet corn and add to a large pot.
3. Add diced tomatoes, canned chicken, enchilada sauce, chicken broth, and seasonings.
4. Bring to a boil and then turn down to a simmer on low for 20 – 30 minutes.
5. Preheat oven to 350°F. Lightly coat both sides of each tortilla with oil and bake 8 – 11 minutes or until crisp. Stack tortillas and cut into strips. Top each soup serving with baked tortilla chips.
6. Refrigerate leftovers within 2 hours.
NOTE: Can also prepare in slow cooker on low heat for 2 – 3 hours.
Use rotisserie chicken instead of canned if you prefer.
