Opera Cake Recipe
Opera Cake Recipe - a rich French dessert, that uses one of the most loved flavor combinations, chocolate and coffee. Opera Cake is consisting of layers of almond sponge cake soaked in coffee syrup, filled with coffee buttercream and chocolate ganache and topped with chocolate glaze. For an elegant finish its name is written on top of each Opera cake slice and is decorated with gold leaf.

Ingredients
Makes about 10 servings
Joconde (Almond Sponge Cake)
5 eggs, room temperature
5 oz (140g) ground almonds (almond flour)
5 oz (140g) powdered sugar
1/4 cup (30g) flour
2 tbsp (30g) butter, melted
5 egg whites
2 tbsp (30g) sugar
1/4 tsp (1g) salt
Coffee Syrup
2/3 cup (160ml) water
1/2 cup (100g) sugar
3 tsp (6g) instant coffee
Chocolate Croustillant
2.5 oz (70g) semisweet chocolate
2.5 oz (70g) Paillette Feuilletine
Chocolate Ganache
5.5 oz (160g) semisweet chocolate
2/3 cup (160g) whipping cream
Coffee Butercream
5 egg yolks, room temperature
3/4 cup (150g) sugar
3 tbsp (45ml) water
2 tsp (4g) instant coffee
1 1/4 cup (280g) butter, softened
Chocolate Glaze
7 oz (200g) semisweet chocolate
2 tbsp (30ml) canola oil

*3rd clas flour 1kilo
*white sugar 3/4 kilo
*baking powder 50grm
*baking soda 10grms
*soda royal 8oz
*oil 3/4 cup
*milk evap half can
*water 3cup/ estimate
*egg 3pcs or 2pcs. kng nagtitipid pwede rin wala egg.
300°c the heat .of your oven affter 10mins.low the temp..then wait until golden brown.
Torta Cebuana
This is one of the often requested recipes by my students and followers. I have many versions of the Torta Cebuana. This version is not the same one that I teach in my face to face classes but this is still very good.
Torta Cebuana also called Torta Mamon is a muffin like cake (could be spongy or dense) traditionally made with tuba (fermented coconut wine) instead of yeast. Anise is used for flavoring instead of vanilla. Instead of butter, it used pork lard and don't forget lots of egg yolks! According to research, Torta Cebuana originated in Argao, which is in the southern part of the province of Cebu.
In the Philippines, there are two kinds of torta. In the northern part of the Philippines, torta is an egg omelet with meat and/or vegetables formed into a patty. In the southern part, specifically in the Visayas, it is a small cake made with eggyolks, tuba and pork lard. Since the Torta Cebuana is high in fat, do not be surprised if the torta is crumbly.
In my modern version of the Torta Cebuano, I used butter for flavor and I used corn oil instead of pork lard for a healthier choice. My recipe of Torta Cebuano freezes very well. You wrap each torta well in cellophane or plastic. Put in a sealed container and freeze. You can just heat it in the microwave.
And by the way, using pork lard instead of oil or butter helped to prolong the shelf life of the torta during the olden days. Just thought you should know. Enjoy this recipe. A truly Cebuano classic!

Royal Torta | How To Make Torta | Torta Bisaya Style | Torta Boholana | Super Marie
This video recipe is requested by one of my supporters. I made a few changes of the recipe, made it easier and quickier to make without using any special equipment to mix the batter. I only used wire whisk. It still came out tasty and delicious. I used baking powder instead of yeast, royal or fanta instead of condensed milk and this is an english version as per request. 1/2 small onion (diced)
1 Roma tomato
2 cloves of garlic
2 tsp beef bouillon
1 tsp onion salt blend
1/4 tsp ground cumin (optional)

6 to 8 bolillo rolls
cooking oil for frying rolls

lime mayo, lettuce, tomato, avocado, onion, cilantro, salsa, queso fresco
CREAMY LIME MAYO
1/2 cup mayonnaise
1/4 cup Mexican table cream
1 Tbsp fresh lime juice
pepper to taste
