CARNE GUISADA / TEX-MEX STYLE / How to make Mexican beef stew

CARNE GUISADA (cooked beef stew ) TEX- MEX STYLE is a dish I grew up with, It's chunky pieces of beef simmered in a delicious brown gravy loaded with flavor until falling apart tender. The spices of cumin, garlic, peppercorns and onions are a few of the must have ingredients. It is a simple dish to prepare. This dish brings back many memories of my childhood, we looked forward to the day my mom served it, I love siding it with refried beans, mexican rice or mashed potatoes and flour tortillas on the side, I smear some refried beans in the tortilla then fill it with CARNE GUISADA giving me the most amazing delicious messy taco. For an added kick I love a couple of spoonfuls of molcajete salsa to top it. CARNE GUISADA is a dish that will always satisfy.
INGREDIENTS
3 LB. Chuck pot roast (not shoulder roast) chuck roast is the only one I like)
2-3 Tbsp vegetable oil divided (extra if needed)
1 medium onion (chopped)
2 green onions (white and green)
3/4 med/lrg green Bell pepper (diced)
1/4 yellow Bell pepper (diced)
1 & 1/4 tsp whole cumin (molcajete crushed)
3/4 - tsp peppercorns
3 Lrg Garlic cloves
2 Tbsp All purpose flour
2 Lrg Roma tomatoes
1 & 1/2 tsp Chili powder (I used Gebhardts)
1 Tbsp tomato paste
2 & 1/2 tsp Chicken bouillon
Salt to your liking (I used 1 tsp)
2 &1/2 C. water (you decide
● searing will caramelize your meat
● sear quickly until golden brown and set aside
● cook for 1 and 1/2 - 2 hours for falling apart tender

Tex Mex Chicken Fajitas ????#shorts
Tex Mex Chicken Fajitas
Ingredients
- 2 tbsp olive oil
- 5 small or 2 large capsicums (red and yellow), sliced thin
- 1 red onion, sliced thin
- 1.5 tsp of each; ground cumin, ground coriander, smoked paprika, chilli flakes
- 5 chicken thigh fillets
- Salt to taste
- 1 brown onion, diced
- 4 cloves garlic, diced
- 1 tin tomatoes
- 1 tsp each; chilli flakes and ground coriander
- 1 bunch coriander, roughly chopped
- 1 packet large wheat tortillas
Method
1. Start by placing the capsicum and onions on a flat tray, then drizzle with oil and season with 80% of the first lot of spices.
2. Next, add the chicken on top of the veg and season with salt and the remaining spices. Then roast at 200c for 6-7 minutes per side or until cooked through.
3. Meanwhile, in a small pot, cook the diced onion and garlic in a little olive oil until softened. Add the tin of tomatoes and second lot of spices and bring to a simmer.
4. Once the chicken is cooked, slice it into thin strips and add to a bowl with the roasted veg and coriander. Mix well.
5. Warm the tortillas according to the packet instructions.
6. To assemble, place a tortilla on a plate, then add a spoonful of tomato salsa followed by the chicken and veg mixture and wrap it up tightly. Enjoy!

How To Roll Enchiladas:
To make corn tortillas more pliable, wrap a stack of six corn tortillas in damp paper towels. Then, place them on a microwaveable plate and microwave for 1 minute. When you pull the tortillas out, they will be steaming (so be careful), but they will also be bendy and perfectly pliable for stuffing.
As much as we all want to slam each corn tortilla from edge-to-edge with beef and cheese, take care not to overstuff the enchiladas. This will make them difficult to roll closed, and it will likely spill out before you even make it to the casserole dish.
Roll one side the tortilla over the filling, and tuck the flap under the filling, tightly rolling it over at the same time.
Place seam-side down in casserole dish.

Let’s make a TEX MEX TORTA!
The TORTA is the most popular Mexican sandwich. If there has ever been a no right way no wrong meal, it’s the TORTA. There are so many ways to recreate the Mexican Sandwich – you can use round buns, bolillos, any meats like bistek, ham, fajitas, or even no meat at all.

We’re gonna get our blackstone plancha out and get it nice and hot for a good sear and extra flavor, I love me a good char on my griddle cooked meats.
After a quick cook we’re gonna slice everything up and get it ready for assembly.
This epic sandwich starts with laying down a nice layer of grilled jalapeño beans with cheese. Then we’re gonna stack our proteins nice and hearty. On the other side we’re gonna slather some avocado, put some lettuce and tomato down and put a nice drizzle of crema to top it off.
