King Ranch Breakfast Strata | Southern Living
This night-before breakfast casserole is one of our all-time favorite recipes. Inspired by the flavors of classic King Ranch Chicken Casserole, this Tex-Mex breakfast recipe is made with French bread, tortillas, pepper Jack cheese, green chiles, diced tomatoes, cream of mushroom soup, and lots of eggs. It tastes best when assembled the night before. Then, in the morning, add in the remaining milk and top with additional pepper Jack cheese. Let stand around 45 minutes before baking for the best results. It's a hearty, cheesy breakfast casserole that the whole family will love.

Tex Mex Casserole (Keto Friendly)
Are you looking to satisfy your south-of-the-border cravings, minus the carbs? Then this recipe is for you. A hearty and spicy classic Tex Mex dish that you will absolutely love!
Ingredients:
1½ lbs ground beef
3 tbsp Tex-Mex seasoning
1 cup crushed tomatoes
2 oz. pickled jalapeños
2 cups shredded cheese
Tex-Mex Seasoning:
1 tbsp chili powder
2 tsp paprika powder
2 tsp ground cumin
1 tsp garlic powder
1 tsp onion powder
½ tsp chili flakes
½ tsp dried oregano
½ tsp ground black pepper
Preheat the oven to 400°Fahrenheit. Fry the ground beef until cooked through and no longer pink.
Mix the Tex-Mex seasonings together. Add Tex-Mex seasoning and crushed tomatoes to the frying pan. Stir and let simmer for 5 minutes. Taste to see if it needs additional salt and pepper.
Place the ground-beef mixture in a greased baking dish (about 9 or 23 cm in diameter). Top with jalapeños and cheese.
Bake on upper rack in oven for 15–20 minutes or until golden brown on top. Enjoy!

OVERNIGHT MEXICAN STRATA
Serves 8 to 10
Prep Time: 12 hours 25 minutes
Cook Time: 1 hour
Total Time: 14 hours 25 minutes
Ingredients:
10 cups cubed day-old French baguette
1/2 cup diced tomatoes
1/2 cup diced green bell pepper
1/2 cup diced orange bell pepper
1 1/2 cups cooked crispy bacon
1 cup Cabot Fiery Jack Shredded Cheese
1 cup Cabot Vermont Seriously Sharp Shredded Cheese
9 large eggs
2 cups milk (any kind)
1 tsp salt
1 tsp smoked paprika
1 tsp chili powder
SERVING SUGGESTIONS
Hot Sauce
Salsa
Sour cream
Freshly Chopped Cilantro
Instructions:
Grease a 9x13-inch casserole dish with butter or spray with nonstick cooking spray.
Add bread in an even layer. Top evenly with both peppers, tomatoes, and bacon. Sprinkle cheeses evenly over the top.
In a large bowl, whisk together eggs, milk, salt, paprika, and chili powder. Pour evenly over the ingredients in the casserole dish.
Cover tightly with plastic wrap and refrigerator for 1 hour or overnight (up to 12 to 16 hours).
When ready to cook, preheat oven to 375˚F. While the oven is preheating, remove casserole from refrigerator and let sit at room temperature for 15 minutes.
Bake casserole, uncovered, for 30 minutes. Cover with aluminum foil and bake an additional 20 to 30 minutes.
The strata is done when browned on the sides and puffy in the center. Remove from oven and cool for 5 minutes before serving.
Serve with hot sauce, salsa, sour cream, and cilantro.

Bake temp: 380 degrees (F) for 15 to 20 minutes
Ingredients
Oil
1 1/2 Tbs butter
8 eggs + 1/2 cup heavy whipping cream (salt pepper to taste)
8 oz of chorizo of choice + 2 medium potatoes
11 Corn tortillas
1/2 8oz can tomato sauce
3/4 cup water
2 tomatoes
2 medium Anaheim pepper or can of Hatch green chili
1/2 chopped white onion
2 garlic cloves
1 tsp chicken bouillon (salt pepper to taste)
1 can pinto beans
3 cups of cheese (mozzarella + Mexican cheese blend)
If you refrigerated your casserole for next day use
Bake at 350 degrees
Cover with foil and bake for 30 minutes- then remove foil and continue to bake for another 15 to 20 minutes, until you see all cheese has melted, you know the bubbling.
