How To make Tex Mex Skillet Supper Corn Bread
BEAN FILLING:
2 tb Canola or olive oil
2 ts Ground cumin
1 Onion, finely diced
1/2 Green pepper, finely diced
1/2 Red bell pepper,finely diced
2 (1-3) Hot red or green
Peppers, finely diced 1 15 oz. can diced tomatoes,
With juice 1 15 oz can black beans,
Rinsed and drained 2 tb Chopped fresh cilantro
(optional) Salt and pepper to taste CORN brEAD TOPPING:
1 c Yellow cornmeal
3/4 c All-purpose flour
2 tb Sugar
2 ts Baking powder
1 ts Salt
1 c Skim or low-fat milk
2 Egg whites
2 tb Canola or vegetable oil
Preheat oven to 425F. Prepare bean filling: Heat 2 tablespoons oil in large ovenproof nonstick or cast iron skillet over medium-high heat. Stir in cumin. Add onion, bell peppers and hot peppers and saute until onion is translucent, about 3-5 minutes. Then add tomatoes and juice, black beans and cilantro, if
using. Cook for 1 minute more. Remove from heat. Season with salt and pepper. Prepare Corn-Bread Topping: In a medium-size bowl, combine cornmeal, flour, sugar, baking powder and salt. Mix well. Place milk in a large glass measuring cup. Add egg whites and oil to milk and mix well. Pour into flour mixture and stir just until moistened. Batter will be lumpy. Spread batter as evenly as possible over beans in skillet. Bake for about 20-25 minutes, or until top is golden and firm. Let stand for about 5 minutes before serving the pie server or spoon.

* FOR WHIPPED BUTTER, WILL NEED A HAND MIXER
* PREHEAT OVEN TO 400 DEGREES (PREHEAT SKILLET IN OVEN)
RECIPE:
DRY INGREDIENTS-
1 CUP FLOUR
1 CUP CORN MEAL
1 TEASPOON BAKING POWDER
1 TEASPOON SALT
IN LARGE BOWL, COMBINE DRY INGREDIENTS AND SET ASIDE
WET INGREDIENTS-
1 EGG
1 1/2 CUP BUTTERMILK (RESERVE 1/2 CUP TO ADD IF NEEDED)
5 TABLESPOONS BUTTER (MELTED)
IN BOWL, COMBINE WET INGREDIENTS AND SET ASIDE
ADDITIONAL INGREDIENTS-
1 CUP CORN (FRESH OR FROZEN)
1 CUP CHEDDAR CHEESE
2-5 FRESH JALAPENO (DICED FINE)
1 TABLESPOON BACON FAT (OR YOUR FAVORITE OIL)
1. SLOWLY ADD THE LIQUID INGREDIENTS INTO THE DRY INGREDIENTS, SLOWLY STIRRING IN, CAREFUL NOT TO OVERMIX
2. ADD THE CORN, CHEESE AND JALAPENO GENTLY FOLDING IN
3. ADD ADDITIONAL BUTTERMILK IF NEEDED, CHECKING FOR A THICK CONSISTENCY
4. REMOVE IRON SKILLET FROM OVEN AND PLACE ON STOVETOP, MELT 1 TABLESPOON BACON GREASE OVER MEDIUM HEAT
5. TURN OFF HEAT AND ADD CORNBREAD BATTER INTO SKILLET, TOP WITH JALAPENO IF DESIRED
6. PLACE SKILLET INTO PREHEATED OVEN AND BAKE FOR 20 MINUTES
7. CHECK CENTER OF CORNBREAD WITH TOOTHPICK FOR DONENESS
WHIPPED BUTTER RECIPE:
1/2 CUP BUTTER (ROOM TEMPERATURE)
1 TABLESPOON MILK
PINCH OF SALT
1. IN BOWL, WHIP SOFTENED BUTTER UNTIL LIGHT AND AIRY
2. ADD MILK AND SALT AND CONTINUE TO WHIP UNTIL FLUFFY
*SERVE AT ROOM TEMPERATURE
IF YOU'D LIKE A SWEETER BUTTER, OMIT SALT AND ADD 1/3 CUP OF HONEY AND WHIP UNTIL FLUFFY.
*SERVE AT ROOM TEMPERATURE

I am on this Mexican Food kick and just had to put this Mexican Cornbread Casserole together and give it a try. Gosh it was easy and so so good. You have to try this for your family.

Mexican Cornbread Casserole Ingredients
2 pounds ground beef or ground chuck
1/2 lg red onion diced
1-2 pks of Taco Seasoning Mix
1-2 cups water
1 15 oz can Petite Diced Tomatoes
1 15 oz can Tomato Sauce
2 cups frozen corn
1 can black beans rinsed and drained
Jalapeno Slices to your taste
1 Tbsp Chicken Bouillon
1/2 Tbsp Coarse Ground Black Pepper
2 boxes Jiffy Corn Muffin Mix (Prepared together)
1 small can green chiles
1 cup cheese or to your taste
Bake at 400 degrees for 35 minutes then add your cheese and bake for another 10-20 minutes until cheese is melted through.

Mexican Cornbread Casserole
1 lb. Ground Beef
1 Can Whole Kernal Corn
1 Can Petite Diced Tomatoes
1 Can of Black Beans (optional)
1 pkg. Taco Seasoning
1/2 Cup Water
1/2 Cup Chopped Onions
1/2 Cup Chopped Bell Peppers
1 Tsp Ground Cumin
1 Tsp Garlic & Onion Powder and Black Pepper
I Pkg Shredded Cheddar Cheese
1 Box Jiffy Cornbread Mix (I prefer)
Follow box instructions
If you use any other brand of Cornbread Mix add 1 Tablespoon of Sugar.
Bake Casserole @375 degrees for 20
mins. Add Cheese then bake for another 5 mins.

Today, I am combining jalapeno cheddar cornbread and ground beef enchilada filling to create a delicious tamale pie recipe. This is not a pie nor a tamal, but it is a tasty cornbread casserole bake.

INGREDIENTS
2 Tbsp oil
1 lb (454 g) lean ground beef
1 beef bouillon cube
1 1/2 to 2 Tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground cumin
2 Tbsp (20 g) all-purpose flour
salt and pepper to taste
8 fl oz (236.5 ml) water
1 1/4 cup (125 g) shredded cheddar cheese
CORNBREAD MIX
1 cup (130 g) yellow cornmeal
1/2 cup (65 g) all-purpose flour
1 Tbsp (15 g) baking powder
2 Tbsp (25 g) sugar
1/2 tsp salt
1 large egg
1 Tbsp (15 ml) cooking oil
14.75 oz (418 g) can of creamed corn
1/2 cup (118 ml) milk
1 to 2 large jalapeños diced
1/2 cup (50 g) shredded cheddar cheese
*Buttered 2.7 qt rectangular baking dish*
*Bake at 400 degrees F / 204 degrees C for 22 to 25 minutes
*Once baked, allow to set for 10 minutes, then serve

Ingredients:
1 pk of ground beef
Diced Onion
Minced Garlic
1 Canned Corn
1 Canned Beans
1 small can Diced Roasted Green Chilies
1 Canned diced tomatoes
1 small can of tomato sauce
Seasoning:
Cumin
Paprika
Chili powder
Salt
Pepper
Garlic powder
Onion powder
Whatever you like ☺
Cornbread:
1/2 cup cornmeal
2/3 cup flour
1 Tablespoon baking powder
Scant 1/4 cup sugar
Scant 1 teaspoon salt
2 Tablespoons vegetable oil
1 egg
1/3 cup milk
1 diced jalapeno (no seeds)
1/4 cup cheddar cheese
1/2 can of creamed corn
Bake at 400 for 20 mins (until cornbread is done)
