Blueberry Cornbread
1 1/2 Tbsp cornmeal, plus 1 cup
1 1/2 cups AP Flour
3/4 cup sugar
2 tsp baking powder
3/4 tsp salt
1 cup whole milk
12 Tbsp butter, melted
2 large eggs
10 ounces blueberries
Preheat oven to 375. Grease a baking dish (9x9 works best)…I like using my pampered chef bar pan. Sprinkle 1 1/2 Tbsp cornmeal in dish and set aside.
In a large bowl whisk together flour, sugar, 1 cup cornmeal baking powder and salt and set aside. Combine the milk, eggs and melted butter in a separate bowl. Add to flour moisture until just combined. Add in clean and de-stemmed blueberries and gently mix together. Place in baking dish. (Optional: sprinkle top with 1 Tbsp sugar before baking.) Bake until golden brown and center is done. About 30-40 minutes. Let cool for at least 20 minutes before cutting. Serve with honey butter.

Fortunately, blueberries freeze well, so if you don’t bake up all of your berries in a day or two, you can store them in the freezer.
