Vidalia Onion Cornbread | Cast Iron Cooking #cornbread
My brother in law gifted me a giant bag of Visalia onions and they are super sweet. This week's recipe was the perfect way to use some of them up. This cornbread is cheesy, spicy and topped with delicious caramelized onions. It went perfectly with the pot of black beans I made for dinner that night. As always I will list the ingredients below. Vidalia onion cornbread:
Ingredients-
1/2 stick butter melted
3 large Vidalia onions sliced thickly
1 1/2 cups grated cheddar cheese
2 chopped jalapenos
1 1/2 cups all purpose flour
1 cup corn meal
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1 cups milk
1/4 cup vegetable oil
1 large egg

00:11 Turn the Breville Control Freak On, bring it up to Temp, and add some cooking oil,

Ingredients:
1 pound Thinly sliced ribeye steak.
1/2 chopped Vidalia Onion.
3 tbsp Cheez Whiz Sauce (warm & melted)
12 inches of French Bread
1 tbsp Extra Virgin Olive oil
1 tbsp Brown Sugar (Onion)
2 tsp 21 Seasoning Salute from Trader Joe’s
1 tsp Smoked Paprika
1 tsp Ground Cumin
1-2 tsp garlic powder (optional, I did not use)
~ Mayo (optional, I did not use)
~ Brown Mustard (I used off-camera)
~ Bell Peppers (optional, I did not use)

CHEESY VIDALIA ONION CORNBREAD

INGREDIENTS & INFO:
1/2 stick of butter
1 Vidalia Onion, chopped
1 1/2 cups self Rising cornmeal mix or 1 box of Jiffy cornbread mix
1 egg, beaten
1/2 cup buttermilk, well shaken
1 cup sour cream
1 cup sharp Cheddar cheese, shredded
1/4 tsp dill weed
Preheat oven to 450. Spray an 8 square pan with cooking spray.
In a skillet, melt the butter and add onions. Cook just til translucent, don't brown.
Pour into a bowl and add remaining ingredients. Stir to combine.
Pour into the prepared pan and bake for 20-30 minutes, until a toothpick inserted comes out clean.
Let cool a few minutes before cutting into squares.
Serve & Enjoy!

Cheddar and Ritz Cracker Vidalia Onion Pie
Ingredients
1 cup Ritz cracker crumbs
4 tablespoons butter, melted
2 cups Vidalia onions, thinly sliced
2 tablespoons butter
2 eggs
3/4 cup milk
3/4 teaspoon salt
dash of pepper
1/3 cup shredded sharp cheddar cheese
1/4 teaspoon paprika
Mix Ritz crackers crumbs and melted butter.
Press into an 8 inch pie plate.
Saute Vidalia onions in 2 tablespoons butter until clear, but not brown.
With slotted spoon, spoon onions onto Ritz cracker crust.
Beat eggs with milk, salt, and pepper, pour over onions.
Sprinkle with cheese and paprika.
Bake at 350 for 30 minutes or until firm in the center.

Vidalia Onion Casserole
4-6 large Vidalia onions
2 T. unsalted butter
3 eggs
1 (5 oz.) can evaporated milk
1 c. crumbled Ritz crackers
1 1/2 c. shredded sharp cheddar cheese
1/2 tsp. salt
1/8 tsp. pepper
Crumb Topping:
1 c. crumbled Ritz crackers
3 T. unsalted butter, melted
Slice off root and stem end of onions; remove outer skins. Place onion halves on cutting board with cut sides down and slice onion halves into slivers about 1/4-inch to 1/2-inch thick.
Place onions in a saucepan and add water to just cover. Bring to a boil; reduce heat and simmer 8 minutes. Drain well.
Toss warm onions with the 2 tablespoons butter.
While onions cook, beat the eggs and evaporated milk together in a large bowl.
Add the warm cooked onions, cracker crumbs, shredded cheese, salt, and pepper. Stir to combine.
Place onion mixture in a 9x13-inch baking dish coated with non-stick cooking spray.
Prepare Crumb Topping:
Combine cracker crumbs and melted butter.
Sprinkle evenly over the top of the casserole.
Bake:
Bake at 375 degrees for 45 minutes, until set in the middle and golden brown.
