BROCCOLI CORNBREAD!
Broccoli cornbread! Morris asked for this cornbread when he heard we were having pot roast for dinner! We baked this in a 9x13 pan. We freshly graded cheddar cheese for this dish.
We used 2 boxes of Jiffy cornbread.
1 cup sour cream
4 large eggs
3/4 cup butter, melted
1 medium onion, finely chopped
2 (8.5-ounce) packages corn bread mix we used Jiffy
1 (12-ounce) package frozen chopped broccoli, thawed , chop finely
1 1/2 cups shredded sharp cheddar- divided
Preheat oven to 375 degrees and grease a 9X13-inch baking pan and set aside.
Whisk sour cream and eggs in a large bowl until blended well.
Whisk in butter.
Stir in onion.
Stir in cornbread mix, broccoli, and 1 cup cheddar.
Pour batter into prepared pan. Sprinkle remaining cheese on top.
Bake 35 to 40 minutes and serve warm and delicious y'all.

The recipe is below!
1 large sweet onion (such as Vidalia®), finely chopped

1 (10 ounce) package frozen chopped broccoli, thawed
•
3/4 cup cottage cheese
•
4 beaten eggs
•
1 (8.5 ounce) package corn bread mix (such as Jiffy®) OR 1-2/3 cups of cornmeal mix. I used cornmeal mix since Jiffy is sweet and I didn't want a sweet broccoli cornbread.

1 teaspoon salt
•
1/2 cup margarine, melted
1 cup of shredded cheddar cheese - not in the original recipe but it was extra good tasting.
This is so delicious. I know you'll love it. Be sure to look up my Kale and meatball soup. They go so well together for a great meal!
Directions
1.Preheat oven to 425 degrees F (220 degrees C). Grease a 9x9-inch metal baking pan.
2.In a bowl, mix together the sweet onion, broccoli, cottage cheese, eggs, corn bread mix, and margarine....(mix all ingredients together and mix well) Scoop the mixture into the prepared baking pan.
3.Bake in the preheated oven until the top is browned and the casserole has risen, about 45 minutes.

1 16 oz pkt frozen chopped broccoli thawed

Hey family! In today's video the rain has returned...???? Ok, I'm kinda happy about it a little bit because it washed away some of the pollen! ????????I bring y'all along for all the meals of the day and we make a delicious cheesy broccoli bread! The cottage cheese added in made it so moist!
Cheesy Broccoli Bread Recipe
Ingredients:
1 cup cornmeal
1/3 cup all-purpose flour
1-1/2 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon baking soda
5 large eggs, room temperature, beaten
1 package (16 ounces) frozen chopped broccoli, thawed and drained or fresh broccoli, steamed
1-1/2 cups shredded cheddar cheese
1-1/2 cups cottage cheese
1 medium onion, chopped
3/4 cup butter, melted
Directions
In a bowl, combine cornmeal, flour, baking powder, salt and baking soda. In another bowl, combine the eggs, broccoli, cheeses, onion and butter. Add to cornmeal mixture; mix just until moistened.
Grease a13x9-in. baking pan. Pour batter into pan. Bake at 350° for 30-40 minutes or until a toothpick inserted in the center comes out clean. Serve warm.
