Perfect Chicken Tortilla Soup Traditional Vs. Fancy

-1.5 quarts (1420ml) veggie oil
-Corn Tortillas
-Salt to Taste
Traditional:
- 4oz (113g) bacon
- 1 lb (16oz) chicken thighs, boneless & skinless
- 1 medium onion
- 5 cloves of garlic, finely chopped
- 2 Serrano chilies
- 2 teaspoons (2g) ground cumin
- 1 teaspoons (1g) ground coriander
- 1 teaspoons (1g) smoked paprika
- 1/2 teaspoons (1g) cinnamon
- 2 dried guajillo chilies, de-seeded
- 1 dried ancho chili, de-seeded
- 4 cups (960ml) chicken stock
- 2 ears of corn
-1/2 28 oz can crushed tomatoes
- salt to taste
- cilantro for garnish
- 2 avocados, diced
- 3 limes
- 1 piece Oaxaca cheese
-1 cup shredded cheddar
Fancy:
- 3-4 fried corn tortillas
- 3-4 Chicken skins
- 100ml cream
- 150ml soup
- 35g tomato paste
- salt to taste

• 1 lb ground beef
• 1 medium white or yellow onion, chopped (about 1 cup chopped onion)
• 3 cloves garlic, minced
• 2 cups chicken broth
• 2 cups beef broth
• 30 oz diced tomatoes, undrained
• 1 (15 ounce) can black beans, drained and rinsed
• 1 (15 ounce can) pinto beans, drained and rinsed
• 1 cup frozen corn
• 7 ounces diced green chilis
TACO SEASONING:
• 1 tablespoon chili powder
• 2 teaspoons paprika
• 1 teaspoon ground cumin
• 1 teaspoon onion powder
• 1 teaspoon garlic powder
• 1 teaspoon salt
• ¼ teaspoon cayenne pepper
SUGGESTED TOPPINGS FOR SERVING:
• Sour Cream
• Chips
• Shredded Cheese
• Sliced Jalepenos
• Cilantro

1️⃣ 00:00:25 - Heat a large pot over medium high heat.
2️⃣ 00:00:29 - Add in ground beef and onion. Cook until beef is browned and onion is softened. Drain off any excess grease.
3️⃣ 00:00:55 - Add in garlic and cook 60 seconds. Add in taco seasonings (chili powder, paprika, cumin, onion powder, garlic powder, salt, and cayenne pepper). Stir and let the seasoning toast for about 30 seconds.
4️⃣ 00:01:27 - Pour in chicken and beef broth, diced tomatoes, black beans, pinto beans, corn, and green chilis.
5️⃣ 00:02:05 - Bring to a boil and then reduce heat to simmer. Simmer for 15 to 25 minutes.

7 Can Taco Soup | Best Taco Soup Recipe With Ranch Dressing | Cooking Up Love
7 Can Taco Soup recipe is such an easy dinner, it’s full of flavor and a favorite for Taco Tuesdays at our house! Make this taco soup with panty ingredients, and then cook on the stove for 45 minutes, or just brown the ground beef and then simmer in the slow cooker for 4 - 8 hours.
I’m going to show you how we make this 7 can taco soup with ranch dressing mix, and what I love about this recipe that you can personalize with your choice of beans or tomatoes. It's a great recipe to make with leftover ground beef or taco meat. With just a pound of ground beef, taco seasoning, a packet of Ranch seasoning mix and 7 or 8 cans, you’re on your way to this tasty best taco soup recipe!
7 Can Taco Soup Ingredients
1 lb ground beef
1 medium onion, diced
2 garlic cloves, minced
3 tablespoons homemade taco seasoning (your favorite or see below for my recipe) or 1 packet Hidden Valley Ranch Dressing and Dip Seasoning
1 can beef broth
1 can diced fire-roasted tomatoes
1 can diced tomatoes and chipotles (you could also use Rotel tomatoes and chilies here)
1 can black beans, rinsed and drained
1 can white beans, rinsed and drained
1 can pinto beans, rinsed and drained
1 can corn, drained (or 2 cups fresh or frozen)
Optional for serving: grated cheese, cilantro, jalapeños, corn chips, sour cream
7 Can Taco Soup Directions
Dice one medium onion. Brown 1 pound of ground beef in a large skillet or if you’ll be cooking this on the stove top, use a large heavy bottomed pot, like a dutch oven. When the ground beef is almost completely cooked, add the diced onion, and cook for about 2 minutes to soften. Then add 2 cloves of minced garlic and stir.
Add 3 tablespoons of homemade taco seasoning, use your favorite recipe or see my recipe below. You could also use a package of taco seasoning. Stir it in. Then add one packet of Hidden Valley Ranch Dressing seasoning. If you’re making this in a slow cooker, transfer the beef and onion mixture to the insert now.
How To Make Taco Soup - Stove
Next, begin adding the 7 cans of ingredients. Add 1 can of beef broth, one can of fire roasted diced tomatoes, one can of diced tomatoes in chipotle - you could also use a can of Rotel tomatoes with green chilies. Add three cans of beans that have been drained and rinsed, I’m using black beans, white beans and pinto beans. Add one can of corn, you could also use fresh or frozen corn. Mix this all together, and bring to a boil and simmer on the stove top for about 30 - 40 minutes, until it is heated through.
How To Make 7 Can Taco Soup - Slow Cooker
If you’re making this in the slow cooker, add the seasoned ground beef and onion mixture and cook it on low heat for 2 - 3 hours. It will hold for 8 hours if you’re going to be making this while at work.
Our easy taco soup recipe is hearty, with lots of protein from the beans and beef. Add your favorite taco soup toppings and you’ve got a complete meal the whole family will love!
Homemade Taco Seasoning Recipe
2 tablespoons chili powder
3 teaspoons cumin
2 teaspoons salt
2 teaspoons ground pepper
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
How To Make 8 Can Taco Soup
This easy taco soup recipe is super flexible based on your favorite ingredients. For spicier soup, add a can of jalapeno peppers, green chilis, or even enchilada sauce. If you only like one type of beans, like black beans, double up on them instead of white or pinto beans. For a thicker soup, try adding a can of refried beans.

Taco Soup

Ingredients
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
2 pounds ground beef
Kosher salt and freshly ground black pepper
2 heaping tablespoons tomato paste
1 heaping tablespoon taco seasoning
One 15-ounce can black beans, undrained
One 15-ounce can fire-roasted corn, undrained
One 15-ounce can tomatoes with green chiles
2 cups vegetable stock
Hot sauce, to taste
Garnish:
1 cup shredded Cheddar
1 cup sour cream
1/4 cup fresh cilantro leaves
Yellow corn chips
Directions
Heat the olive oil in a large Dutch oven over medium heat. When the oil is hot, add the onion and garlic and cook until they have started to soften, about 1 minute. Add the beef and sprinkle with a pinch of salt and pepper. Cook the beef, breaking it up with a spatula, until it is cooked through and browned, about 8 minutes. Add the tomato paste and taco seasoning, then stir to combine.
Stir in the black beans, corn, tomatoes with green chiles and vegetable stock. Add a few dashes of hot sauce, then stir well and bring to a simmer. Simmer to allow the flavors to come together and the liquid to slightly thicken, 10 to 15 minutes. Taste and adjust the seasoning as needed.
Serve in bowls, garnished with the Cheddar, sour cream, cilantro and more hot sauce to taste. Crumble over the corn chips.
