Add shrimp green onion, and garlic. Stir fry till shrimp are pink. Add sherry, soy sauce, sugar, and salt. Stir well and blend in catsup, chilli sauce, and red pepper flakes. How to make a great Szechuan Shrimp Stir Fry. Ingredients: 1 pound shrimp (470 grams) 1 red bell pepper 1 yellow bell pepper 1 carrot 9 green onions (scallions) 1 Tablespoon ginger 1 Tablespoon garlic 1 teaspoon chili flakes 1 Tablespoon szechwan pepper corns 1 teaspoon sugar 1/4 cup water 1/4 cup soy sauce 2 teaspoons sesame oil 1 Tablespoon cornstarch (cornflour)

Step 1 : Marinate shrimp Shrimp 1/2 kilo (cleaned/deveined) 1 tbsp cooking wine 1/2 tsp salt 1/2 tsp ground pepper 1 egg (Set aside marinate for 10 to 30 mins)
Step 2: Prepare other ingredients 1 tbsp szechuan peppercorn 1 red bell pepper (med diced) Spring onion - cut abt 1/2 an inch Dried red chillies about 10g - cut 5 cloves of garlic sliced 1/2 nuts (walnut or peanut) frying optional
Step 4: Prepare shrimp for frying 1 cup cornstarch or potato starch 1 tsp salt Coat the shrimps with the mixture Not too much, remove excess
Step 5: Fry shrimp Cooking oil In high heat, fry the shrimps for only 1 minute (don’t overcook) Double fry again for 30 seconds (Don’t crowd the pan so that the temperature will be maintained) Remove excess oil
Step 6: Stir fry
1 tbsp oil Add szechuan peppercorn Then add dried red chillies Add garlic Add bellpepper and spring onion Then add the prepared sauce Add shrimp and nuts
