How To make Sweet Red Pepper Sauce For Pasta
2 lg Very Red Sweet Red Peppers
2 tb Water to saute
2 c Coarsely chopped onions
2 ts Minced garlic
1/2 ts Hot red pepper flakes (opt)
1 c Vegtable stock
Salt & Pepper to taste 1/4 c Chopped Basil
1 lb Cooked pasta
1. Cut peppers lengthwise in half. Scrape away and discard the stems,
veins and seeds. Chop the peppers coarsely. There should be about two cups 2. Heat the water in a large saucepan and add the peppers. Cook, stirring,
about 5 minutes (add more water if required). Add the onions, garlic and red pepper flakes and cook, stirring, 2 minutes longer. Add the stock, salt and pepper. Cover and cook 15 minutes. 3. Ladle the sauce into a blender and blend thoroughly. Return the mixture
to the pan and bring to a boil. Cook about 2 minutes and stir in the basil. Serve with the cooked pasta. Roasted red pepper sauce is quick to prepare and can be used to jazz up any number of meals like sandwiches, wraps, eggs, meat, and pasta. This is a fantastic meal prep recipe!
Ingredients:
3 large roasted red peppers
1/2-1 cup freshly grated Parmesan
1 cup fresh basil leaves
2 cloves garlic
sea salt
1/2 cup olive oil

1-2 large bell peppers (roast in airfryer at 180°C for 20 minutes, flip halfway)
1 medium white onion
5 cloves garlic
2-3 tbsp nutritional yeast (add more if needed)
1 1/2 tbsp cornstarch
1 1/2 cup nut milk
3 tbsp olive oil
salt and pepper to taste
200g cooked pasta

Elicoidali is a variety of Italian pasta that’s quite similar to the rigatoni. It’s larger in size and the ridges help retain the sauce for a better eating experience. This recipe has a tomato and bell pepper sauce with Pecorino cheese for an amazing flavour. The sauce also stays inside the pasta making each morsel a tasty delight. It’s made with zucchini and eggplant that’s fried in olive oil. A delicious vegetarian recipe.
