This spaghetti with spinach sauce recipe is a super simple pasta sauce that’s quick, healthy, and really flavorful. If you are after some hearty comfort food which gets ready within minutes then this vegetarian pasta is just what you need!!
It’s also a super versatile dish.. Don’t be afraid to tickle the recipe according to your liking!! You can use mushrooms, meat, shrimp, salmon.. just to name a few!!

Ingredients:
▪ Spinach 250 gm
▪ Spaghetti 250 gm
▪ Garlic 3 - 4 big cloves sliced
▪ Olive oil 2 - 3 tbsp
▪ salt
▪ pepper
▪ grated cheese 1/2 cup ( Fresh Parmesan is the best option )
Procedure:
▪ Bring a large pot water to boiling and seasoned generously with salt.
▪ Cook the Pasta according to package instruction.
▪ Reserve a cup of pasta water before draining. Drain and keep it aside.
▪ Heat Olive oil in a large pan on medium-high heat.
▪ Add sliced Garlic and give a quick stir. Do not brown it.
▪ Add the spinach and sauté with Garlic until wilted.
▪ Season with salt and pepper. Remove from heat and set aside.
▪ Once it cools down add the spinach garlic mixture to a blender. Add cheese and half of the reserved pasta water. Puree it until it forms a sauce.
▪ Heat 1 tsp of olive oil in the pan and add the sauce back into the pan.
▪ Cook for a minute and then add the precooked spaghetti.
▪ Stir to combine properly adding more pasta water if needed.
▪ Seasoned with more salt and pepper if required. Combine well to heat through.
▪ Once cooked remove from the heat and save hot with some extra grated cheese.

High Protein Spinach Pasta #shorts | SO VEGAN
This is one of the dishes I turn to when I’m at home looking after both girls. The tofu adds lots of protein and the hemp seeds add both omega-3 and omega-6 essential fatty acids. And it only takes 15 minutes!

Serves 4
???? 320g (11.3oz) pasta
???? salt + pepper
???? 250g (8.8oz) baby spinach
???? 350g (12.3oz) silken tofu
???? 4 tbsp nutritional yeast
???? 40g (1.4oz) cashews
???? 60g (2.1oz) hemp seeds, shelled or milled
???? 2 garlic cloves, peeled
???? olive oil
???? vegan parmesan, to serve (optional)
Cook the pasta in a pot of salted boiling water as per the packet instructions. Once the pasta is ready, drain it and reserve about half a cup of the pasta water for later.
Meanwhile, add the spinach to a pan on a medium heat and cook for 2-3 minutes or until wilted. Add a tablespoon of pasta water to the spinach if it’s sticking to the pan.
Next, transfer the spinach to a high speed blender along with the silken tofu, nutritional yeast, cashews, hemp seeds, garlic, 2 tablespoons of olive oil and generous pinches of salt and pepper. Blend until the sauce is smooth, adding a tablespoon or so of the reserved pasta water to the sauce, if needed, to loosen it up.
Pour the spinach sauce into the pan you used earlier and heat it on a low temperature until warm. Tip the pasta into the sauce and stir to combine.
Serve the pasta with a drizzle of olive oil, an extra pinch of pepper and some grated vegan parmesan, if you like.

Lemon Cream pasta with arugula and cherry tomatoes:
1 tbsp butter
2 cloves garlic, minced
Zest from a small lemon,
Juice from a small lemon
1 cup cream
½ cup parmesan cheese
10 oz spaghetti pasta
Handful arugula
1 cup cherry tomatoes, cut in hlaf
In a large pot, boil some water and add 1 tbsp salt. When hot, cook spaghetti until just al dente (the lowest time on the package). Drain and reserve ½ cup pasta water.
In a large pan on medium high heat, melt some butter and cook the garlic. Add the lemon zest and stir fry for another 30 seconds until fragrant. Then add the cream, lemon juice, and parmesan cheese. Add the hot cooked spaghetti and stir until it’s mixed. Add pasta water as needed to keep it loose.
Take off heat and stir in fresh arugula and cherry tomatoes. Garnish with black pepper, parmesan cheese, and any extra lemon zest. Enjoy!
Roasted Red Bell Pepper Pasta Recipe:
2 red bell peppers, cut into chunks
½ an onion, cut into chunks
2 garlic cloves
1 cup marinara sauce
½ cup broth, veggie or chicken
Red pepper flakes
10 oz rigatoni pasta
2 tbsp cream cheese
Basil and parmesan
In a large bowl, add the bell peppers, onions, and garlic and drizzle with some olive oil, salt, and pepper. Toss to mix.
On a large pan, heat on high and add the veggies. Cook it on each side until it’s lightly charred, about 5 minutes, undisturbed. Flip it over and continue cooking for another few minutes until the veggies start to soften. Let it cook slightly.
Add everything to a blender, along with 1 cup marinara sauce, ½ cup of your preferred broth, and a dash of red pepper flakes. Blend until smooth.
In the meantime, cook the rigatoni in boiling water with salt until al dente. Drain and reserve the pasta water.
To cook and mix everything together, add the sauce to a pan and let it warm through. Add cream cheese (optional) and let it melt. Next, add the hot pasta and mix until all the pasta is coated. Serve with basil and parmesan cheese. Enjoy!
Veggie Pesto Pasta Recipe:
1 cup kale
2 cups packed basil
½ cup paremsan cheese
2 cloves garlic, ¼ cup walnuts,
½ teaspoon salt
Zest and juice of lemon
½ cup olive oil
In a blender, combine kale, basil, walnuts, garlic, lemon juice, lemon zest, parmesan cheese, salt, and olive oil. Mix until smooth but slightly grainy. Set aside. This will last up to 1 week in the fridge.
To cook, add to a pan and if you’d like it creamy, add ½ cup cream sauce and let it mix. Toss in cooked pasta and pasta water if needed. Enjoy hot!

GARLIC SPINACH SPAGHETTI | Richard in the kitchen
In this video I show y'all how to make garlic spinach spaghetti. This hearty and healthy pasta dish is so easy to make is just about 20 minutes. Garlic, butter and oil sautéed baby spinach spiced with just a little heat and paired with thick cut spaghetti for a quick and easy any-time meal.
Shopping List:
1 lb. thick spaghetti
1/4-1/3 cup course kosher salt for the boiling pasta water
About 3 cups fresh baby spinach
Finely grated parmesan cheese
1/2 cup cooked pasta water
2 tbsp. butter
1 tbsp. extra virgin olive oil
1 tbsp. minced garlic
1 tsp. red pepper flakes
Zest of 1 lemon
Juice of 1 large lemon
Pepper to taste
Directions:
Cook the pasta in heavily salted boiling water according to package instructions. Remove about 1 cup of the water before draining the pasta and set aside.
In a deep skillet over medium heat, melt the butter with oil. Add the red pepper flakes and garlic and stir about 2 minutes.
Add about 1/4 of the pasta, spinach, parmesan cheese, lemon zest and lemon juice, adding the pasta water as needed to keep from drying out.. Stir constantly until the spinach has wilted. Continue adding the ingredients in fourths until all have been added to the pan.
Top with more parmesan cheese and toss, taste and season as needed.
Serve and enjoy!

Full written recipe for Vegetables in Paprika Sauce with Spinach Rice
For spinach rice
Ingredients:
● For blanching Spinach:
1. Spinach 1 big bunch
2. A pinch of salt
● Fresh mint leaves 1 tbsp
● Fresh coriander 1 tbsp
● Green chillies 2 nos.
● Ice cubes 1-2 nos.
● Butter 1 tbsp & oil 1 tsp
● Garlic 1 tbsp
● Red chilli flakes 1 tsp
● Cooked basmati rice (5 cups)
● Salt to taste
● Black pepper powder a pinch
● Lemon juice 1 tsp
Methods:
● Set water for boiling, add the cleaned and washed spinach leaves and blanch for few seconds, remove and immediately transfer to ice cold water. This process helps in retaining the bright green colour of spinach.
● Now, transfer the spinach in grinding jar, along with fresh mint leaves, coriander leaves, green chillies and few ice cubes, grind to a fine puree and keep aside.
● Set a wok on medium heat, add butter & oil, garlic and red chilli flakes, cook for 1-2 minutes on medium flame, now add the spinach puree and cook for 4-5 minutes.
● Now add the cooked rice, salt to taste, black pepper powder a pinch and lemon juice, stir and cook for 2-3 minutes, stir gently without breaking the rice grains. Spinach rice is ready, serve hot with hot paprika sauce.
For paprika sauce:
Ingredients:
● For sautéed veggies:
1. Oil 1 tsp
2. Garlic 1 tbsp (chopped)
3. Red chilli flakes 1 tsp
4. Baby corn 1/3rd cup
5. Carrot 1/3rd cup
6. Zucchini 1/3rd cup
7. Mushroom 1/3rd cup
8. Mixed bell peppers 1/3rd cup
9. Broccoli 1/3rd cup
10. Salt & pepper to taste
● For paprika sauce:
1. 2 tbsp butter
2. Refined flour (maida) 2 tbsp
3. Milk 600 ml
4. Paprika powder 1 tbsp (red chilli powder)
5. Salt to taste
6. Black pepper a pinch
7. Nutmeg powder a pinch
● paneer 150 gm (cubes)
Methods:
● For sautéed veggies, set a wok on medium heat, add oil, garlic and red chilli flakes, cook for 2-3 minutes.
● Now, add baby corn & carrot and cook for 2-3 minutes on high flame, further add the remaining veggies, salt & pepper to taste, stir and cook for 2-3 minutes, sautéed veggies are ready, keep aside to be added later in the paprika sauce.
● For paprika sauce, set a sauce pan or wok on low heat, add butter and flour, mix and cook for 3-4 minutes, now add milk in 3-4 batches, make sure to whisk well while adding milk to avoid lump formation. Cook the sauce until its thick and creamy.
● Now add paprika powder, salt to taste, black pepper powder a pinch and nutmeg powder, mix well and cook for 1-2 minutes, further add the sautéed veggies and cook for 1-2 minutes, now add the paneer and mix gently.
● Paprika sauce with sautéed veggies and paneer is ready, serve hot with hot spinach rice.
