- 3 Poblanos
- 1 Giant Marconi
- 3 Shishitos
- 1/2 Onion

- 13 Jalapeños
- 4 Coolapeños
- 1 Orange Bell
- 2 Shishitos

Spinach and Ricotta Cannelloni with Tomato and Red Pepper Sauce
Easy & fun recipe to make whilst also being something quite special. Perfect when you have a dinner party as you can prepare it ahead and just finish cooking while your guests arrive. Cannelloni is essentially a type of pasta in the shape of a large tube. You can stuff the cannelloni with different fillings (meat or vegetarian), cover with a sauce (tomato or white sauce) and then just bake in the oven. Get the children to give you a hand filling the cannelloni pasta tubes, their little fingers will come in quite handy! This cannelloni dish would be lovely served with a side salad & some garlic bread too if you are feeling extra indulgent.
INGREDIENTS:
Cannelloni
12 cannelloni tubes
300g spinach, washed & drained
250g ricotta
Tomato sauce
2tbsp vegetable oil
2 tomatoes, finely chopped
1 red pepper, finely chopped
1 red onion, finely chopped
2 cloves of garlic, crushed
800g chopped tomatoes
250ml water
Salt & pepper to taste
METHOD:
1. Pre heat the oven to 160c
2. Cook the spinach: Put a saucepan onto the stove at a medium heat, allow to heat for 2-3 minutes. Add the spinach and cover with a lid. Cook for 1 minute until the spinach is wilted. This may be done in stages depending on the size of your saucepan. Once all is cooked, put in a bowl and keep aside to cool down.
3. Make the tomato sauce: Using the same saucepan, on a medium heat add 2 tablespoons of oil. Fry the diced onion & red pepper for 8-10 minutes, then add the crushed garlic and chopped fresh tomatoes. Cook for a further 2 minutes.
4. Add the tinned chopped tomatoes and water, reduce to a low heat and cook for 15 – 20 minutes. Switch off the heat at this point! The tomato sauce should still be relatively runny.
5. Make the cannelloni filling: using your hands gently squeeze any excess water from the cooked spinach and dispose of the liquid. Finely chop the spinach and place into a mixing bowl. Add the ricotta cheese, salt & pepper & mix well until all is combined.
6. To fill the cannelloni, slowly spoon the mixture into the tubes with a teaspoon. This can be achieved by using the handle end of the teaspoon to push the ricotta mixture inside. Each cannelloni tube will take 2-3 teaspoons of mix to fill.
7. Place each cannelloni once filled into a greased deep oven dish.
8. Carefully pour the tomato sauce over the cannelloni and bake in the oven for 20 – 25 minutes or until the pasta is tender.

2 tbsp Chilli Sauce
1 tsp Oregano
1 tbsp Chilli Flakes
3 Cheese Cubes
How to Cook Spaghetti in the Paprika Sauce
1 tbsp Olive Oil
1 cup Broccoli Florets
10 - 12 Spinach Leaves
1/2 cup Water
Salt (as required)
Basil Leaves

About Paprika
Paprika is a spice made from dried and ground red peppers. It is traditionally made from Capsicum annuum varietals in the Longum group, which also includes chili peppers. About Pasta

1 tablespoonful of Coconut oil
2 large sliced Onions
80g of chopped French Beans
40g of sliced Mushrooms
100g diced Prawns or Shrimps
25g of Cashew Nuts or Peanuts
1 tablespoonful of Buy Ndudu’s Bolu Seasoning (Smoked Shrimp blend)
Half a teaspoon of Chilli Flakes or a pinch of Buy Ndudu’s Scotch Bonnet powder
1 tablespoonful of Roast Pepper & Koobi sauce
20g of chopped Parsley
1 teaspoonful of Corn Starch
80ml of Water

Ingredients:
- 1 cup chopped pineapple
- 3 cloves of garlic
- 5 small chilis
- 1.5 tablespoons of apple cider vinegar
- 1.5 cups sugar
- 3/4 cup water
- salt to taste
- 1.5 tablespoons of corn flour
- 2 tablespoons of water
Instructions
- chop pineapple and chilis and add to a blender with crushed garlic and water, blend for 10 - 15 seconds
- add the mixture to a saucepan, adding the apple cider, salt and sugar
on a medium high heat for 3 - 5 minutes, stirring occasionally
- in a separate bowl mix the water and corn flour, mix together and add to the pan and stir thoroughly
- after 1 minute (or when the sauce has thickened) remove from the pan and leave to cool
- once cooled add to jar/ container
