How To make Sweet Potato Surprise Cake
CAKE:
1 1/2 c Cooking oil
4 ea Eggs, separated
3 ts Baking powder
1 t Cinnamon
1 1/2 c Raw sweet potatoes, grated
2 c Sugar
2 1/2 c Sifted cake flour
1/4 ts Salt
1 t Nutmeg
1 c Chopped nuts/walnuts/pecans
1 t Vanilla extract or flavor
FROSTING:
1 lg Can evaporated milk
3 ea Egg yolks
1 1/3 c Flaked coconut
1 c Sugar
1 Stick oleo
1 t Vanilla
Combine cooking oil and sugar. Beat until smooth. Add egg yolks and beat well. Add dry ingredients which have been sifted together. Stir in potatoes, nuts and vanilla, beat well. Beat egg whites until stiff. Fold into mixture. Bake in 3 greased and floured 8-inch layer pans at 350 F. for 25-30 min. Cool and frost. FROSTING: Combine milk, sugar, oleo, egg yolks and vanilla in sauce pan. Heat until boiling. Add coconut and continue to cook 3 to 5 min. or until mixture thickens. Remove from fire, and place saucepan in container of ice and beat with wooden spoon until spreading consistency.

1 box vanilla cake mix
2 small sweet potatoes/yams
Actually 3/4 cup of sugar
1/2 cup brown butter
4 eggs
1/2 cup brown butter
1 & 1/2 cup of heavy whipping cream
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon of lemon extract
2 teaspoons Vanilla extract
Bake on 325
70 min or until done (when fork or knife inserted in middle comes out clean)
Frosting:
1 & 1/2 cup conf sugar
4-6 tbs milk
2 tsp vanilla extract
1 tsp cinnamon
1 tbs brown butter (optional)

Steamed Purple Sweet Potato Soy Layered Cake - 紫番薯豆浆九层糕

Commonly known as 九层糕 or steamed kueh lapis, this dish is bound to be familiar to most of us who have eaten it growing up. It has a nice smooth texture and is a sure hit for many.
Today’s recipe will be an interesting twist! We are using the limited edition Nutrisoy Purple Sweet Potato Soya Milk (made with real purple sweet potato!) to alternate with regular soya milk to create a purple and white soy kueh lapis. The steps are so so easy, and just require soya milk, a bit of sugar, tapioca starch and rice flour.
Alternate the layers every 4 minutes, and it won’t be long before you have this kueh recreated at the comfort of home, with that purple sweet potato soya taste - A nostalgic yet fun treat for the young at heart!

The holidays are the perfect time to show love and spread cheer. Few things compare with holiday meals and desserts. If you have guests coming over and need to prepare the perfect dessert for Thanksgiving, Christmas, Hanukkah, Kwanzaa, or the New Year; you will love this recipe.
SWEET POTATO CAKE RECIPE
1 box Spice Cake Mix
1 box French Vanilla Instant Pudding
1 cup Bisquick
1 & 1/3 cup White Granulated Sugar
1 cup Buttermilk
4 large eggs
2 teaspoons Vanilla Extract
1 ½ cups Sweet Potatoes (cooked and mashed)
Glaze
2 tablespoons Melted butter
2 cups Confectioners Sugar
2 tablespoons Rum (may be substituted with water or milk)
*Make sure you preheat oven to 350 degrees.*
Generously oil and flour your cake pan.
Bake 40-45 minutes.
Let cake cool before removing it from pan.
Drizzle the glaze and spread the love.
