How To make Surprise Devil's Food Cake
1 3/4 c All-purpose flour
1 1/2 c Granulated sugar
3/4 c Unsweetened cocoa powder
2 ts Baking powder
1/2 ts Baking soda
1 1/3 c Buttermilk
1/2 c Butter or margarine; melted
lg Eggs 2 ts Vanilla extract
2 md Size fresh beets (8 oz)
Peeled & finely Shredded or grated Heat oven to 350 F. Grease a 13x9x2-inch baking dish. In a large bowl, mix flour, sugar, cocoa powder, baking powder and baking soda. Whisk in buttermilk, butter, eggs and vanilla. Stir in beets. Pour into prepared dish. Bake 45 minutes, or until a pick inserted in center comes out
clean. Cool in pan on wire rack. Cut in pan. * Serves 12. Per serving: 282 cal, 6 g pro, 45 g car, 10 g fat, 75 mg chol with butter, 54 mg chol with margarine, 267 mg sod. Exchanges: 2 starch/bread, 1 fruit, 2 fat The surprise in this luscious cocoa cake is shredded beets. They enhance the deep reddish-brown color and add moisture. Recipe Tips:
* If using a darker pan, reduce temperature 25F (4C) and bake an additional 5 - 10 minutes to prevent over browning.
* Bake 30 – 40 minutes or until toothpick inserted in center comes out clean. Center should read between 190F (88C) and 210F (99C.)
* Over baking chocolate will result in a dry cake. The toothpick method only tells you a cake is done, but it doesn’t tell you it’s overly done. Thermometers are the way to go with chocolate desserts.

1 Box Duncan Hines Devil's Food Cake Mix

1 Small Box Chocolate Fudge Jell-O Pudding
1 C Sugar
1/2 C Melted Butter
1/4 C Oil
1 1/2 C Coffee of your choice (Room temperature)
3/4 C Sour Cream (Room Temperature)
3 Lg Eggs (Room Temperature)
1/2 Tsp Salt
1 Tblsp Vanilla Extract

Recipe
50 grams (½ cup) cocoa powder (sifted)
100 grams (½ cup) dark brown muscovado sugar (can be replaced with Dark Sugar)
250 ml (1 cup) boiling water
100 grams Dark Chocolate
125 grams (9 tbsp) unsalted butter (soft)
150 grams (¾ cup) caster sugar
225 grams (1 ½ cups) plain flour
½ teaspoon baking powder
½ teaspoon bicarbonate of soda
A Splash of vanilla extract
2 large eggs
Method
Preheat the oven to 180°C/ Gas mark 4 /350°F. (Slightly less for fan forced - usually around 10°C less)
Line your cake pans with baking (Parchment) paper.
Put the cocoa and muscovado sugar into a bowl with the boiling water, give it a whisk then set aside.
Cream the butter and caster sugar together, beating well fluffy.
Into a separate bowl, sift the flour, baking powder and bicarb together and set aside for a moment.
Dribble the vanilla extract over the creamed butter and sugar mixing all the while, then drop in 1 egg, quickly followed by a scoopful of flour mixture, then the second egg.
Keep mixing and incorporate the rest of the dried ingredients for the cake, then finally mix and in the cocoa mixture.
Now that it looks like cake batter, add in the 100 grams of melted Chocolate then stir until mixed through.
Halve the batter between the 2 prepared tins and put in the oven for about 25 - 30 minutes, or until a cake tester comes out clean.
Take the tins out and leave them on a wire rack for 5–10 minutes, before turning the cakes out to cool.
