How To make Chocolate Cake with Surprise Filling
2 c Sugar
1 Stick margarine [see PS at
-end] 6 tb Cocoa
3 Eggs, separated
1 c Buttermilk*
2 1/2 c Flour
1 1/2 ts Vanilla
1/2 c Hot water
1 1/2 ts Baking soda
* (1 cup milk+1 tsp vinegar mixed together may be substituted here) 1- Blend sugar and margarine; add cocoa and egg yolks. 2- Alternately add
buttermilk and flour. 3- Beat egg whites, add vanilla and blend into mixture. 4 a Pour into a greased and floured 13x9-inch baking pan -OR- 4 b Pour into two 8" or 9" diamter cake pans lined with wax paper. SURPRISE FILLING 8 oz (1 pckg) cream cheese, softened 0.5 c sugar 1 egg 1 dash salt 0.5 c semi-sweet chocolate chips 1- Blend cream cheese, sugar, egg and salt. 2- Stir in chocolate chips. 3-
Drop by teaspoonfuls over cake batter in pan. 4- Bake at 350 F for 30-40 minutes. Cake is done when it leaves side of the pan. To make cupcakes, fill paper baking cups 2/3 full with batter, then drop 1 teaspoon Surprise Filling on top of each. Bake at 350 F for 25-30 minutes. Makes 30-32 cupcakes.

Amazing Chocolate Cake
My Chocolate Cake is beyond moist, you could LITERALLY leave it out on the counter for several days and it would still be luscious. This is the BEST chocolate cake recipe and garanteed the please all the chocolate cake lovers out there!
The surprise favorite for me on this cake was the cacao nibs. For those of you who have not been exposed to these little delights, they're pure, unprocessed chocolate aka they're very crunchy and chocolatey (not sweet at all). They contrast with the buttercream nicely and prevent the cake from being cloying.

I've made this cake many times and filmed on two separate occasions. So you might notice that I bake a 6 inch cake but decorate an eight inch one. I often love to make a smaller cake make a batch of cupcakes with the extra batter. Just to be clear though the recipe makes 3 nice eight inch cake layers!

For the vanilla rainbow cake:
(this is a SINGLE batch of my vanilla cake and you need two of them)
Cook Time - 15-20 minutes @175c / 350f
260g / 9oz Plain flour, sifted
225g / 8oz Caster sugar (USA - granulated)
250g / 8.8oz Butter, softened
110g / 3.8oz Whole milk
3 x 65g/2.2oz Eggs, room temperature (ex-large)
40g / 1.4oz Vegetable oil
3 tsp Baking powder
1 tsp vanilla extract (or essence)
For the Chocolate Bundt Cake:
Oven Temp: 175c / 350f
4oz Nestle Toll House Semi-Sweet Chocolate Morsels
100ml whipping cream
340g / 12oz Plain flour, sifted
315g / 11oz Caster sugar (USA - granulated)
225g / 8oz Butter, softened (eqv. 2 sticks)
225g / 8oz Water, room temperature
55g / 2oz Nestle Toll House Cocoa Powder
3 x 65g/2.2oz Eggs, room temperature (ex-large)
40g / 1.4oz Vegetable oil
4 tsp Baking powder
2tsp Vanilla
For the Chocolate Ganache frosting
8oz Nestle Toll House Semi Sweet Chocolate Morsels

Ingredients
[For the cake]
*Divide the batter into three parts and make three cake sheets.
200 g (1 cup+1 Tbsp) brown sugar( You can replace it with Granulated Sugar. )
200 g (¾ cup + 2 tbsp) unsalted butter, softened plus extra for the tins
4 large eggs
200 g (1 1/2 cup + 2 Tbsp) all purpose flour
8 Tbsp cocoa powder(56 g)
1 Tbsp baking powder
1/4 tsp salt
½ tsp vanilla extract
4 Tbsp milk
[For chocolate buttercream]
300 g(1 1/3 cups ) unsalted butter(softened)
480 g(about 4 cups) icing sugar(shifted)
* If you don't like sweets, reduce it to 3 cups.
*It can be adjusted between 3 cups and 5 cups to suit your taste.
6 Tbsp cocoa powder(shifted)
5~6 Tbsp milk
1 tsp vanilla extract
[For chocolate ganache]
* Ratio 1 : 1
100 g dark chocolate
100 g hot fresh cream (*Whipping cream or heavy cream can be substituted by the same amount.)
